National Coffee Day: Peanut Butter Mocha

Happy National Coffee Day friends!!  Sorry this is so late in the day, but I HAD to post something on national coffee day!  I celebrated by recreating an awesome coffee drink that they have at my favorite coffee house.

I’m not going to lie.  This drink is really really rich.  This is more like a dessert treat than a morning coffee.  That doesn’t mean it isn’t still insanely delicious though!  Chocolate and peanut butter are a match made in heaven!

Peanut Butter Mocha
(Print this recipe!)

Ingredients:
1/2 cup nondairy milk (if you want it frothy use soymilk- it froths like nobody’s business!)
2 Tablespoons dark chocolate chips
1 Tablespoon creamy peanut butter
1 shot espresso or 1/2 cup really strong coffee
sweetener to taste (I used a drizzle of agave nectar)

Directions:
In a big mug add chocolate chips and peanut butter and melt in the microwave- about 45 seconds.

Make your espresso or brew your coffee.  I have a cute little espresso maker that’s super easy to use.

Carefully stir your hot espresso or coffee into your melted peanut butter/chocolate mixture.  Mix well.

In a microwaveable cup heat your nondairy milk for about a minute.

Blend your hot nondairy milk in your blender until nice and frothy.

Slowly add frothy milk to your espresso/chocolate/peanut butter mixture.

Snow Day!

No school, classes were cancelled last night so this girl got to sleep in- yipee!

I was craving oatmeal so bad when I got up this morning.  Decided to make my oats taste like starbucks oatmeal this morning. (you know with the brown sugar, mixed nuts, and dried fruit…)

Into the pot… (for me and the hubs)

! cup of rolled oats
1 cup almond milk
1 cup water

Toppings…

handful of chopped dried cranberries and cherries
sprinkle of chopped walnuts and pecans (I pretty much always have these hanging around in my freezer)
sprinkle of brown sugar
sprinkle of ground flax and chia seeds

Better than the bucks!

Next was a short walk in the winter tundra!  (Hey it’s Texas- this is the winter tundra to us!  Especially since it was in the 70s this weekend and I wore shorts.)

Harley likes the snow, but she has such a thin coat that she starts shivering pretty much immediately.

Then to do what a Texan does when they get snowed in… crank the heat up, dream about a scorching TX summer, and make some picnic food!

Taxes were done, then I started some studying for a test tomorrow that’s postponed because we have ANOTHER snow day tomorrow!  Now there’s nothing left to do but snuggle up with the hubby and watch a movie… wonder if he’ll go for Twilight?
