WIAW: Austin Edition

Hey friends!  Our internet has been down since we’ve been back from our trip so I haven’t been able to post this until today, so I thought I’d incorporate it into my WIAW post!

Not only has the internet been down (and just got repaired about an hour ago), but my car died and has been in the shop!  The power steering pump went out and it’s costing some mega bucks to get it fixed!  I have all the luck, huh?!  Sigh.

Our last day in Austin was filled with amazing food!

Starting with some Biscuits and Groovy for breakfast!  These biscuits were indeed groovy!

Biscuits + veggie sausage + french press coffee = one happy girl!

Lunch was at the MOTHER of all whole foods!  Seriously I don’t think I can go back to my normal whole foods after going to that one!  It was ginormous!!

Salad with a little of this and a little of that and with tahini dressing!

Dinner was pizza at Conan’s! (thanks to my friend Schuyler for the suggestion!)  Whole wheat deep dish pizza with veggies and dairy free (Daiya) cheese!  The crust was seriously phenomenal!

Dessert!!!  Another shake from the ice cream shop in Toy Joy!  This time I went for the chocolate mint- oh em gee!!!!

Shopping trip to SoCo (South Congress)!  Very cool area with some great funky shops!

We rounded out the evening with a trip to the South Congress Avenue bridge to see the bats come out!  I think we got there a little late because we only saw a few.  Oh well.  It was still pretty cool seeing all the people out there kayaking and checking out the bats!

Whew!  What a whirl-wind trip!  And I head out to Philly tomorrow morning for HLS!  Can’t wait!!!!

WIAW: Summer School Is Almost Over Edition

Heeeeeyyyy!!!  It’s time for another WIAW!!

 

It’s the last week of summer school, so I’m sure you know what that means- FINALS!!!  I’m just a teeny bit stressed, though I’ve reigned it in a bit over the last few days.  I have to keep reminding myself that I can’t let my stress take control of me!  And any time I feel overwhelmed I just stop, take a deep breath, try to clear my mind and focus on one thing at a time.  If I keep thinking of all the tests I have to prepare for this week I’ll never be able to concentrate on the task at hand.  Keep it simple, Sarah! Let’s just go through my What I Ate Wednesday quickly this week, shall we?  That way I can get back to studying!

And awaaaay we go…

Breakfast:

Peanut butter.  Homemade bread. Not much better than that!  Except for that coffee maybe!  You haven’t lived if you haven’t tried fresh fruit on your pb sandwich instead of jelly/jam/preserves!!  Strawberries and bananas are my fave, but apples, pears, or even peaches would be great as well!  Now THIS is how to study for a test- total brain food! Winking smile

Lunch:  Some leftover teriyaki tofu (recipe from the Peas and Thank You cookbook!) over a salad with romaine, spinach, cherry tomatoes, and broccoli slaw with a few sprinkles of sesame sticks and wasabi sunflower seeds on top!  With Annie’s Light Gingerly dressing! 

With a peach and a kids coconut water with fruit juice (hey I’m a kid at heart- that counts right? Winking smile )

Pre workout snack!  2 pitted dates stuffed with about a tsp each of PB & Co. dark chocolate peanut butter…  (it was as good as it sounds!)

Dinner!  Tempeh BLTs with sweet potato fries!

Nom nom nom! (oh p.s. my oven is broken so I used my grill to make my sweet potato fries- just put your pan on that top rack on your grill so you don’t have direct heat!)

WIAW: Juice-tastic!

 

Happy What I Ate Wednesday!!

It is intensely HOT in Texas right now.  I believe we’re on day 31 of temps above 100 in a row.  Yesterday it was 110.  Needless to say it feels like we’re living in hell right now. 

My life is all about juice and smoothies right now, and I drink one with almost every meal!  True story.

Today’s focus is juice!

For breakfast I usually go with a green juice.  It’s chock FULL of vitamins and gives me oh so much energy!

My go-to green juice includes:

  • 4 big handfuls of spinach
  • 1 head of romaine lettuce
  • 4 stalks celery
  • 1/2 cucumber
  • 1 apple

I usually pair this up with a bowl of cereal or some whole wheat toast.

