Things I’m Obsessed With!

I get into obsession mode sometimes when it comes to my favorite things.  I usually yammer on about my obsessions on Facebook, but today I was thinking why not just bring it to the blog?!  I’m going to try to keep it around 5 things each time I do one of these- because honestly I could go on and on!

So here we go…

Things I’m Obsessed With, Edition 1

#1 Taking pictures of my dog

I. Cannot. Stop!  She’s so darn cute!  And the look on her face is usually like “pleeeease stop!”  Haha!

#2 Iced Green Tea

Cannot stop drinking it!  Multiply this times like 5 in one day and you’ll understand just how deep the obsession is!

 

#3 Sprouted Grain English Muffins

LOVE!  English Muffin Pizzas?  Yes please!  Breakfast Sammies?  Yes please!  The ideas are endless and this particular brand is the best- so hearty and grainy! 

 

#4 Guittard Extra Dark Chocolate Chips

Oh my word these are insane!  I really don’t like the semisweet chocolate chips very much(they taste weird!), so when I came across these I was super excited!  Honestly, they are an extremely good quality dark chocolate- they’re better than a lot of the really expensive “fancy” dark chocolates I’ve had and they’re around $3 for the bag!  I like to keep a bag around and have some as an after dinner sweet sometimes.  If you stick to a serving, they’re pretty decent on the calorie budget- only 70 cals per serving!  Can’t beat that with a stick!

 

#5 Mama Peas New Cookbook

I cannot seem to put this down!  The recipes are fab- I made the teriyaki tofu last night!  And I can’t wait to try some of the desserts! (my oven is broken, so It will have to wait till I have time to go shopping for a new one!)  And it is SO funny!  Seriously if you don’t have this, you should really go out and get it- you will definitely not regret it!

 

Well, those are my top 5 things I’m obsessed with! What can you not live without right now?

Meatless Monday: Quinoa Stuffed Hatch Chiles

Happy Meatless Monday friends!  After you read this head over to Liz’s blog to see my first ever guest post!  Oddly enough that recipe also feature’s quinoa- and I didn’t even plan it that way!

So if you know me, then you know that I’m completely obsessed with not only extremely spicy things, but also with Hatch Chiles!    See last year’s Hatch Chile post if you want the deets on this amazing pepper (or if you want to make the awesome Hatch Chile Rellenos that I made last year- trust me, you do!)

It’s not quiiiiite time for the Hatch Fest at Central Market yet, but they have already put their chilies out so I grabbed some!  I’ll be out of town during the Hatch Fest this year so this may be all I get!  Sadface.

I’ve been contemplating for months what my first Hatch recipe was going to be this year, and after seeing the Vegan Zombie make stuffed poblanos I knew I had to make Stuffed Hatch Chiles!  This recipe is inspired by that episode of The Vegan Zombie!  Stay tuned for more Hatch recipes over the next few weeks- I’ve already got a Hatch Sourdough in mind, and who knows what else my crazy brain will come up with!

Without further ado, I give you…

Quinoa Stuffed Hatch Chiles
(Print this recipe!)

Ingredients:
6 large Hatch Chiles (you can use poblanos if you can’t get the Hatch)
15 oz can of black beans, drained and rinsed
1 onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced
1/2 cup uncooked quinoa (+ 1 cup water for cooking the quinoa)
1 teaspoon chili powder
1 teaspoon smoked paprika
1/2 teaspoon chipotle powder(optional, but if you want a little extra spiciness you should add this!)
1/2 cup pepperjack cheese (I like Daiya!)
salt and pepper, to taste

Directions:
Preheat oven to 350 F and spritz a baking pan with cooking spray.

Rinse your quinoa and cook it- I use a 2:1 water to quinoa ratio and cook it in my rice cooker, but you can cook it on the stove too! 

While quinoa is cooking, slice your peppers in half lengthwise and scrape the seeds out (tip: I use a grapefruit spoon to scoop the seeds out so I don’t have to worry about touching them with my fingers!)

Sauté onion and bell pepper over medium heat until tender. 

Add garlic and continue to cook until fragrant.

