Busy Bee

Holy moly, these last couple of days have been so busy!  I haven’t had time to post at all!  Instead of catching up I’m just going to start fresh with today.  BUT before I do that, I have to talk about chile fest day uno!

So after I spent about an hour peeling, de-gutting, and storing about 5 pounds of roasted hatch chiles I was ready to try to cook with some of them!

I have a Hatch chile cookbook, but I kidna decided to branch out on my own this first time.

So I took some lean ground turkey, cooked it up and let it cool off just a tad.  Then I stirred in some big spoonfuls of salsa and a big handful of red. fat cheese.  Then I stuffed it in the chiles.  Then sprinkled a little more cheese on top and put it in the oven till the cheese was all melty and yum.

So simple and SO delicious!!  If you don’t have access to the Hatch chiles, you could do this with a pablano pepper(they’re very mild).  Try this, it’s awesome!!!

 

So that brings me back to today!

This morning I whipped up some AWESOME french toast.  My best so far!  Then we topped our frenchy toast with strawberries, blueberries, and a drizzle of agave nectar.  SO.GOOD.

You should try this too.  It’s so easy to make french toast in a healthy way!

Then lunch is the best turkey sandwich I’ve possibly ever had! (I must be channeling my inner Julia Child lately, since I’ve been reading My Life In France, lol)

Not sure what’s on the agenda for the rest of the day, but I know it will involve lots of my allergy eye drops!  My eye allergies have gone haywire.  There was something in the air last night at my cousin’s wedding (which was super cool, btw- they had a mashed potato bar!  It was set up like a sundae bar, really cool!).  Anyway there was something I was allergic to (besides the aggies, lol- the wedding was in College Station)  My eyes are so puffy and killing me, bah!

Anyhoo!  I’m thinking we may do pizza for dinner tonight.  It may involve some more of our Hatch Chiles!!

Hatch Chile time!

It’s that time of year again!  The Hatch Chile’s have arrived from New Mexico and it’s a pretty big deal (at least in our house, lol).  It only happens once a year (they’re harvested in late July), so we have to stock up whilst we can.

So we got some roasted Hatches.

I’m going to go back this weekend and get more chiles to stockpile in my freezer because there are TONS of recipes in there that I HAVE to try!

We also went SHOE SHOPPING!  Hubby was desperately in need of some new shoes for work, his were starting to look pretty ragged.  And I snagged a pretty cute pair of boots!  Slouchy and comfy and way cute!

And a trip to Borders for another book (the next in the Sookie Stackhouse series).  I think I keep them and Barnes and Noble in business.

Delishhh!

Whew!  I’m beat.  This morning before all of the shopping madness I drug my booty out of bed around 4:45.  I had to take my grandmother for a colonoscopy.  Who schedules something like this so early in the morning?!  I haven’t gotten up that early in a loooong time and I didn’t sleep well at all last night.  I’m beat, I think it’s time for bed!

Holy freaking crap!!  That’s not even that many books and I’m only taking 4 classes.  This is ridiculous.  I am taking four of them back though because I ended up finding them on amazon.com for much cheaper.  I’ll be saving about $200 this way.  So $800 for books this semester.  It still seems redic!  I haven’t ever had to pay this much for books before, it blows my mind.  I’m now glad that I went ahead and got financial aid instead of paying for everything out of pocket.  There’s no way I could afford this otherwise.

Sooooenyways…

I woke up early this morning, but I didn’t really feel like getting up so I read for a while.  I was reading the third book in the Sookie Stackhouse series.  And I couldn’t put it down.  I ended up finishing the whole thing this morning (and I bought it at 5:00 last night!)  I DEVOUR books, it’s like a disease or something, lol!

Then I got up and had a quick little breakfast.  I didn’t really have an appetite, but I was shaking and my tummy was hurting so I knew I needed something to eat.  Does anyone else get weird symptoms when they get too hungry?  I shake like mad and feel like I’m going to barf, which really doesn’t make me want to eat anything.  I try not to ever get too hungry because I know that will happen, but sometimes it just happens.

I tried out this new PB that I picked up at the grocery store this weekend.

I put it on half of an Orowheat thin and topped it with some banay-nay.  That was about all I could handle at the time.  This PB is goooood!

Then I was off to D-town to get my textbooks.  I wasn’t really keeping up with the prices so I had a mini heart attack at the cash register and went into shock.  (like I said I’m taking some back, so my heart is feeling a bit better, lol).

Then there was the trek across campus with around 50 lbs of books (parking was a nightmare with all of the students moving into their dorms today).  At that point my arms were shaking and I was feeling really sick.  It was 105* today, I think I got a bit overheated.  My body isn’t handling the heat well this summer for some reason.  I usually don’t have a problem with it, but for some reason I just can’t take it this summer.  It’s not any hotter than a typical Texas summer.  Weird.

