WIAW: Austin Edition

Hey friends!  Our internet has been down since we’ve been back from our trip so I haven’t been able to post this until today, so I thought I’d incorporate it into my WIAW post!

Not only has the internet been down (and just got repaired about an hour ago), but my car died and has been in the shop!  The power steering pump went out and it’s costing some mega bucks to get it fixed!  I have all the luck, huh?!  Sigh.

Our last day in Austin was filled with amazing food!

Starting with some Biscuits and Groovy for breakfast!  These biscuits were indeed groovy!

Biscuits + veggie sausage + french press coffee = one happy girl!

Lunch was at the MOTHER of all whole foods!  Seriously I don’t think I can go back to my normal whole foods after going to that one!  It was ginormous!!

Salad with a little of this and a little of that and with tahini dressing!

Lime sparkling mineral water that I’m now obsessed with.  Thanks Laura!

An amaaaazing samosa!  Potatoes + peas + curry= can’t go wrong with that!

Snack= juice from Daily Juice!  I got beet/orange/apple/ginger- mmmmmm!!!!

Dinner was pizza at Conan’s! (thanks to my friend Schuyler for the suggestion!)  Whole wheat deep dish pizza with veggies and dairy free (Daiya) cheese!  The crust was seriously phenomenal!

Dessert!!!  Another shake from the ice cream shop in Toy Joy!  This time I went for the chocolate mint- oh em gee!!!!

Shopping trip to SoCo (South Congress)!  Very cool area with some great funky shops!

We rounded out the evening with a trip to the South Congress Avenue bridge to see the bats come out!  I think we got there a little late because we only saw a few.  Oh well.  It was still pretty cool seeing all the people out there kayaking and checking out the bats!

Whew!  What a whirl-wind trip!  And I head out to Philly tomorrow morning for HLS!  Can’t wait!!!!

Taking Austin by storm!

Hey friends!  We are in Austin right now for a mini vacay!

I’m not going to lie, this trip was more about the food than anything else!  Austin has some of the greatest food in the state, not to mention it’s the most veg-friendly city in the state!

We left yesterday afternoon and as soon as we got here we were starving!

Ready for dinner!

The first place we hit up was Bouldin Creek Café.

Oh my word!  The food was sooooo good!!!  If we weren’t leaving so soon we would definitely be going back to try some more stuff- their menu was fabulous!

I decided to go with the Aztec Pasta- bowtie pasta, chipotle-pecan pesto, spinach, & sundried tomatoes.

Obviously it was disgusting! Winking smile

I also had a bite of Justin’s WannaBLT!

Then we wandered over to Toy Joy and looked around at all the crazy toys they have there- they have lots of retro toys!  And they also have a little vegan soft serve place in the back of the store.

They have two different flavors of soft serve each day plus sundaes, cones, and shakes.

I got the Butterfinger shake!  I was really happy that they had these small sized ones- it was the perfect portion! Smile

Then we decided to go see a movie because we hadn’t been in forever.  We hit up the Alamo Drafthouse and saw Cowboys & Aliens (really good- go see it!), and guess what they have there?!  BUTTERBEER!!!  Of course I had to get one.  Sorry no pic- dark theater.  It was good!

What a fun day!  Day 2 coming atcha tomorrow, stay tuned!

Hope everyone is having an amazing weekend!

Sorry I’ve been MIA the past week- things have been crazy!  It seems like I have a test every day lately.  And my lab practicals are killing me- why do they make this stuff so hard when we only get one hour credit for the lab?!  Grr!

Let’s see what’s come and gone since I last posted?

Valentines came and went.  My awesome hubby made dinner for us!  Pasta with veggies from The Vegan Table.  If you don’t own this cookbook you need to get it ASAP!  It’s my fav vegan cookbook!

Oh and I have proof that he actually used the kitchen for something other than getting a glass of water- look!!

(in case you were wondering that is Field Roast Italian style sausage- made from grains…no piggies are allowed to be harmed in our house!!)

I got a sweet new teapot for valentines day- le creuset!!!

What else?  This past weekend I went to Austin with a couple of friends.  We went to a book signing.  It was Lisa McMann- she was super nice and signed our books and answered a million questions!  Loved her!

It was a whirlwind trip so I didn’t really get to take many pictures.  But it did make me realize that I have never gotten to spend any time in Austin, and how crazy is that because it’s the capitol of our state, plus it just happens to be the vegan capitol of TX as well!  I’d secretly love to move there- there’s so much to do, people are always out and about and there’s tons of music!  Maybe some day!  Hubby and I are planning to go back this summer for vacay!

I better get back to the books- I have a lab practical tomorrow!  I have tons of new recipes that will be going up soon, so stay tuned!

Happy snacking!
