Spring has sprung!

At least I think it has- it’s been above 60 for the last few weeks, so I took a chance and packed away all of my heavy sweaters and coats.  I left out a few winter things in case it got a little chilly again because, really, you never know in Texas!  It’s actually a little chilly today, but I think it’s supposed to rain.  Nonetheless we’re still outside enjoying the weather!  We’re hanging out outside on the patio playing on our laptops- I guess we’re tired of being cooped up in the house, haha.

The other day we decided that it has been so incredibly nice outside recently that we need to enjoy it more, so we went shopping for some patio furniture.  First we went to Lowe’s because we still have some gift cards left over from Christmas and we were hoping to be able to use them up.  We were a bit disappointed with their selection though- they didn’t have much, and what they did have was really expensive.  Boo!  So we went to the local Wal- Mart to look and see what they did have.  We actually found several things that we really liked, but we didn’t have much money to spend on these kinds of items (we had been hoping to use gift card money on them), so we had to get the most inexpensive set that we could find.  It actually turned out to be perfect for what we needed!  We found a cute little set and it came with a small table, four chairs, and an umbrella.  It fits perfectly on our little patio and it’s just what we need for now!

One of these days when we get a bigger and better place to live we’ll replace it with something nicer, but for now it’s just perfect!

And we promptly fired up the grill to celebrate the purchase of our new stuff!  It’s the first time we have fired it up since last summer and we’re hoping to wear it out this spring and summer so that we can get a better one!  :)  hehe!

 

On the grill we had some squash, veggie burger for me, turkey burger for the husband, hotdogs (or should I say soy dogs?  I dunno what they’re really called but they sure are good- the husband says they taste exactly like regular hot dogs to him!), some baked chips and burger fixins’ on the side.

I’ve got some pinto beans going in the crockpot for dinner tonight- we’re having cheesy rice and bean burritos- YUM!!!  And plans for the rest of today include laundry, some light cleaning, and playing with the pups!!

I’m not gonna lie- this semester has been HELL!  It’s amazing how one class can throw your life out of whack so much, isn’t it?  But I did get props from my advisor today for getting that class out of the way early in the game- she said most people tend to put it off as long as possible.  It’s not the most dreaded class in the curriculum for nothing, LOL!!!

Met with my advisor this morning to hammer out my schedule for the Summer and Fall semesters.  I think we got it mostly worked out, but I STILL can’t seem to get Anatomy and Physiology to fit into my schedule.  Every single one of the lab time options for that class conflict with every single other class that I have- grr!  I was supposed to take it this semester, but the same darn thing happened!  I’m starting to feel like I’m not meant to take that class- though I have to take it to be able to get into some of the senior level nutrition classes.  Not sure what I’m going to do about this class… maybe it will be OK if I make it top priority in the Spring next year?  This class is starting to become the bane of my existence!

This summer I’m going to take Nutrition for Women and Business Management.  Both online classes so NO DRIVING!!!!  YAY!!  This will save me a LOT of money this summer- so awesome!

Then in the fall I’ll most likely be taking Community Nutrition, Nutrition in the Life Cycle, Food Microbiology, and Bionutrition.  Was supposed to take A&P, but of course can’t seem to get it in my schedule.  All nutrition classes and only ONE lab!!  Pretty exciting stuff!

 

 

Now for something completely different.  My mom sent a few of these home with me yesterday after lunch and I decided to try one today.  It’s like the laughing cow cheese wedges.  I could pronounce all of the ingredients and they are only 30 calories to I decided to give them a whirl.

They were excellent!  I think I may have to purchase some of them.  I ate one with some triscuits, but they would probably be good as a sandwich spread (like instead of mayo), on a wrap, or with some crunchy veggies- mmmmm, crunchy veggies!

 

I’m off to study for a yucky test that I have on Wednesday!  Adios!

eeeeee!  Now that I’m all creeped out thinking about silence of the lambs…

We made lotion in Organic Chem Lab today!  It was kind of fun!!  We heated up some chemicals, stirred like maniacs and voila!  Lotion!!  It was pretty cool to see it all come together.  It was kind of like a salad dressing being emulsified.  Which basically I guess it is just like that!

And we got to take it with us too!  See?

Yay for chemistry fun!!  Last week we mixed chemicals and the end product smelled like fruit, and next week we get to make soap!

Spinach Enchiladas

Spinach Enchiladas
(yields 12 enchiladas)

Ingredients:
1 package frozen chopped spinach (make sure to squeeze all of the liquid out!)
2 cups shredded cheese(whatever kind you like)
1 small onion, chopped
1 Tbsp cilantro
1 large can enchilada sauce (you can make it if you like, it’s pretty much just tomato sauce and spices)
1/2 cup shredded cheese (set aside to sprinkle on top at the end)
* I added some extra veggies to mine- diced zucchini and yellow squash, which I sauteed with the onions.

Directions;
Sautee onions. Add spinach, cilantro, and cheese.

Pour a small amount of enchilada sauce in a 9×13 pan. Pour the rest in an 8×8 pan. Coat the tortillas in enchilada sauce by dipping them in the 8×8 pan.

Scoop spinach and cheese mixture into the dipped tortilla.

Place rolled enchiladas side by side in the 9×13 pan. Pour the rest of the enchilada sauce over the enchiladas

Sprinkle the 1/2 cup of cheese over the top of the enchiladas and bake in a 350 oven for 30-35 mins.
