1) I just realized I didn’t post a picture of the breakfast sammich with my last blog post.  So here it is!

2) I made apple cider!!  I can’t believe I’ve never made it before- it was SO easy!

Here’s what you do…

Homemade Apple Cider

Ingredients:
2 quarts apple juice (I made my own in my juicer with some honeycrisp apples cause I’m cool like that)
1/4 cup mulling spices

Directions:
Put your apple juice in a saucepan and add the mulling spices.  Simmer for however long you want (I think I simmered mine for about 30 mins).  Strain the mulling spices from the apple juice.  Drink up!  Seriously, it’s that easy!  And really really delicious!

On to juice-o-mania 2010!  Today’s concoction included a beet, a carrot, ginger, and an apple.  It was SO good!   (the ginger adds a really nice warmth to it!)

I had a looooong day at work today.  Literally, I worked TEN hours!  Whew, I’m pooped!!!

When I finally got home from work I prepped some stuff for breakfast sammies for the week.  These things are AWESOME!  Don’t worry, I’m giving you the recipe.  You’ll definitely want to thank me for this one.

Sarah’s Awesome Vegan Breakfast Sammiches

(Print this recipe!)

Ingredients:
1 package of tofu
a little olive oil or cooking spray
your fav vegan breakfast meat- I like gimme lean sausage style or Yve’s canadian bacon
english muffins
salt and pepper

Directions:
To make your tofu…  Press some of the water out of it, then slice into about 6 slices.  Spray your baking sheet with a little mist of olive oil or cooking spray.  Place your tofu slices in the baking pan.  Spritz the top of them and sprinkle with salt and pepper.

Throw ‘em in the oven on 475F for about 10-15 ish mins per side (watch them closely, that time is an estimate).  When they’re nice and golden brown, they’re done!

Next work on your veggie breakfast meat.  Cook it up according to package directions.

Once your done, assemble your sammich.  Put your veggie meat and tofu on a toasted english muffin ( I like the Ezekial 4:9 kind).  You can also add your favorite vegan cheese to your sammy!  Eat to your hearts content!

 

They are really really good and I swear they keep me full for a good 5 hours!  Nom!

All I can say is that my life is pretty plain…

And it’s okay!  Sometimes I wish I could be more of a jet setter, go to all of the super fun veggie fests and blogger conventions and whatnot.  But then I remember that I’m in school and can’t afford it! ;)  Ah well… some day maybe!  

Right now the most exciting thing going on is that I got a new juicer!!!  I had one that was insanely old and didn’t work all that well.  It died this afternoon and my hubby was like why don’t we go get a new one!  I was like whaaaaa?  (he never wants to spend money, it’s crazy!)  And I was like heck yes!  So off to costco we went- I’ve had my eye on one there for a while.  (I actually would like one of those fancy pants breville’s but I can not affordo one of those!)  But I got a Jack Lalane ultimate juicer and it works GREAT! 

juice!And of course since I was at Costco I just HAD to stock up on my fruits and veggies in massive quantities!

Apple, carrots, and kale!  It was sooooooo good!!!

After we finished playing with the juicer I started dinner.

Portabella fajitas!  And those would be home made tortillas in case you’re wondering!  Very good!

Yup, I’m still up.  It’s 4 am!  I have two projects due tomorrow and also a test and I was nowhere near finishing them so I just decided to stay up and work on all of it!  It has been a looooong couple of days.

Guess what happened last night?

No idea what happened or who did it.  But if I find out who did this I’m going to channel my inner Chuck Norris and give ‘em a swift roundhouse kick to the head!  Justin came home from work and said did you know that your back window is busted out?  I was like whaaaaaa???  Yup.  It was.  Insurance was called, but they didn’t cover it and the cost was below my deductable, so they weren’t really interested in my broken window.

So today I got on the phone calling some auto glass places and found one that would come to my house and replace the window(I couldn’t drive anywhere- the glass was barely hanging on).  Then it started raining.  Hard.  So I got to run out in the freezing cold rain and put trash bags and draped some sheets over the window to try to keep the inside of my car dry.  And the glass place couldn’t come to replace it with the rain.  Boo.

Then the glass guy came by and saved the day!  Around 7 he dropped by and said I’m off work but I live close and I was on my way home so I thought I’d drop by and take care of your window before I headed home for the night.  Yippeee!!!  Thanks so much glass dude- you rock!

So now I have a back window.  And it cost me almost $300.  And someone got off scott free for busting out my window.  That sounds fair, right?

 

Anyhoo….

Projects are all done.  A Chem assignment and a Nutritional Analysis of an elderly woman.  And now I’ve begun studying for my test!

wanna make your own vegan greek yogurt?

Well, you’ve come to the right place my friend!  This is SO incredibly easy to do and the results are seriously delicious!

I used to do this all the time back in the day when I ate dairy because greek yogurt was so expensive.  I thought I’d never eat greek yogurt again, but then I thought why couldn’t I do that with soy yogurt?!  And you CAN!

So here you go- you can thank me later!

Vegan Greek Yogurt

(Print this recipe!)

Ingredients:
your favorite soy yogurt(I prefer Whole Soy & Co)
some cheese cloth or a couple of coffee filters
a strainer (the one you use for your pasta will work just fine!)

Directions:

Put your cheesecloth or coffee filters in the strainer.

Put in your soy yogurt.

Put that into a bigger bowl to catch all the liquid that will be strained out.

Put in the fridge and let it sit for a while.   At least overnight.  The longer it sits, the thicker and better it gets!

That’s all!  Make sure to save the container so that you can put it back in there after you’re done Greek-ifying it.
