carb-a-licious!

I could NOT sleep last night.  Gah!  I ended getting up at 6 this morning and zoning out in front of the TV for a while.  Then I got up and made some coffee.

Then I figured I might as well make some breakfast too.  Turkey sausage on whole wheat toast with cheese melted on top.

Then I paid bills and got ready for the day.  I went to hang out and have lunch with my buddy Dana.  And I totally forgot my camera!  I was so mad!  Anyway, we went to a little sandwich shop right in downtown fort worth.  I got a turkey wrap.  It was yum!  After that we went over to starbucks and I picked up an application.  I’m trying to get a part time job.  Since I couldn’t get financial aid for school next year we’re going to be paying it all out of pocket. 🙁  A part time job would help a LOT.  We’ll see what happens.

Then I hit up the Costco and Target on the way home.  Look at all this stuff I snagged at Costco for around $70!

While I was putting away groceries I snacked on some of this dried fruit.

I haven’t been feeling well this afternoon, so I wasn’t up for anything major for dinner tonight, so we busted out the Annie’s Mac and Cheese.  I scored a big ole box that has FIVE boxes of mac and cheese in it for around $5!  Sweet!  I see lots of mac and cheese in our future, lol.  I also sauteed up some asparagus to go with it cause you gotta have some sort of vegetable with your dinner, right?

Well, that was my day in a nutshell!  I gotta get some sleep because I have to get up early to take my car back in to get that brake sensor taken care of.  I SO wanted to sleep in, boo!

Way too many people have died today!  Everyone’s already heard about it, so I won’t discuss, but it’s still really sad.

Today I spent most of my day waiting to get my brakes fixed.  Seriously.  I went in at 10:30 and didn’t get home until 3.  I ended up down the street at Target because I was bored out of my SKULL waiting in the waiting area.  I never thought I would get tired of Target, but when you walk around it 50 times it starts to get a little old.  I had a little lunch at subway (no pics.  I thought I would be home in time for lunch), then went to the starbucks inside Target and read a little while I waited.  Finally they called and I picked up my car.  I have to go back on Saturday because my sensor (the one that lights up the little light on the dashboard telling me that I need my brakes looked at) disentegrated when the guy took it off to fix the brakes.  So he had to order one from MINI (none of the local auto supply places had them) and it won’t be here till then.  Yeesh.

When I finally got home I just crashed on the couch for a little while.  Then chatted on the phone with my awesome friend Dana for a while :).  Then hubby got home so  I started dinner.

Tonight for dinner I marinated some chicken in some italian dressing then threw it on the grill pan.  Served up with a sweet potato and a salad (green leaf lettuce, spinach, baby arugala, and carrots) with some Newman’s Own light honey mustard.  Simple and tasty!

And since I was a slacker with the pictures today I will post a puppy pic!  This is Harley’s way of getting on the furniture without really getting on the furniture.

General Tsao’s Chicken

This is a much lightened up version of General Tsao’s Chicken.  It’s delicious and easy to make!  Warning- it is spicy!  If you want to cut down the heat you can use less of the red chili flakes or leave them out completely.

General Tsao’s Chicken

Ingredients:

3/4 cup chicken broth
1 1/2 T cornstarch (I used arrowroot powder)
2 T sugar (I used organic sucanat)
2 T low sodium soy sauce
1 T white wine vinegar
1/2 t ground ginger
2 t peanut oil (I used canola)
2 medium scallions, chopped
2 medium garlic cloves, minced
1/2 t red pepper flakes
1 pound uncooked boneless skinless chicken breasts, cut into 2 inch pieces
2 cups cooked brown rice

Instructions

In a medium bowl, whisk together broth, cornstarch, sugar, soy sauce, vinegar, and ginger.  Set aside.

Heat oil in wok or large nonstick skillet over medium high heat.  Add scallions, garlic, and pepper and cook 2 minutes.  Add chicken and cook until browned, about 5 mins.

Add reserved sauce and simmer until sauce thickens and chicken is cooked through, about 3 mins.