Anyway, I decided to stop by this little health food store my awesome sis-in-law told me about (thanks Katherine, you rock!).

And I got a few things.  Some veggies and whatnot.  This is a neat little place and it’s not too expensive. 

They also have a cafe so I had an awesome sandwich!  Chicken and basil sammy- boarshead chicken breast, pesto, feta cheese, and roasted peppers.

Holy crap.  That’s all I have to say.  This might be the best sammy I’ve ever had.  This place is going to get so much money from me over the next few yrs, haha.

Wild blueberry iced tea.  I didn’t even know it existed.  Apparently it does and it’s delish!

And some chocolate.  (I know how good for you dark chocolate is, but I just don’t like it.  I’m a milk chocolate girl through and through)  This was not the best chocolate I’ve ever had, but I just couldn’t resist seeing that they give 10% of the proceeds to protecting endangered species.  It was still pretty good though!

Well, I think I’m spent for the day.  My hands are still shaking and I don’t feel so great, so I think I’m retiring for the evening.  I think I’m going to send hubby out to pick up some food for dinner.

anticipation

I start back to school in ONE week!  eep!  It seems like everyone else is starting back today, but we still have another week.  I’m sure that’s great for everyone else but I am SO ready to get started!   (shoutout to Shannon B, who is probably rocking her first day at her new gig!!)

I seriously feel like I’m a kindergartener starting school for the first time, lol.  I have nervous butterflies in my tummy and I’m just really excited.  I know I’ll rock my nutrition classes but I’m a bit scared about all the chemistry classes I’m going to be taking. 

I’m also a little nervous being so old, lol.  OK I’m not decrepit or anything, at least I’m still in my 20’s for the time being.  But I’m still considered undergrad right now so I’ll be in all the classes with the “kids” right out of high school.  yikes!  I hope I’m not the annoying old lady in class that asks tons of questions and sits in the front row right in front of the teacher.  (though in my defense I have really bad eye sight even with glasses on so I probably should be sitting in the front row just to be able to kindof see).

Anyhoo, as soon as my financial aid comes through and I get my refund moo-lah (which hopefully will be tomorrow) I’m going to go buy my books and time my drive to campus to see if I can find a way that takes less than 1 hr 10 mins.  The drive is gonna suck I’m not going to lie, especially because it’s a busy interstate and I’ll be going back and forth during rush hour most days.  And I’m such a dork that once I get my books I’ll actually probably start studying.  I know I know, it’s painful to be this much of a nerd!

Soooooo anyway.  Today’s breakfast was a rerun of yesterdays.  Leftover biscuits with a bit of strawberry preserves!

Then I went on a cleaning/organizing spree.  I hit the office pretty hard.  It’s been needing to be cleaned since May and I made myself do it today.  I’m going to need the space once school gets going!  And since I was already in cleaning mode I cleaned the living room and hallway carpet.  It’s been a while and it really needed it.  This afternoon I’m going to hit the bedroom- I need to change the sheets and tidy up a bit in there as well.

Right now I’m on lunch break.  I made little pizzas with an english muffin.  I toasted it up a little, then put on some leftover marinara sauce that we had in the fridge, then a sprinkle of cheese and back in the oven till melty and delish!

And a nanner.  I haven’t been getting in enough fruits and veggies lately.  I need to get on that!

Well, I hear the pupster whining, so I guess she’s done with her nap.  Yes, I totally put her down for a nap like a kid! lol!  I better go get her out of her kennel before she throws a fit.

Dinner tonight is baked macaroni and cheeeeeese!  Can’t wait!

Today was bandage change day for the pup and I had to do it.   I wish the vet could have come over and done it for me, lol.  It took Justin holding her down to get it changed.  She did not like it and she let us know about it.  The new bandage doesn’t look as nice as what the vet did, but it will get the job done and keep her paw from getting infected.

Before that, though we had some breakfast to gear up for the job at hand.  I made some whole wheat biscuits.  I used a recipe from allrecipes I think.  I rolled the dough too thin so my biscuits were flat, but still mighty tasty!

Then we changed the dogs bandage and I hopped on the treadmill and did a quick mile (well, not really quick because I run at about the speed of a turtle, lol).  I don’t usually work out on Sunday’s because our day is usually full with church and stuff, but we skipped this morning since we needed to get my car taken care of so that I can have transportation.  It turns out that it was just the battery, so Justin is working on that as I type.  Hopefully that will get it back to normal again.

Lunch was a sandwich.  Ham on an orowheat sandwich thin with a little mayo, lettuce and some Franks.  I wasn’t really digging it, so I only ate half.

As soon as my car is ready to go I’m going to hit the grocery store (which I usually do on Saturday’s, but I was kindof incapacitated yesterday).

No idea what’s for dinner tonight.  Any suggestions?
