Oh hey it’s 2013!

Oh hey! Remember me?? I used to blog a lot.

And then last semester happened.

It was a rough semester.

My toughest semester yet in terms of how difficult the classes were.  I had something to prove to myself and I proved it!

4.0 baby!!  I feel a great sense of accomplishment for it but I’m not sure it was worth the sheer amount of time I spent studying. Every single day and night.  I had no time to go out with friends (if I still have any left after blowing them off all semester that is).  I also had to work to pay for tuition this semester because I didn’t get any financial aid.  So it was pretty much work study work study work study.  It was definitely a miserable exhausting semester and I really need to work on balance a bit more next semester.  But I did prove to myself that I could keep going even when I was ready to give up because it was something that was very important to me.

 

I do have to say that I found my passion this semester though.  I absolutely adored my Medical Nutrition Therapy class!  I knew I wanted to be a RD but it wasn’t until this semester that I knew 100% that I wanted to be a clinical RD. I love love love it!  I’m really excited about my internship (wherever/whenever that may be.  It’s still up in the air until April!) and my first real job as a RD. I can’t wait!!

 

More balance this year is my main goal.  I definitely need to work on my “all or nothing” mentality a bit more.  Less worrying about grades, more blogging, more cooking, and more friends.

Earthquaaaaaaake!!

Y’allllllll… There was an earthquake by my house! And I totally felt it! The house shook under my feet. Whoaaaa!

We don’t really get too many earthquakes in these parts so it’s kind of exciting! There were actually two but I only felt one of them. The other was a bit too far away from me to feel it. The one by me was a 3.4 and the one farther away was a 3.1. Not big but still!

This one was closer to me. I’d say about 10 miles? Maybe a little less.

Anyway that’s the super exciting news from around here! I haven’t really had much time for blogging and honestly my posts are probably going to be super random this semester. I unfortunately don’t really have time to write recipes right now, which I love doing. But I have to focus on this overwhelming semester. I’m going to try my hardest to post at least once a week from now on.

That time I used to blog…

Uhhhh…. yeah…

It’s been a while and I’m thoroughly ashamed of myself.

School is in full swing and between that and my spotty internet service (it’s such a long story, but run far far away from Verizon- terrible service and even worse customer service) there hasn’t been much time or motivation for blogging.  But I promise I’ll try to be better!

It’s only been a week since school started and it definitely feels all consuming.  I definitely feel like last semester was my “make or break” semester with A&P and Biochemistry but I studied hard, freaked out only a little and ended up with grades I could be very proud of (I think we talked about how I made a 100 on my Biochemistry final? Yeah I’m still feeling like a badass about that.  I think maybe I should take out an ad in the paper Winking smile ).

But this year.  This is the big one! This is the last semester where my grades count towards my internship application so they need to be great.  This year I learn all of the important stuff that I will be using throughout my career.  I definitely have something to prove, not only to myself but to the people that from the beginning said that I wouldn’t make it.  Unfortunately, there were a few.  No pressure?

I’m working to pay for school (hey thanks government for no financial aid this year- you’re swell!) and taking my hardest semester so far so any prayers for my sanity that you could send my way would be amazing! 

I’m still working on that whole balance thing- I tend to do one thing at a time and am not the greatest at multitasking but I think I’m doing an okay job so far this semester.  I’ve made time to work out a bit, though not as much as I need to.  I’ve also made time to drink a glass of wine here and there this week.  I adore shiraz right now just FYI. 

I’m also trying to plan ahead on my food and prep my veggies and whatnot on the weekends so that I can quickly put meals together throughout the week.  That’s definitely been helping a ton!

restaurant review: z pizza

I haven’t done a restaurant review in forever and I thought this one would be a great place to start doing them again!*  I had heard of Z Pizza before but after Matt tweeted about how great it was I knew I had to try it out!

 

I live in Carrolton, which is a little too far from where Z Pizza is located in Flower Mound to get pizza delivered to us so we went there to check it out in person!

When we walked in we were pleasantly surprised by how fresh it felt inside this pizza joint!

And there are so many different types of pizza/choices of toppings to choose from.  They also have salads and sandwiches on the menu as well.

I love how obvious it is that Z Pizza has a commitment to healthy eating and that definitely starts with their dough which  is 100% organic (regular OR whole wheat!!)!  Then they add fresh produce and other toppings of your choice after that!

I’ve never seen so many veggie options at a pizza place before- it was definitely hard to make a choice!

I couldn’t decide between the Berkeley or the California and in the end I went with the California with a whole wheat crust.  (next time I’ll check out the Berkeley for sure)

The California pizza included tomato sauce, mozzarella, tomatoes, red onions, bell peppers, mushrooms, zucchini and black olives.

First of all the crust was fantastic!  It was crisp but it still had a nice chewiness to it!

Then there were the veggies- they were super fresh.  I adore  zucchini and mushrooms on my pizza so this was perfection!  It also had the perfect amount of cheesiness on it.  And also they carry vegan cheese!

My only complaint about the pizza was that I thought that it didn’t have quite enough sauce on it.  Easily remedied though- that definitely wouldn’t stop me from going back!!

five things Friday!

YAY- it’s time for another edition of five things Friday!!  I think that in the world we are living in today, though there are certainly so many horrible things going on that it is oh so important to recognize the blessings we receive even though they aren’t always obvious to us!

So here are my five blessings for this week!

1) My FOUR YEAR wedding anniversary with this fella!  Definitely doesn’t feel like it’s been four years!

2) My health!  Even though I’m not quite where I want to be with my weight loss yet I think it’s super important to me that I remember where I started and how I’m never going to go back to that! (down over 40 lbs so far!)

3) A roof over my head and healthy food in my belly.  I haven’t talked about this at all but we’ve been struggling to get by lately and that has been very rough on me emotionally.  I still have no idea how I’m going to pay for school next semester since I was denied for financial aid.  And even though this is soul crushing there’s a chance I may have to take a year off and get a job and save up to finish my last year of school.  But I’m still so very thankful to have a roof over my head.  And I’m praying for those finances to pay for my last year of school and I’m hoping that will somehow be provided for. 

 

4) This blog.  A place where I can complain, rant, celebrate, whatever I want…  It’s the only place I can go where no one can tell me what I’m doing is wrong.  Though it may not be fancy and I may sometimes neglect it a little when things get hectic it’s always here for me when I need it!

 

5) Books!  When I need a way to escape from reality for a little bit reading has always been there for me!!  Here are a couple of my faves this summer:

  • The Mortal Instruments series. The newest of the series came out this summer and after I read it I decided to reread the entire series. I can’t believe I have to wait till 2014 for the next installment!
  • The Divergent Trilogy.  Another fantastic series!  The newest recently came out and it was OMG fantastic!!
