Looking up

Well things are looking up around here.  The AC is working again.  And it’s just my battery that is wrong with my car.  I was thinking it was the alternator.  I got in a workout- 30 mins on the treadmill.  But it was 30 mins on the treadmill in a house with no AC.  Genius.  I was pretty pooped after that that I turned the fan on high and laid on the couch and read with a big glass of water until  I cooled off  a bit.  Then I was able to get a few things done, but nothing that I had to work too hard to do because it was so hot.  I swept and mopped the kitchen, did a load of dishes, vacuumed and tidied up the living room and that’s about it.

Since I wasn’t able to get out of the house to go grocery shopping I had to scrounge a bit for dinner tonight.  We had some leftover chips and cheese from the taco soup earlier in the week.  There was also a bit of ground turkey in the freezer.  And there are always black beans in the pantry(I buy them in bulk at Costco, lol).  So we had NACHOS!

I just layed them out on a sheet pan and layered everything on.  Then I threw them in the oven and let the cheese get all melty and delish!

See?

I had mine with jalapenos, guacamole(I had some 100 cal packs of wholly guacamole in the fridge), salsa, and the last dollop of greek yogurt from the container.

Yum.

Well, I guess that wraps up today.  It was kinda sucky and I’m pretty cranky so I’m going to call it an early night.

Night!

well, today just plain ole sucks

Before I get into that, though, I need to post last nights dinner.  I totally forgot to do it last night.

So I made some crockpot lasagna for dinner.  While I worked I snacked on some popcorn!

Oh how I love crockpot lasagna.  It’s one of my favorite things to make.

Look at this deliciousness!

And just look at this fab salad.  Isn’t it gorgeous?

Strawberries, goat cheese, toasted almonds, and light raspberry vinaigrette.  Y.U.M.

Now back to today.

So I get up and get ready to go to the gym.  I have a whole wheat blueberry muffin before my workout. (mmmmmm!)

IMG_1093

Then I head out to the gym.  I stop to get gas because I don’t have enough to get to the gym.  Then I realize that I forgot my wallet, so I have to turn around and go home and get it, which means I’m going to be late.  Then when I get home, grab my wallet and run back to the car it won’t start!

I don’t know what in the world is wrong with it, but it just clicks when I try to start it. 🙁

So I had to call my trainer and cancel.  Now I’m stuck at the house all day.  And to make the day even more sucky, the AC is frozen up.  So I’m stuck here with no AC.  awesome.

I just finished the lunch that I had packed to snack on between running errands.  A PB&J (almond butter with strawberry preserves) and an apple.

I guess I’ll just be working on the house for the rest of the day.  Well, as much as I can when it’s so hot!  I sure hope this day gets better!!

a trip to the vet

My poor pup!  I have no idea what she did to her paw, but the skin on the pad of her paw ripped off part of the way.  She was fine when we picked her up after vacation, but then the next day she was hopping around and wouldn’t put any weight on her paw.  So I called the vet but they were booked up until today.  So for the last two days she’s had to hop around on three legs.  Poor baby.  So one vet visit and $300 later (yikes!) here we are with some pain killers and bandages.  We have to keep her paw wrapped up and give her some meds for the pain and to prevent infection.

She’s not a happy camper- she hates going to the vet.

IMG_1075

When we got home from the vet I was sooo hungry.  Anabelle took a nap because her pain killers were kicking in and I made some lunch.

Leftover taco soup with a couple of tortilla chips crumbled up on top, pepperjack cheese, and a dollop of greek yogurt.  Yum!

IMG_1078 IMG_1079

Taco soup is so easy to make and the leftovers are even better!

Then it was on to the eye drs to get my glasses adjusted then back home to check on the girls.  Anabelle is still drugged out (lol), and Harley can’t figure out what the bandages on Anabelle’s paw are so she keeps looking at them and howling.  Nonstop.

I’m about to start working on dinner- crockpot lasagna!!  Can’t wait!

Adios!

Cruisin’ to Cozumel!

The second part of our vacation was a 4 day cruise to Cozumel.  I don’t really have a running commentary on this part of the trip- just lots of random pictures.

The Lego version of our ship.

Mimosas and relaxing by the pool.  Relaxation was the theme for the trip- lots of chilling by the pool and reading!

This dude carved this ice sculpture in 20 mins flat!  It was pretty awesome to watch the big hunk of ice actually become art!

Cozumel.  We pretty much spent the whole day on the beach relaxing and swimming.  It was pretty fab.  We did a wee bit of shopping when we got tired of the beach.

Paradise beach!  If you go to Cozumel I recommend it.  It was free!

This little guy was just chilling at the beach.  Pretty, huh?  He just looked at us like “what’s up, guys?”

