dang quesadilla

well, my plans today aren’t going quite according to schedule, but at least I’m getting some stuff done!  I missed spin class this morning because I overslept- oops!  Then I remembered that I had an appt with my trainer tonight so I figured it was okay, then my trainer texted me to let me know that she was going to have to reschedule.  Blast!  I’ve got so much to do now, that I don’t know when or if I’ll be able to fit anything in!

Here’s what’s on my todo list today…

  • load and unload dishwasher
  • sweep and mop kitchen
  • vacuum living room and hallway
  • drag out the carpet cleaner and clean LR carpet and rug in kitchen
  • blog
  • grocery store run
  • make picnic items for concert at the gardens tomorrow
  • clean up kitchen after this cooking/baking marathon (I’m a messy cook!)
  • make bed
  • LAUNDRY  (why does this always get pushed to the back of the list?!)

When I got up for breakfast I was feeling yogurty!

  • about 1/2 cup-ish greek yogurt
  • drizzle of agave nectar
  • couple of handfuls Kashi Honey Sunshine cereal
  • tiny sprinkle of mymix granola
  • big handful of strawberries
  • coffee!

Then I did some web searching for a place for us to stay when we trek to New Orleans next month.  I think I found a place, I’m pretty psyched!  Then onto chores, which I’m still working on.

Then lunch time!

this is just my favorite thing ever to make and it is SO insanely filling!  It’s almost 3:00 now and I’m STILL full!

Here’s what was going on with my little quesadilla today…

  • ez 4:9 tortilla
  • black beans (bout 1/2 cup)
  • sprinkle of sharp cheddar
  • baby sweet peppers

These little peppers are fab!  They taste just like bell peppers except a bit of a sweeter taste.

Then I cooked up my dang quesadilla and topped it with some chopped yellow cherry tomatoes and some red onion.  Then a big spoonful of salsa and greek yogurt on the side!

SO GOOD!

I’ve gotten to where I just buy a giganto tub of greek yogurt at Costco once a month and use it not only as yogurt but also as a substitute for sour cream.  It doesn’t make sense for me to buy sour cream when I don’t really use it that often and greek yogurt tastes just like sour cream to me. (which is probably why I have to sweeten it with some agave if I’m going to eat it plain.  Me no likey plain greek yogurt!).

Now I’m just procrastinating- back to chores!!
