OMG you guys I just realized I haven’t posted in over a week!! There’s been SO much going on with school that that’s pretty much all I have time for these days with all the tests, quizzes, research papers, and group projects I’ve got going on right now. It’s been crazy busy over here!
I actually had a Meatless Monday recipe that I wanted to share, but I lost the piece of paper that I wrote the recipe on! It was a pretty amazing chana masala recipe too! I hope I find it because I really want to share it!
So instead how about a what’s for dinner post?
Tonight I made the Migas Especiales from the Engine 2 book. And ZOMG it was a-mazing!
It was a tofu scramble and it also had onions, tomatoes, mushrooms, tortillas and I topped it with a little Daiya pepperjack! NOM!
Served with a side of mixed fruit and a couple of corn tortillas for scooping! So. Good.
Oh and P.S. the Rangers won tonight! BEST. GAME. EVER!!!!

I want this cookbook I think. Maybe I’ll see if the library has it so I can check it out first!
Half of the book is about a plant-based diet and the study he did at his firehouse and the effects of the diet on their cholesterol and weight. It’s pretty interesting! The other half is recipes- there’s some tofu recipes in it, but mostly it’s beans, grains, veggies, etc. And the portions are HUGE which is awesome!! I’d let you borrow it, but I have 3 recipes I’m making from it this week. Some of the recipes from the book are on the Engine 2 website though!
I ordered it from the library! no worries.
That was such a good end to the game last night! I mean, it really should have ended the first time the bases were loaded with no outs… but it was kind of worth it for such a good hit to end it. I still can’t believe the playoffs are all Central teams.
I always forget the Rangers are in the West.. probably because they’re smack in the middle of the Country.