In a large bowl, stir together the sautéed veggies, beans, quinoa, spices, and cheese.

Scoop the mixture into your peppers- don’t be afraid to get your hands in there and really mound up the filling in those peppers!

Pop the stuffed chiles in the oven for around 20 minutes, or until the peppers are soft. (start watching them when you get to the 15 minute mark- you don’t want them to burn!)

If you’re awesome like me, you’ll top your stuffed peppers with some vegan queso and a big scoop of guac!

Boo.

This week was so stressful for me.  And I gain weight like crazy when I’m stressed as much as I am right now despite doing everything right.  It happens.  Let’s just keep moving, shall we?

I went to an actual weight watchers meeting this morning, so hopefully that will be helpful motivation for the week.  I’ve just been using the etools and doing it on my own up to now.

Hopefully next week’s numbers will look better!

Fit Fab Friday: Stressed Edition

Soooooooo…..

I had a really bad week this week and I wasn’t able to work out much at all.  Thumbs down

My car broke down Friday evening in downtown Dallas.  We called the roadside assistance and waited (and waited and waited) for a tow truck.  We waited for 4 hours.  Outside with the car because they told us not to leave the car.  4 hours.  The temp has been hovering around 110 lately.  So not only did I not have a car for a few days, but I also think I was quite dehydrated- I’ve been feeling really bad all week.  Tired, sluggish, and overall horrible.

We had the car towed to a local place and finally got home around 11 that night.  So I was without a car all weekend, on Monday and on Tuesday.  I finally got it back Tuesday evening- Hallelujah!  P.S. sharing a car realllly sucks- I had to take the hubby to work, drive to Dallas for school, then go straight to Granbury after school and pick him up from work; leaving the house at 7 am and getting back around 8 pm. 

Needless to say I was exhausted and feeling horrible all week.  Not to mentioned completely stressed out trying to balance all this with the 3 tests and 6 quizzes I had for school last week.  I am one gigantic wad of stress right now and I feel like I’m on the verge of flipping out!  Bah!

However…

The class is over next week, then the hubby and I are headed to Austin for a weekend getaway, then the next weekend is the Healthy Living Summit!!!  So I’ve got some super fun things planned if I can just get through this week!

I only got in one workout this week.  And it was today.  I did the elliptical for an hour.  And it felt GREAT to workout!!!

Next week’s plan is almost a repeat of last week’s plan!  I’ll probably take off next weekend since I’ll be in Austin, so that’s why I’m working out every day this week.

Saturday- Kickboxing at the gym
Sunday- 2 mile run
Monday-  Kickboxing at the gym
Tuesday- Elliptical + weights
Wednesday– 2 mile run
Thursday- Elliptical + weights

My most viewed post is my very first What I Ate Wednesday post.  I love doing the WIAW posts and I love reading other peoples even more!  I get tons of ideas and am making new bloggy friends!

That would probably be my Ditching The Label post.  I was so nervous about hitting publish on that one.  And I was so afraid that I was going to get a lot of backlash from the vegan community for it, but it all turned out fine and I actually got a lot of support!

Your most helpful post
I’ve had a lot of comments and emails on both my almond butter and tempeh bacon tutorials!  People are surprised at how easy it is to make almond butter and how much better it tastes than the jars you buy in the grocery store!  And what can I say about tempeh bacon except that its awesomeness speaks for itself!

A post whose success surprised you
My “Wanna Make your own Vegan Greek Yogurt” post is surprisingly popular for such a simple concept!  I get a lot of hits on that page and Whole Soy and Co. even sent me a ton of free yogurt coupons!  (p.s. I’m out of coupons if y’all want to send me more! Winking smile )

A post you feel didn’t get the attention it deserved
The post about my first 10K.  I was so darn proud of myself and I felt a little sad that I didn’t really get many comments or feedback about it!

The post that you are most proud of
I’m by far the most proud of the post I wrote declaring that I was going back to school to become a Registered Dietitian!  This was a very exciting but a very tough decision to make for me.  I got into a Masters program in my field (music) as well so I had to weigh both options and in the end I went with what my heart said instead of what my head told me the right decision would be.  I know I definitely made the right decision!!!