Serve chicken over rice.  Yields about 1 cup of chicken and sauce and 1/2 cup of rice per serving.

life’s a bowl of cherries

Cherries are my favorite thing right now.  I just got a big ole bag at the grocery store the other day- yum!

When I got up this morning I really wanted french toast, so that’s what we had!

I took a few slices of this awesome whole grain bread that I got at the bakery yesterday and let it soak for a few mins in some eggs+milk+cinnamon.

Then fried it up in a pan.

Topped it with a drizzle of Agave nectar, then served with a little bowl of cherries.  Twas amazing!

Justin and I pretty much sat on the couch most of the day and did nothing.  I read for a while, then I went and took a super hot bath, then I read some more and watched food network.  I swear I’m getting SO increadibly lazy.  I haven’t worked out in like a week.  I need to get back on track with life!

For lunch I made some “oven fried” okra.  I let the okra hang out in some buttermilk for a few minutes, then I tossed it in some cornmeal.  A little salt and pepper, then let them hang out in the oven until toasty and brown.  “fried” okra must be consumed with lots of ketchup!

And now I’m done with my book.  I decided after reading and re-reading Twilight so many times that I should try something new.  I had heard a lot about the Sookie Stackhouse series and a lot of people raving about True Blood so I decided to give it a shot.  I got the first book in the series yesterday and I finished it today (yeah, I read fast).  It was okay, but I’m not really all that impressed.  🙁

I’m not sure if I want to continue the series or not.  The books are cheap, so it’s not like I’m wasting a ton of money.  I’m just wondering if it gets better I guess.  I don’t know.  I might just re-read Harry Potter since the next movie is coming out soon.

Ah well.

Dinner was a fun pasta thing that I just threw together quickly.  Sauteed some squash and zucchini, add some jarred pasta sauce, miz with noodles of choice (whole wheat of course!).  Top with a little cheese, put under broiler.  Easy and really tasty!  I couldn’t even finish all of it.

Served with a salad with honey mustard and some warm bread with BUTTER!

Then we were off to the movies!  We went to see the new Transformers movie at midnight.  It was great!  Everyone really needs to go see this immediately!  It was kinda long though, so I was so tired by the time we got home so I went straight to bed without even thinking about writing a blog.

playing catchup

Today’s my birthday!  I’m not telling how old I am, but let’s just say I’m getting close to 30. (yikes!)  Since it’s also father’s day, I’m not really doing anything for my bday.  The hubby and I already celebrated so I’m good to go.  Birthdays aren’t really that big of a deal for me, so I’m not really into celebrating that much.  Probably mostly because no one ever remembers my birthday (except for my family).  It’s always like that when your birthday falls during the summer.  I love sharing my bday with the summer solstice, but no one ever remembers my bday.  I think I also share a birthday with Nicole Kidman and Prince William (swoon).

Playing catchup on yesterday.  Yesterday I woke up kinda late so I had a quick breakfast before heading out for some grocery shopping.

Fage greek yogurt with a drizzle of agave nectar, a handful of blueberries, and a handful of quaker oat squares.  Yum!

Then it was off to the market I went!  Look at all this stuff I got for $45!!

And I picked up these funny looking little squash.   I think they’re called Chayote?  I have no idea what I’m going to do with them yet.  Any suggestions?

I didn’t really eat lunch, I just snacked.  I had a little cheese and maybe a cupcake from yesterday.

I think I had a banana too.  I wasn’t really keeping track.

Then I cleaned the house a little, started some laundry, then settled in on the couch with a book until hubby got home.

Last night was pizza night!

On a (home meade)whole wheat crust I put…

  • pasta sauce
  • spinach
  • onions
  • bell pepper
  • mushrooms
  • mozzarella cheese

Then I made a little salad with cucumbers and strawberry tomatoes with a little drizzle of italian dressing.  It was soo good- those tomatoes were so sweet and tasty!

Now that I’m caught up from yesterday, here’s what was a scramblin in my skillet this morning…

  • eggs
  • turkey sausage
  • a few really small red potatoes
  • a sprinkle of aged Wisconsin cheddar

WOW!  SO good, but I could only eat half, so Justin had the rest of mine.
