weeeee!

So I’m running out of titles for my entries, lol.

This morning I got up early for a workout with my trainer. Before I left I had half of this breakfast cookie and a shot of wheatgrass.

In my breakfast cookie…

  • oats
  • milk
  • 1/2 banana
  • 1/2 of a small mango
  • 1 T peanut butter
  • sprinkle of coconut

Then off to the gym I went!

After the gym I went to take my car to get fixed.   I had to go to the MINI dealership in Arlington to do this as I can’t take my car just anywhere to get fixed.  They are the only ones I trust to work on my car, so off I went.  I dropped it off and picked up the rental car (they put me in a toyota camry and I really like it!).

After that I went to whole foods to grab a salad for lunch since it’s right down the road.  I hit the salad bar (they’re salad bar is crazy expensive BTW!!) And I grabbed an Oxygen magazine to browse through whilst I munched.

I tried to put as many superfoods as I could into my salad!  See, I’m learning something from the book I’m reading about superfoods!

The superfoods in my salad included…

  • tomato
  • red cabbage
  • spinach
  • broccoli
  • edamame (soy)
  • shredded carrots

I also had some balsamic vinaigrette and a sprinkle of blue cheese on my salad.

And a tea to drink (which is also a superfood, who knew?!)

And some fresh fruit for “dessert”

Then I headed home!  When I got to the casa this chocolate coconut milk yogurt was calling my name…

Oh my gosh this was so incredibly good!  I have yet to try something from this company that I haven’t liked!

I guess that’s it for now, I’ll probably hit up a cardio kickboxing class tonight to burn some extra calories and I think we’re going to make pizza for dinner! yumm.

ah, Sunday!

I’ve been in my PJs aaaaall day!  Serisouly, lol.  We did a little light cleaning around the house, but other than that we’ve just been chilling!

I woke up so late this morning thanks to my tylenol pm I took last night for the splitting headache I had.  That means I slept well over 10 hrs last night.  Holy sleep batman!!

After I got up Justin had already had breakfast because he got up at a normal time.  So I just made an english muffin with a little Barney Butter and black cherry fruit spread.  And I also had a cup of that wonderful spring blend coffee!  I just realized that I didn’t have hardly any coffee last week (guess I didn’t need the caffeine with the green vibrance) and I was missing the awesome taste!

Then I did a little cleaning, threw in a load of laundry and played on the internet.  Before I knew it, it was time for lunch.  I had a salad with tons of veggies, a little goat cheese, and my fav greek vinaigrette.  Also some POM with a little sparkling water.

Oh, and a chobani with some blueberries (becuase I’ve been reading about their phenom. super powers) and an ounce of my mymix granola.

And a few pieces of these espresso pillows from my goodie basket.  These were amazing!

Later on in the day I tried some of the roasted plantain chips and they were really great as well.  I was a bit surprised at first bite becasue I guess I thought they were going to taste like banana chips.  They tasted like potato chips, and I was fine with that because I love potato chips!

Then we had some salmon croquettes for dinner because I had bought two cans of wild salmon at WF and I wasn’t sure what to do with them.  They didn’t look ery pretty but they tasted fantastic!  I served them with some roasted asparagus.

And then we had a scoop of that yummy chocolate coconut milk ice cream!

Well, that wraps up the weekend.  We have no school next week because all of our suspected swine flu cases were confirmed.  I’m not sure what I’m going to do with all of my spare time yet, but I’m sure I’ll enjoy it!

Saturday recap

wow, yesterday was a busy day and lots going on! I have very few pics from yesterday because I accidently left my camera at home on the charger. Oopsie!

I woke up and grabbed a quick bowl of cereal and then headed off to the gym for cardio kickboxing. My favorite instructor was teaching- I heart Tony! He kicks my booty and I burn a ton more calories in his class than in anyone elses.

When I got home I had THREE packages waiting on my doorstep!!! The postman loved me today I guess.

