Weigh in Saturday

I originally started this blog to help keep me accountable and eating healthy on my weight loss journey. Even though I think it’s morphed into something better than a blog that’s just about weight loss, weight loss is still a really big part of my life.

The fact is that I used to weigh 210 pounds. I don’t anymore. I’m now at 174 (after this weeks weigh in). If you want to see my before picture check out the about me tab.

And even though I’ve kept off 36 pounds I’m still not in a healthy weight range for my height. I’ve been floundering around this weight for almost 3 years. Gaining a little, losing a little over and over again. It’s so frustrating. But then I realized that I really should be using my blog more to help keep me accountable. So that’s what I plan on doing.

I want to walk the walk and be a good, healthy example for my future patients. I have to confess that sometimes I go to class feeling like a fraud because I’m learning about how to make people healthier but I’m not at a healthy weight. It’s time to take the bull by the horns and officially really start to try to get the rest of this weight off!

I’ll be weighing in on Saturday mornings and posting my losses. I’m really excited about getting the rest of this weight off- it’s going to make running so much easier because I won’t have so much pressure on my knees- and I’ll probably be able to run faster too! 😀

So…
Last weeks weight was 176. And this weeks weight is 174. That’s -2 lbs!

Bloggie meet up!

Wednesday night we had a fun North TX blogger meet up in Denton! 

I met Laura in Fort Worth, then we headed to Denton to pick up Heather.

The three of us gals headed out for a pre dinner drink (I can’t remember the name of the place)  But $2 beer- woohoo! (side note- I used to hate beer!  All the sudden I love it.  Random.)

Then we headed on to Mr. Chopsticks, where we met up with some more bloggers!  I’m going to try and remember everyone, but I’m sure I’m missing someone.

This food was epic!  Crispy tofu.  Zucchini.  Carrots.  Tomatoes.  Spicy sauce.  And of course basil.  I’m getting hungry just thinking about it.

I didn’t get a group shot.  I was too obsessed with this food!

My first 10K

I meant to post this yesterday since it was national running day, but I got a little busy and ran out of time!

On Memorial Day I did my very first ever 10K!!!  It was crazy and amazing at the same time!  I had a couple of goals for this race… 1)Don’t die, 2)Finish, and 3)Finish in under an hour and a half.  And I definitely met all three of those goals!  My time was 1:24:54.  It felt soooo awesome to cross that finish line!

The course was crazy with some INSANE hills!!!  And around mile 5 my stomach started growling like crazy. Oops- nutrition fail!

So I met Laura, her boyfriend Matt, and her cousin Jennifer there.  Heather and Nicci were also there!

Man cannot live on bread alone

Oh but I can sure try!  Winking smile

I love bread.  It’s delicious!  And contrary to what some people say, bread is not evil.  Whole grains are crazy good for you, so why not go for whole grain bread?! 

I’m a firm believer in everything in moderation.  People that go to extremes (i.e. cutting out an entire food group) are the people who usually fail at a healthy diet and go back to extreme overeating of the unhealthy junk foods.  So I allow myself to have everything I want in moderation.  Why on earth would I want to live without bread?!  And cupcakes?  And even though I don’t eat dairy I still get to have my fill of yummy cheesy-ness in the form of Daiya cheese and even a delicious nutritional yeast cheese sauce.  (and yes I do get my calcium in!) It’s all about moderation- I still stay within my caloric intake for the day.  I still eat somewhere around 5-9 servings of veggies a day.  I get my nutrients in and savor the things that feel like a treat to me!

So anyway I recently got a bread machine (my reward to myself for my May fitness challenge- a teeny bit early since the challenge isn’t technically over yet, haha).

I read a TON of reviews.  I knew that I wanted one that was under $100.  I also knew that I wanted a horizontal loaf pan so that it actually looked like a loaf of bread instead of a weird tube shape that you get with the vertical loaf pan.

So I ended up with the West Bend 41300 Hi-Rise.  It’s even got two kneading blades!

I LOOOOOVE this thing!  Though I’ve tried many many times I am completely unable to make home made bread.  I’m not sure why.  I follow directions and recipes to a T.  But my bread NEVER turns out!

Not anymore!  Every loaf I’ve made in this thing has been amazing!

I also made some pizza dough (the machine has a dough setting- how cool is that?!), but I forgot to take a picture.

Right now I’ve got some dough going for some soft pretzels.  Depending on how they turn out, I’ll hopefully be posting the recipe tomorrow!

Anyone out there have a tried and true bread machine recipe that they love and want to share?

Super creamy grilled cheesy

Ugh, sorry for the lack of posts- my work schedule has been so weird lately.  I’m working full time right now, and if you remember how exhausting my job is, then you know by the time I get home I can barely keep my eyes open and I pretty much go straight to bed.  I’m ready for the summer to be over so I can quit!  I think I’ve decided in the fall I’m going try to do some subbing at some local schools.  It will pay more per day than I make right now, plus I would be done by 4:00.  I think it would work pretty perfectly with my fall schedule since I’ll only be going to school on Tues/Thurs.  I have a teaching certificate and I know a lot of schools give preference to substitutes that have them.  We shall see!

Since my last post was about cheese, I thought I’d do another one!  This is my absolute favorite version of a grilled cheese that I’ve ever made!  The hummus makes it so creamy and delicious!!

What you need…

Bread (whatever kind you like, I used a rustic whole wheat)
Earth Balance
Hummus (whatever brand you like- Sabra is my fav)
2-3 Tablespoons of your fav cheese (I LOVE the Daiya Pepperjack for this!)

How to make it…

So just like a regular grilled cheese, you spread your butter on the bread. 

On the non buttered side your going to spread a thin layer of hummus. 

Place it in the pan butter side down (a cast iron skillet makes the best grilled cheeses!!!) and sprinkle on your cheese.

Spread another thin layer of hummus on the non-buttered side of the other piece of bread and place on top (butter side up).

Let it get all crisp and golden brown, then flip it over and do the same on the other side.
