my almost new car!

Yayayay!  I got my car back today!  I got a brand new front end (that’s what she said).  New hood, new stripes, new grill, new bumper.  I had to pay the deductable, which sucks, but look at the beautifulness…

back to earlier today.  I had the most AWESOME lunch!  I took two whole wheat tortillas, black beans, pepperjack cheese, peppers and onions and made a quesadilla.  Oh wow, it was sooooo good!  Everyone should try this!

I topped it with some salsa and a few slices of avocado.

Then it was on to work.  Same ole same ole…11 days!

After I got home from school I made a snack- the last bits of my chocolate chip cookie dough PB on a slice of WW bread.

After I picked up my car, I ran to whole foods (it was right down the street) and got some salad fixings that we needed.  I also grabbed something to drink- love this!

And a fruit leather- grape!  This stuff is like candy to me (since I don’t eat candy, LOL).  I want to learn how to make this stuff!!

Then I cruised around a bit (I missed my car!  It was at the shop for a week and a half).  Then I cruised on home to make some dinner.  We had some Amy’s veggie burgers on whole wheat buns and oven fries.

Well, I guess that about sums up my day.  I’ve got a fun field trip planned for Saturday.  I’m not gonna lie- I’m pretty stoked about it!

Mix Master

of cereal that is!  I couldn’t decide what kind of cereal I wanted for breakfast this morning, so I had a bit of all of them!

In my bowl this morning…

  • 1/4 cup pumpkin raisin crunch
  • 1/4 cup heritage oats
  • 1/2 cup PB puffins
  • splash of skim milk

And there may have been a lovely cup of spring blend in there as well that escaped the eye of the camera.  I’m so glad I decided to order that, it’s amazing!  The only thing is that I wish it came in whole bean form, then I could make it in my coffee press.  I think the grind is too fine- I don’t think it would work.  I may try it anyway and see what happens, you never know!

So I read a lot of blogs.  Mostly food blogs.  I like to get new ideas and see peoples perspectives on different things.  And let me preface this by saying that it’s their blogs and they can do whatever they want with them.  But I swear if I read the words breaky or din din again I’m gonna scream!  LOL.

Another thing that is funny about people (and I’ve heard a lot of people say this kind of thing), but when people don’t like something they say that they “don’t believe in it”.  What’s that all about?  You don’t believe that it exists?  What do you mean you don’t believe in it?  Isn’t that like declaring that you don’t believe in God?  Most people that say that don’t believe in the existence of God, right?  Like I read someone saying “I don’t believe in protein powder” this morning.  Huh?

Anyway, my pictures may be a bit sparse this week.  I ordered a new cable for my camera but it won’t be in until June 1.  I knew I shouldn’t have chosen the free shipping!  But that’s okay because I’m the only one that reads this right? lol

Crispy Chicken Fingers

This recipe is from Ellie Krieger.  I love her show and her cookbook!  These are soooo tasty and seriously taste fried!

Ingredients

  • 1 1/4 pound boneless, skinless chicken breasts, cut across into 1/2-inch pieces
  • 1/2 cup lowfat buttermilk
  • Cooking spray
  • 4 cups whole-grain corn cereal (recommended: Corn Chex or cornflakes)
  • 1/4 teaspoon salt
  • Freshly ground pepper
  • Dash of Cayenne pepper (I added this- it’s not in the original recipe)

Directions

Preheat oven to 400 degrees F. Combine the chicken and buttermilk in a shallow dish. Cover and chill for 15 minutes.

Spray a baking sheet with cooking spray. Put the cereal in a sealed plastic bag and crush with a rolling pin. Transfer the crumbs to a shallow dish. Season the chicken with the salt and a few grinds of pepper. Dip each piece of chicken in the cereal to fully coat and arrange on the baking sheet. Bake until cooked through, about 8 minutes(mine took waaay more than 8 minutes.  I had to bake mine for around 20 mins). Leave the chicken on the baking sheet to cool slightly. It will become crispier.

back to school…

My week and a half of awesome-ness is over and I had to go back to work today.  If anyone doesn’t know, we had around 11 confirmed cases of swine flu at my school so they shut us down!  And we don’t have to make up the days.

I really really didn’t want to go back, but guess what?  There are only 13 days left of school!!!

When I woke up this morning I was craving oatmeal, so I had some.

  • 1/3 cup oats
  • 1/2 banana
  • 1/2 cup almond milk
  • 1 T barney butter
  • 1 T dried cranberries/pomegranates

Oh yeah, and a cup of spring blend coffee!

Then it was off to work.  Today passed without incident.  It’s musical time (every spring I show the kids a musical.  I usually save it for the last few weeks of school.)  They are watching Annie and they really seem to be enjoying it- no behavior problems at all.

I was starving by lunch so I had a yummy salad.

  • lettuce/spinach
  • light greek vinaigrette (my FAV!)
  • 3/4 ounce blue cheese (I picked up an awesome Danish Blue for less that $3 at Whole Foods the other day!)
  • 2 chicken strips leftover from yesterday’s lunch (recipe coming soon!)

So good!

I just got home and I was hungry (when am I not?!) so I grabbed a Chobani and had a snack.

Happy Mother’s Day!

Ahhh, I love it when I get 8 full hours of sleep!!  LOVE it!  I always feel so refreshed.

I felt like making something for breakfast this morning and hubby requested waffles, so waffles it was!  I used some organic pancake mix that I picked up at whole foods and just followed the directions for waffles.  They were fantastic!  Super fluffy and way delicious.  I put a tablespoon of real maple syrup (is there anything else?!) and some strawberries on mine.