The first thing I ripped open was my mymix granola! I have entered countless blog contests to try to win some of this stuff, but I NEVER win, so I broke down and ordered some. I made a mix for me and I also made a mix for my hubby. In my mix was…

  • lowfat granola
  • mango
  • papaya
  • banana chips
  • flax seeds
  • peanut butter bites

yummmmmmmmmm!!!!!!   This stuff is so fresh and delicious!  The company even sent me an email to let me know that my mix was sitting on my doorstep waiting to be munched on!  I got the email as I was leaving the gym so I was really excited on the drive home. Yup, I’m a dork.  Excited about granola.

The next package I ripped into was a goodie basket from Lauren.  This was full of goodies from Trader Joe’s.  We don’t have any of them round these parts so I was really really excited to get this!  Look at all of these goodies!!!!

I tried a bite or two of everything I think, but didn’t take a picture of everything.  The first thing I busted into was the dark chocolate edamame.  Yummmm!  The edamame was crunchy, and the dark chocolate was nice and bittersweet.  It was fantastic!

Then I opened my package from Fresh Market with my barney butter and spring blend coffee. I had to break down and get some of this because I kept seeing it on Kath’s blog and I cannot resist trying a new coffee. It did NOT disappoint! It is so rich with a beautiful hint of toffee. YUM!

Then I grabbed a couple of ounces of my granola mix in a ziplock for the road and headed out to the “Ville” to get manis and pedis with my mom and my sis-in-law.  It was pretty fun.  And I can’t help but giggle at my mom getting a flower painted on her toes and my dad actually noticing it! hehe.

Then mom, dad, brother, sis-in-law, hubby and I went to Hard Eight for some awesome BBQ!  Seriously the best BBQ I’ve ever had. I had some smoked chicken, a baked potato, beans (holy yumm, they have fantastic beans, so spicy!), and a couple of bites of banana pudding.  It was a fun evening, we talked about food and exercise a lot.  Brother and sis-in-law are training for a half Iron Man.  What a bunch of crazys they are!  And I’m going to do a 34 mile bike ride in Dublin (TX, not Ireland, lol) in June.  I can’t wait to start training for it. As soon as the weather clears up I’m hitting the bike trail!

I guess that’s about it from yesterday!

Something fishy’s going on….

This afternoon before my workout I had a couple of dates stuffed with some PB.

Then I hopped on the treadmill and did a quick mile (I really didn’t want to do anything, I had to force myself), then I did the hip opening flow from yogadownload.com.

About an hour after than I had a peach. yumm!

Then I had a shocktop while I worked on dinner. (this is the ONLY beer that I like. I finally came across it in a grocery store, I’ve been looking for it forever)

For dinner I made Mahi Mahi burgers with srirachi mayo and sweet potato fries.

my laptop is about to die

Seriously, it is falling apart. Literally, coming apart at the hinge. I don’t know how long it will be until it just completely falls apart, so I need to back up all of my stuff. There’s a ton of stuff on my computer, so I don’t really know where to start! I’ll probably start with my music, then pictures, then any other files. This is a good time to delete a lot of stuff that I don’t really need any more as well. Grrrrr, when it rains it pours!

I’m out of school again today (thanks swine flu). I went to bed kindof late last night, so I slept until 8:30 this morning. That’s sooooo late for me. When I got up my tummy was ready for breakfast. I picked up some new cereals from Whole Foods yesterday. I had a coupon for Nature’s Path, so I put it to good use. This morning I had 1/2 cup of each of these…

About an hour later I had my “greens” for the morning. Mixed with OJ. (still not brave enough to try it with water)

For Lunch I’m having a chicken caesar salad (a lightened up version, of course).

lettuce
2 T light Caesar dressing
1 t parmesan cheese
4 ounces chicken breast
a couple of whole wheat croutons

And 1/2 cup each of strawberries and blackberries

And now I’m still sitting and waiting on the car insurance dude to get here. Sometime between 9-3. Which I bet he doesn’t show up at all and I’ll have sat around all day waiting for him.
