I’m not going to lie- the recipe I was hoping to have for this week’s Meatless Monday was a total fail. It needs some major tweaks, but hopefully I’ll have it for next week!

I’m a bit of a cookbook hoarder. When I went veg I actually got rid of quite a few of them that I knew I would never use again. But I still have a lot. Some are not vegetarian, but are fairly veg friendly or easy to make the recipes veg with a few simple substitutions.
But let’s talk about my favorite vegetarian cookbooks! I get asked that question a lot- besides “where do you get your protein?!”, this is the most asked question I get… “what are some good vegetarian cookbooks?”
I am SUPER picky about my cookbooks. They have to include a simple ingredient list. I prefer cookbooks with pictures, but I’ll make exceptions for this if it’s gotten really great reviews. They also have to have ingredients that are accessible to me and easy to find- NO obscure items that I would have to order online!
Here are a few of my faves that have passed the test!

I use this one time and time again- it has never failed me! It’s worth buying just for the apple cake and cinnamon roll recipes alone. To. Die. For.
This one is fantastic, but honestly I prefer my own cupcake and buttercream recipes. I do always come back to this book for inspiration and ideas though!
My absolute favorite overall veg cookbooks…
Want a cookbook that’s PACKED with nutrition and some seriously delicious and simple recipes?? These are the cookbooks for you! I can’t say enough about both of them. They’re both based on the findings of Dr. T. Collin Campbell and Dr. Caldwell Esselstyn’s research and the book “The China Study”. (Also, I really encourage you to see Forks Over Knives- it’s available on Netflix!) P.S. don’t be fooled by the word “diet” on the engine 2 cookbook. It’s not a “diet”. I promise.
I have made many many recipes from this book (including a holiday meal!) and it has never lead me wrong! LOVE it, and love the author!
This one is my newest obsession! I have a major crush on Mama Pea and I just love this book. This book is SO perfect for vegetarians and meat eaters alike. It’s great for someone that’s just wanting to add a few more vegetarian meals to their arsenal! I’ve tried several recipes from this cookbook and haven’t been disappointed yet!

Even though I’m not vegan, I am a hoarder of vegan cookbooks. (Well, as much of a hoarder as I’ll allow myself to be!) It seems like the only cookbooks I buy are vegan or vegetarian ones!
I’m curious about you opnion on Eat, Drink & Be Vegan. I have Vive Le Vegan, and I’m not a huge fan. I feel like every recipe has a ton of ingredients, and many of them aren’t things I keep around. I’ve actually only made one or two recipes from that one.
As for my favorite meatless meal…currently it’s the margherita portobello burgers I got out of one of the Weight Watchers weeklies. I did make a mean Cheeseburger-less Macaroni, a spin off of the Hamburger Helper Cheeseburger Macaroni, this week though it wasn’t technically meatless since I did use beef broth…
honestly I’m not a huge fan. Though the super-charge me cookies are pretty amazing. The recipes in this one have a ton of ingredients as well and I don’t use the cookbook very often.
I want! I could definitely use some inspiration so I don’t end up eating black bean wraps every day (not that I’d mind, they are super yummy).
And of course I tweeted for the whole world to know.
My favorite meatless meal is the Ravioli di Portobello at Olive Garden. It’s the only meatless meal I consistently order when dining out.

These books look fab!! I’ve been wanting the vegan cupcake book ever since I went to DC a few weeks ago and visited Sticky Fingers Vegan Bakery and bought many, many cupcakes. Hmmm, my favorite meatless meal…..I don’t even know yet–I’ve only been a vegetarian for about a month now and I’m still learning. I’m hoping the veggie curry I’m cooking in my crockpot right now will be good. It sure smells so! 🙂

Okay so this is super timely. Because, I’ve been looking for a vegetarian cookbook that actually has recipes that I WILL eat. I’m looking for recipes that would commonly have meat, but have an easy swap with beans, lentils or something of the sort to make it vegetarian.
As you know I don’t eat tofu, and I find a lot of vegetarian cookbooks suggest tofu as a main source of protein for most of the recipes. Also, while most cookbooks I find have delicious recipes, they aren’t really recipes that Matt would salivate over. That’s why I’m looking for something that is like classic meat dishes, with a vegetarian twist. Don’t try to rock the cradle too much, you know?
I took another look at Barnes and Noble this past week but didn’t find anything I liked. Do you have any suggestions?

My favorite meatless meals and recipes are usually salads of some sort or another. I frequently make bean salads, both cold and warm with a variety of other vegetables in them and sometimes some grains. The best dressings are usually Asian inspired with toasted sesame oil and sometimes ginger.
Gosh I love bean and grain salads- there’s a warm lentil salad recipe in The Vegan Table that’s to die for!

My favorite meatless meal!? So hard. I’d say anything that involves a wrap and tofu (tofu tacos, etc.) so I’m REALLY pumped to have found your recipe for Baked Buffalo Tofu Wraps, because I also LOVE buffalo sauce. I’m jealous of meat-eaters just because I want all that delicious buffalo sauce! (I kid!)

I’m a huge fan of tofu stir fry. I used to eat stir fry with chicken, but once I started eating it with tofu, I slowly liked it more and more, and now I definitely prefer tofu to chicken!

My favorite veggie dish is this sesame pasta dish – the recipe came from the security guard at a hospital I used to work at. I make it with and without chicken. When I make it without chicken I add soy beans. mmmmm. lots of veggies and lots of flavor.

What a great giveaway! I think my current favorite is the roasted veggie tacos I just posted about with mole and avocado. They were so good! But an old standby is Mark Bittman’s Cauliflower mac&cheese. If you can find one of the bright orange cauliflower you can even recreate the Kraft mac&cheese vibe from childhood 🙂

I LOVE doing stir fry! I just made some last night, with onion, broccoli, celery, eggplant, and green beans with tofu and spicy soy-peanut sauce. Last night I served it over spaghetti squash and for lunch I had it a with a bit of brown rice. 🙂

I go to this restaurant called India that serves – you guessed it – Indian food. And they have the greatest mixed grill vegetable platter. It comes with paneer but I always substitute chickpeas. It’s simple, but the spices make it AMAZING.

My favorite meatless meal right now would have to be anything mexican food related! I am a sucker for refried beans! I love bean enchiladas, bean tostadas, and taco salads all with lots of avocado!
My favorite meatless meal is a veggie burger with spicy jack soy cheese, served with baked sweet potato fries. Not at all fancy, but that’s my go-to comfort food 🙂
