What I Ate Wednesday #8 + more WHAW

Hey dudes and dudettes!!  Before I start WIAW I just wanted to throw out a quick reminder to enter my cookbook giveaway!  Remember that it ends on Friday at 5:00 pm CST! 

Also since I’m talking about the giveaway… I am completely amazed by the response for this!  I honestly had no plan to do a giveaway until I started writing the post, It was totally a whim!  But I feel so bad because so many people want a cookbook and I could only give out one.  So here’s what’s going to happen… I’m looking for a secret number of entries in the giveaway.  If we get to that number I’m going to give out TWO cookbooks instead of just one!  So make sure you enter the giveaway, tweet, facebook, and blog it so that you’ll have a better chance of winning one! Now onto some WIAW!!

 

 

Breakfast was the same old same old.  Cereal.  I love cereal.  Sometimes I eat cereal for dinner.  I’m not joking!

This morning in particular was Nature’s Path Heritage Flakes with banana slices, blueberries, and 1 cup almond milk.

Also, I don’t always remember to take a picture of it, but there’s ALWAYS coffee involved in some point of my morning!

Lunch was at home since I didn’t have school that particular day.

Green Juice (spinach, celery, cuke, apple), hummus wrap with soooo much Frank’s Red Hot, tabouli salad, and baby carrots.

Snacktime!

Apple slices and pretzels with some home made butterscotch Peanut Butter (recipe coming very very soon- I promise.  I have to perfect it before I share!)

And finally, dinner.  This is my favorite dinner.  Ever.  This is Laura’s Pad Thai recipe.  I make mine with tofu instead of chicken obvi.  I also double up on the veggies!   It’s amazing.  I have dreams about the sauce.  I’m not joking!

Now, what did Harley eat this fine Wednesday?  Otherwise known as WHAW!

She shredded a whole roll of my kenisio tape!  This stuff is not that cheap either. Little turkey!

WIAW: Juice-tastic!

 

Happy What I Ate Wednesday!!

It is intensely HOT in Texas right now.  I believe we’re on day 31 of temps above 100 in a row.  Yesterday it was 110.  Needless to say it feels like we’re living in hell right now. 

My life is all about juice and smoothies right now, and I drink one with almost every meal!  True story.

Today’s focus is juice!

For breakfast I usually go with a green juice.  It’s chock FULL of vitamins and gives me oh so much energy!

My go-to green juice includes:

  • 4 big handfuls of spinach
  • 1 head of romaine lettuce
  • 4 stalks celery
  • 1/2 cucumber
  • 1 apple

I usually pair this up with a bowl of cereal or some whole wheat toast.

This morning’s cereal was Nature’s Path Heritage Flakes- love these!!! Sometimes I mix them with other cereals (like cheerios) and sometimes I like them by themselves!

Lunch is still eaten on the road right now, and unfortunately I have to eat it at 10:30!  I’ll be so glad when this class is over just so I can have a normal lunch time!

Hummus wrap (California Lavash wrap, hummus, Daiya Mozzarella, Franks Red Hot + sear in pan on both sides)

Juice!!! 

  • 4-5 handfuls baby carrots
  • 1 apple
  • small chunk of ginger

(oh, and apparently I just discovered that I did not invent my precious hummus wrap!  Apparently Mama Pea did- the crack wrap!  I had no idea of this until I was flipping through her cookbook!  Oh well, guess great minds think alike!)

 

Snack on the way home from school= bag o’ apple slices and a nectarine!

Quick and easy dinner idea…

1 can of your favorite fire-roasted tomatoes. (I LOVE LOVE LOVE the Muir Glen Fire Roasted Tomatoes with Adobo!)- put in blender or food processor and pulse until it reaches the consistency of pasta sauce.  Warm in a small saucepan and serve over your favorite whole wheat pasta.  A salad is always good to have with this- quick to prep!  Mine was romaine with broccoli slaw and cherry tomatoes with Annie’s Light Honey Mustard Vinaigrette.

There’s always gotta be a teeny bit of decadence in each day, and here’s mine!  Magic pop (like a rice cake but way better! the store I used to work at makes them fresh!) and PB&Co dark chocolate dreams PB!  ZOMG!

I used a Tablespoon on my magic pop and topped with a sliced banana.  Chocolatey slice of Heaven!

Lazy day

Yay- day 2 of spring break!

Harley had a nice relaxing day today.  She did some napping on the couch…

Silly gal!

Not much on the agenda today except cleaning- wow this place was a mess!

The kitchen got scrubbed, some laundry got done.

I tackled the big pile of napkins that have been needing to be ironed and folded.  (I got these as a wedding gift- so cute right?!  And they match the colors of all my fiestaware!)

I had a good run before lunch- did my own little 5K and cut a minute and a half off of my personal best 5K time! 

And a yummy wrap for lunch…  A leftover veg burger, a little Daiya, rolled it up and seared it in a pan, then opened it back up and stuffed it with spinach and romaine, pickles, and some mustard.  NOM!

And then I made cookies!!!

They’re dark chocolate chip cherry!  And they’re amaaaazing!

I followed a standard chocolate chip cookie recipe (subbing a flax egg for the chicken’s egg), I also did just 1 cup of chocolate chips (I used the extra dark chocolate ones!) and I added 1/2 cup of chopped dried tart cherries.

Spring break, day 1!

Hooray for spring break!

I didn’t really do anything super productive today.  However I did get some grocery shopping done, which I always have a hard time doing because I’m always either at school or at work.  This is the first time I’ve been able to do any leisurely grocery shopping in a long time!

I hopped over to Costco and picked up some veggies (my Costco just started carrying Organic Romaine- yay!)

Annie’s Goddess dressing is maybe my favorite salad dressing in the world!  I also got some coconut water, chickpeas, dried cherries, golden flax seeds, and COCONUT FLOUR!  I have some major pancake plans for that!!!

Then a stop at Hobby Lobby for some cute new fabric for blog pictures!  They’re very spring-y!

Then some juice!  I was feeling really bad when I got back from shopping.  I think I was dehydrated.  But I chugged some water and had my juice and I felt better. Today’s juice was a few handfuls of baby carrots, an orange, 2 apples, and a hunk of ginger (inspired by Lara!).  It was amaaaaziiiiing!  Clearly I should have ironed the fabric first.

I wasn’t really feeling up for kickboxing tonight, so I’m taking it easy and I’m going to go for an extra long run tomorrow.

For dinner we made Mama Peas Cheesy Dijon Pasta Bake.  I used shells in mine, and I also used breadcrumbs instead of cracker crumbs.  And we served it up with a side salad with my fav Annie’s dressing!
