Holy moly, these last couple of days have been so busy! I haven’t had time to post at all! Instead of catching up I’m just going to start fresh with today. BUT before I do that, I have to talk about chile fest day uno!
So after I spent about an hour peeling, de-gutting, and storing about 5 pounds of roasted hatch chiles I was ready to try to cook with some of them!
I have a Hatch chile cookbook, but I kidna decided to branch out on my own this first time.
So I took some lean ground turkey, cooked it up and let it cool off just a tad. Then I stirred in some big spoonfuls of salsa and a big handful of red. fat cheese. Then I stuffed it in the chiles. Then sprinkled a little more cheese on top and put it in the oven till the cheese was all melty and yum.
The result…
So simple and SO delicious!! If you don’t have access to the Hatch chiles, you could do this with a pablano pepper(they’re very mild). Try this, it’s awesome!!!
So that brings me back to today!
This morning I whipped up some AWESOME french toast. My best so far! Then we topped our frenchy toast with strawberries, blueberries, and a drizzle of agave nectar. SO.GOOD.
You should try this too. It’s so easy to make french toast in a healthy way!
Then lunch is the best turkey sandwich I’ve possibly ever had! (I must be channeling my inner Julia Child lately, since I’ve been reading My Life In France, lol)

Not sure what’s on the agenda for the rest of the day, but I know it will involve lots of my allergy eye drops! My eye allergies have gone haywire. There was something in the air last night at my cousin’s wedding (which was super cool, btw- they had a mashed potato bar! It was set up like a sundae bar, really cool!). Anyway there was something I was allergic to (besides the aggies, lol- the wedding was in College Station) My eyes are so puffy and killing me, bah!
Anyhoo! I’m thinking we may do pizza for dinner tonight. It may involve some more of our Hatch Chiles!!
