Mad scientist…

I spent yesterday afternoon and this afternoon as well in the kitchen channeling my inter mad scientist and baking up a storm!!

First I made these yummy peanut butter chocolate bars from my newly purchased cookbook, The Joy of Vegan Baking.

They are YUM, but I think I’m going to do a little bit of tweaking to the recipe, mad scientist style!

Then it was cupcake time!!

I’ve looked through lots of cupcake recipes and I decided that I should just come up with my own little version!   Then on to some buttercream.  I kind of combined/tweaked two different recipes and came up with something pretty delicious!  I think I want to do a tiny bit more tweaking to it.

Here’s my afternoon creation…

I need some practice with piping the icing, but other than that they look fab!  I haven’t gotten to try one yet- I’m waiting until after dinner, but I can’t wait!

Yup, I’ve got some MAD baking skillz!!!  Oh and I’ve got a ton of cupcakes in my fridge now, anyone want some?

Who needs Chick-fil-a?

Who needs Chick-fil-a when you can make your own cruelty-free version at home and NO animals have to die for you to have it!!

Just take one of the Boca Chickn patties and get it all nice and toasty in the oven and put it on your bun with a little pickle and I also added a little vegenaise because it’s been hanging out in my fridge and I’ve been meaning to try it!

side note: the vegenaise rocks by the way!  Tastes way better than mayonnaise!!!
There are a couple of different kinds, but here’s what I have:

So anyway, I threw my toasty chickn patty on a bun with my pickle, vegenaise, and a splash of Frank’s red hot and served it up with a side of oven fries.

Another side note: I double checked the ingredients on the boca chickn patties and I didn’t see any egg or dairy ingredients, but please let me know if I’m wrong on that!

Playin’ with pee

That sounds so gross doesn’t it?  LOL!  Well, it kind of is.  This is what we did in chem lab this morning.  Played with pee.  More specifically, we did some urinalysis tests.  We were testing for pH levels, glucose, proteins, ketone bodies, and a few other things that I don’t really remember, haha.  It was sort of interesting, but not really as interesting as it could have been.

Oh, and the pee was ours!  I think it was synthetic.  At least I hope it was!

Not really much going on around here lately.  Just trying to make my brain stay alive enough to finish out the semester- I totally have spring fever!  ALL I want to do lately is sit out on the patio and drink coffee and play with my little plant garden.  When the heck did I turn into an 80 year old woman?!

One more week then two days of finals then SUMMER BREAK!!!  My brain was done some time last month though, so the next week and a half are going to be pure torture!

Speaking of torture, I’m working on an insanely fun summer project for myself and I. Can’t. Wait.  But I have to keep it a secret for a little longer and it’s torturing me!!!!  I hate keeping secrets- I’m awful at it!  Bah!  It’s gonna be fun though and I am so excited to announce it, but I have to get my veggies in a row first before I can say anything!

Speaking of fun news (don’t you LOVE all of the smooth transitions today?!) I have something I can actually tell!  I’m going to get to be a contributing health editor for foodbuzz!!  Their health section is being launched tomorrow and I’ve already been getting some of my past posts tagged and ready to be used!  It’s not a super big thing, but it’ll be fun and I’ll get to put it on my resume and it will look great on my internship application!  Plus maybe I’ll be able to get a little more traffic to my silly little blog!

Happy Mother’s Day!

Ahhh, I love it when I get 8 full hours of sleep!!  LOVE it!  I always feel so refreshed.

I felt like making something for breakfast this morning and hubby requested waffles, so waffles it was!  I used some organic pancake mix that I picked up at whole foods and just followed the directions for waffles.  They were fantastic!  Super fluffy and way delicious.  I put a tablespoon of real maple syrup (is there anything else?!) and some strawberries on mine.

I found it!

I found my camera dock!!  Now the problem is that the dog chewed up the cable that connects the dock to the battery, so now I can’t charge my camera!!!  Gah, it’s just one thing after the other!


I guess I’ll just keep taking pictures until my battery dies and that will be that.  The husband doesn’t care at all.  So I don’t know what I’m going to do.


Today when I got up I didn’t have a whole lot of time for breakfast, so I made a quick piece of toast with almond butter and a cup of coffee.

After that I hit the gym!  Today was leg day with my trainer and I definitely was working up a sweat!  After I left the gym I hit up the smoothie king and grabbed a smoothie to tide me over until I got home  from grocery shopping.  I added a protein boost to my smoothie since I just got done working out.  I got the passion passport smoothie(skinny of course!).  I don’t remember what it exactly had in it but it was mighty tasty!

Then I ran to the grocery store to get some stuff for tomorrow.  I’m making lunch for the fam for mother’s day.


When I got home I had some leftovers from the other night- some whole wheat noodles with sauteed veggies and organic pasta sauce. yum!

And I had a fruit leather too.  These things are so yummy and only 49 calories!!  What a great little sweet treat without breaking the calorie bank!

Then I chopped and prepped some veggies and fruit for the week and cleaned up my mess.  Then the dog ate my charget cable and I got mad at her so I decided that it was nap time for her.  Luckily any time you put her in her kennel she thinks its nap time so she konked right out.


Dinner tonight was a caesar salad with some seared shrimp on top.

In my caesar salad

  • mixed greens
  • Ken’s light Caesar dressing
  • 2 tsp grated parm cheese
  • a few croutons
  • shrimp seared with salt and pepper

it was waaay tasty and really filling!


And now I’m going to kick back with my honey for a bit before he leaves.  He’s going to Star Trek with a buddy and I was lucky enough to not have to go.  Although I had to promise to watch it with him when it comes out on video.  Oh well.