This morning’s cereal was Nature’s Path Heritage Flakes- love these!!! Sometimes I mix them with other cereals (like cheerios) and sometimes I like them by themselves!

Lunch is still eaten on the road right now, and unfortunately I have to eat it at 10:30!  I’ll be so glad when this class is over just so I can have a normal lunch time!

Hummus wrap (California Lavash wrap, hummus, Daiya Mozzarella, Franks Red Hot + sear in pan on both sides)

Juice!!! 

  • 4-5 handfuls baby carrots
  • 1 apple
  • small chunk of ginger

(oh, and apparently I just discovered that I did not invent my precious hummus wrap!  Apparently Mama Pea did- the crack wrap!  I had no idea of this until I was flipping through her cookbook!  Oh well, guess great minds think alike!)

 

Snack on the way home from school= bag o’ apple slices and a nectarine!

Quick and easy dinner idea…

1 can of your favorite fire-roasted tomatoes. (I LOVE LOVE LOVE the Muir Glen Fire Roasted Tomatoes with Adobo!)- put in blender or food processor and pulse until it reaches the consistency of pasta sauce.  Warm in a small saucepan and serve over your favorite whole wheat pasta.  A salad is always good to have with this- quick to prep!  Mine was romaine with broccoli slaw and cherry tomatoes with Annie’s Light Honey Mustard Vinaigrette.

There’s always gotta be a teeny bit of decadence in each day, and here’s mine!  Magic pop (like a rice cake but way better! the store I used to work at makes them fresh!) and PB&Co dark chocolate dreams PB!  ZOMG!

I used a Tablespoon on my magic pop and topped with a sliced banana.  Chocolatey slice of Heaven!

What I Ate Wednesday: Cinnamon Raisin Bread Edition

 

 

It’s time for another installment of What I Ate Wednesday!  Last week’s was a really big hit so I’m definitely going to continue doing it!

What was on the food agenda for me??

Well, for breakfast I had put some whole wheat cinnamon raisin bread in the bread machine the night before!  It turned out soooooo good!  The recipe will be at the end of this post!

I had two slices with a little Earth Balance.  It was amaaaaaaazing!!!  I had this along with copious amounts of caffeine.

 

For lunch I made my new favorite salad!  I can’t believe I’m going to admit this, but I totally ate this salad while I was driving to school.  I put the bowl right in my lap!

In my salad:

  • several big handfuls of Romaine lettuce
  • a few handfuls of broccoli slaw
  • cubed, baked tofu (the love of my life!)
  • sprinkle of wasabi sunflower seeds and sesame sticks
  • 2 T Annie’s Light Gingerly dressing

Don’t forget the apple slices!

Perfection!!

Class was boring as usual.  I think that it gets more and more boring every day.  I’m kind of done with that class, honestly.  Bah!

But I’m NOT done with this after school snack!  (nice transition, huh?)

Chocolate chip coconut granola bar- used this granola bar recipe and added some shredded coconut to it. Mmmm!

 

Dinner was a brand new recipe!  Come back on Monday and you can get the recipe for these Pizza Stuffed Portobellos! (trust me, you’re going to want this recipe!)

We had our stuffed shrooms with some steamed broccoli sprinkled with garlic gold nuggets(love those things!), and a salad with Annie’s light honey mustard.

 

Welp, that’s all my eats for the day!  How about a recipe?  This is a spinoff of my Whole Wheat Cranberry Walnut Bread and it’s fantabulous!

 

Whole Wheat Cinnamon Raisin Bread
(Print this recipe!)

Ingredients:
1 cup warm water
1/4 cup canola oil
1/4 cup agave nectar (honey would work too if that’s what you have)
3 cups organic whole wheat flour 
2 teaspoon cinnamon
1/2 teaspoon salt
2 teaspoons yeast
1 cup raisins

Directions:
Add ingredients to bread machine in the order that your bread machine recommends (mine says wet ingredients then dry)

Some people say to add fruit and nuts during the last knead cycle, but honestly I just threw them in there with everything else at the beginning and it worked just fine!

Let your bread machine do its thang! (I used the basic 1- 1 1/2 lb loaf size bread setting with a light crust)

Devour!
