Today was work work work.  I feel like I haven’t slept a wink this week!  After work I hit the gym.  I decided to rejoin the gym.  I cannot work out at home!  I’ve tried and failed several times.  There’s just something about the gym.  I love the classes, mostly kickboxing.  Today I jumped on the elliptical with the newest copy of VegNews! 

Then I hit up the Costco for some fresh fruit and veg for next week.  Got em all prepped and ready to munch!

Cherry chocolate chip granola bars!  They’re still cooling off, so I don’t know how they taste yet.  We’ll see tomorrow.  If they turn out good I’ll share the recipe!

Merry Christmas to me!

Lookie what I got!!!!!  (My old camera is so awful- it just doesn’t do it justice!)  This was my Christmas present :)   It’s a Canon Rebel T1i.  I’ve been researching for a while and this model fit the bill with what I need and I’ve always loved Canons, so after lots of scrimping and saving here it is!

Of course I had to take some pictures to test it out!  But being January and dark and cold outside there’s not really anything pretty to take pictures of.  So I took a few Harley pics!  She’s so pretty!!!

I had already eaten dinner so I decided to make some desert!

Banana “Ice Cream”

So easy.  Freeze a couple of bananas.  Put them in the food processor.  Process for a few minutes till it reaches the consistency of ice cream.  You may have to add a little almond milk to thin it out a bit.

That’s it.  Easy peasy!  I sprinkled it with a little cinnamon before serving.

Eh mon!

We’re back from our cruise to Jamaica, settled in, and school has started back.  I didn’t really get any recovery time in between so I’m exhausted!

The cruise was fairly disastrous, but we had fun anyway.  Justin got a stomach virus the second day and was quarantined to the cabin by the medical center, so we had to cancel our excursion in Jamaica.  So when he was allowed off the ship we decided to just walk around town.  Bad idea.  The beaches in Jamaica are really pretty, but the town area is really gross.  It was still pretty interesting with some neat historical sites, though.

The weather in the Cayman Islands was so bad that they closed the port.  So we didn’t get to get off the boat in Grand Cayman.  🙁

 

The weather in Cozumel was bad too, but we were able to get off the boat.  It was raining and so cold!  We were supposed to go parasailing, but it was canceled because of the weather so we ended up renting a Jeep and driving around the Island.  It turned out to be really fun!  We love Cozumel, it’s so clean and friendly, and the beaches are amazingly gorgeous!  Good margaritas too!  Hehe.

Great to get out of town.  Beautiful beaches.  Next vacay is going to be more vegan friendly though, I ate gardenburgers and salads from the salad bar for 7 days straight.  That was all they offered that was veg friendly (can you believe it?!).

Chick-un soup for the vegan soul

No chicken was hurt in the making of this soup!

 

Chick- un noodle soup

(Print this recipe!)

Ingredients:
2 carrots, diced
3-4 celery stalks, diced
1 small onion, chopped
Olive oil
3 not-chick’n bullion cubes + 6 cups hot water (or 6 cups veggie broth)
2 cups cooked pasta of your choice (I used whole wheat spaghetti)
salt and pepper to taste

Directions:
Drizzle a little olive oil in a stockpot and heat over medium heat.  Add the onion, celery, and carrots and sauté until tender.  Add the bullion cubes and hot water and simmer for about 10-15 minutes.  Add the pasta and serve.  I added some sautéed gardein chick’n scallopini at the end when I put the soup into the bowls.

Simple, but delicious!
