WIAW: Juice-tastic!

 

Happy What I Ate Wednesday!!

It is intensely HOT in Texas right now.  I believe we’re on day 31 of temps above 100 in a row.  Yesterday it was 110.  Needless to say it feels like we’re living in hell right now. 

My life is all about juice and smoothies right now, and I drink one with almost every meal!  True story.

Today’s focus is juice!

For breakfast I usually go with a green juice.  It’s chock FULL of vitamins and gives me oh so much energy!

My go-to green juice includes:

  • 4 big handfuls of spinach
  • 1 head of romaine lettuce
  • 4 stalks celery
  • 1/2 cucumber
  • 1 apple

I usually pair this up with a bowl of cereal or some whole wheat toast.

This morning’s cereal was Nature’s Path Heritage Flakes- love these!!! Sometimes I mix them with other cereals (like cheerios) and sometimes I like them by themselves!

Lunch is still eaten on the road right now, and unfortunately I have to eat it at 10:30!  I’ll be so glad when this class is over just so I can have a normal lunch time!

Hummus wrap (California Lavash wrap, hummus, Daiya Mozzarella, Franks Red Hot + sear in pan on both sides)

Juice!!! 

  • 4-5 handfuls baby carrots
  • 1 apple
  • small chunk of ginger

(oh, and apparently I just discovered that I did not invent my precious hummus wrap!  Apparently Mama Pea did- the crack wrap!  I had no idea of this until I was flipping through her cookbook!  Oh well, guess great minds think alike!)

 

Snack on the way home from school= bag o’ apple slices and a nectarine!

Quick and easy dinner idea…

1 can of your favorite fire-roasted tomatoes. (I LOVE LOVE LOVE the Muir Glen Fire Roasted Tomatoes with Adobo!)- put in blender or food processor and pulse until it reaches the consistency of pasta sauce.  Warm in a small saucepan and serve over your favorite whole wheat pasta.  A salad is always good to have with this- quick to prep!  Mine was romaine with broccoli slaw and cherry tomatoes with Annie’s Light Honey Mustard Vinaigrette.

There’s always gotta be a teeny bit of decadence in each day, and here’s mine!  Magic pop (like a rice cake but way better! the store I used to work at makes them fresh!) and PB&Co dark chocolate dreams PB!  ZOMG!

I used a Tablespoon on my magic pop and topped with a sliced banana.  Chocolatey slice of Heaven!

Meatless Monday: Pizza Stuffed Mushrooms

Happy Meatless Monday friends!

On Wednesday I promised an awesome stuffed mushroom recipe and here it is!!  Hope you enjoy!

Pizza Stuffed Mushrooms
(Print this recipe!)

Ingredients:
4 Portobello mushrooms (you could also do this with baby bellas)
1/2 onion, diced
1/2 bell pepper, diced
1 clove garlic, minced
3/4 cup of your favorite pizza or pasta sauce
1/2 cup mozzarella (I like Daiya), plus 1/4 cup for sprinkling on top
1/2 cup whole wheat bread crumbs
1 teaspoon Italian seasoning

Directions:
Preheat oven to 400 F.

Lightly scrape the gills out of your mushrooms (you don’t have to if you don’t want to, but I find the gills kind of oogey so I like to scrape them out) and wipe them down with a damp towel to clean them.

Sauté onion and bell pepper on medium heat until tender. (I like to sauté my veggies with a little vegetable broth instead of oil!)

Add garlic and sauté until fragrant.

Remove veggies from the heat and place into a bowl with Italian seasoning, sauce, breadcrumbs, and cheese.

Divide the mixture between the mushrooms and sprinkle the tops with a little more cheese.

Bake in the 400 F oven for 45-50 minutes.

We served ours with a big pile of steamed broccoli and some salad!

So. Good.

Mushrooms.  Pizza.  Cheese.  Can’t go wrong there my friends!