Can’t go to Mexico without having a coke!  Seriously, so much better than our cokes here (real sugar, not HFCS!)

And what’s a cruise without towel art?!

IMG_0963

We couldn’t really tell what this one was- a monkey of some sort?

IMG_1001

He wanted some candy, so we said okay.  As long as you don’t spoil your dinner!

IMG_1003

Justin wanted to snuggle with him too.

I even got a book on how to make them and tried my hand at it.  It’s supposed to be a pig- what do you think?  Should I make a career out of it?

And when we got home the pups were REALLY glad to see us!  Anabelle was spinning in circles as soon as she spotted me (which she does a. when she’s excited and b. when she has to pee.  LOL).  And the Harley Monster was the Harley Monster.  I don’t think she recognized us at first because she barked at us.  She didn’t sit still the whole way home!

IMG_1060

Well, that ends our great adventure!  It’s back to normal life now.  And I have a week and a half until school starts!!  I’m way excited!!

New Orleans

Well, we’re back!!  We’ve actually been back for a day already, but yesterday was rest/catch up day.  We picked up the puppies and unpacked and whatnot.

The first part of our vacay was to New Orleans!  We flew down the day before our cruise to hang out there a bit.  I had only been there once, but it was when I was really little so I don’t really remember much.  Justin had never been at all!  We had soooo much fun, I’m ready to go back already!  We were only there a day and a half, so we didn’t get to do everything we wanted to.  We did get to do and eat lots!  There is some amazing food in N.O.!!!  And I don’t think I had a single healthy thing while I was there, lol.  We don’t really get to go on trips very often so when we do we kinda pig out a bit.  I wasn’t about to let some of this awesome food slip by me just because it wasn’t very good for me.

So we landed around 11-ish and hopped in a shuttle to our hotel (Dauphine Orleans Hotel).  We got all checked in (they were so nice and let us check in really early- check in wasn’t supposed to be until 3).  This. place. was. awesome!!!  I highly highly recommend this hotel!  It’s a fun little boutique hotel and it’s right in the french quarter (about a block from bourbon street).  The people were so nice and the bed was sooooooo soft!  (I’m not joking- most comfortable bed I’ve ever slept in in my life).  The rooms were very nice as well- it still had the feeling of the old building that it was (1812 I think was when it was built), but it was very modern as well.

Pictures…

Then it was on to find some lunch and do some exploring.  We tried to offset some of the major amounts of calories we knew we were about to consume with lots and lots of walking.  We walked miles just exploring the area.  The buildings were awesome to look at.  And the feel of the place was very exciting!

For lunch we sought out the place that is famous for the invention of the Mufaletta sandwich.  Or so they say, lol.  It was in this tiny little market.  The place was neat, but the sandwich was the star of the show!  OMG so good!!  We split a half sandwich and it was plenty(they’re really big).  And some chipses.

IMG_0886 IMG_0887 IMG_0889  IMG_0888 IMG_0890

Then there was lots more walking while we digested.  We went over to Jackson square and looked around.  It was really pretty and very peaceful despite the bustle of the busy area that surrounds it.

Jackson square…

Then it was BEIGNET time!!!!  I have been waiting for this part since we decided to go to N.O.!  I was NOT disappointed!  I dream about these things now and I want to go back just for these!  I’ll let the pictures speak for themselves…

IMG_0885 IMG_0912 IMG_0913 IMG_0915 IMG_0916 IMG_0914

I even got some coffee to take home with me!  I had some this morning- it’s fab!  I love the little bite that the chicory gives it!

IMG_0936

Peace, love & beignets!

IMG_0935 IMG_0933

Lots more walking and some random pictures…

IMG_0883 IMG_0884 IMG_0902 IMG_0903 IMG_0904 IMG_0906 IMG_0907 IMG_0908 IMG_0909 IMG_0910

Then back to the hotel to get ready for dinner.  We decided to go to the ACME oyster house.  It was too hard to decide where to go because there are so many places that are supposed to be amazing, so we just picked a place at random.

IMG_0917 IMG_0922

We were so sleepy!!

IMG_0924 IMG_0927

Caffeine!

Oyster Poboy!  (so good!)

IMG_0929

Then we took a little walk down Bourbon Street before heading back to the hotel.  It was an early night but it was such a long day that we were pooped!

IMG_0920 IMG_0930

The next day we did a little more walking, went to the Louisiana State Museum, had some lunch, then it was cruise time!!

Yarrrrr!!

Jambalaya from a random cafe.  Very good!!

Well, that’s our N.O. trip!  Tomorrow I’ll post pictures from our cruise to Cozumel!!
