Happy happy Friday!!!  Today began with the obnoxious alarm clock going off at 6:30 (for me that’s sleeping in, lol).  Up and at em!  AND I had time to have breakfast this morning!  Yogurt with flax and chia seeds, with a sprinkling of granola (note to self- I’m all out of granola)

Not sure why, but this is the only type of breakfast that will really fill me up for a while.  Not sure why, but I’m going to guess it has something to do with the protein of the greek yogurt?  Then add in the fiber and carbs of the fruit, I guess they all work in harmony in my tummy.

 

I left extra early anticipating the jammed parking lots, but apparently everyone skips class on Fridays because I had my choice of parking spots this morning.  And I got here an hour early too so I had some time to kill.  I went to take back my last book to the bookstore to return.  I took back a study guide that I bought for my intro to Nutrition class.  The teacher said that he would be giving us a review before the test so I figured I didn’t really need to spend that extra $45 on the study guide if I had a review from him.

Then on to statistics (which might be just the most useless class I’ve ever had to take).  Chemistry was cancelled today, so I’m now in the library trying to play catchup on some chem stuff I don’t really understand.

Must get back to work!

I am too tired to think of a title today!  LOL

I’ve been much too tired to post much of anything lately.  Gosh I’m ready for the weekend.  And it’s not that my classes are really hard or anything.  It’s getting used to being back on that kind of a schedule again after years of being away from school.  And also the DRIVE.  It’s killing me!  I wish there was somewhere closer, but the only other Nutrition program in North TX is TCU (which is extremely close), but it is waaaay too expensive and I could never afford it.  But at least I’m getting the chance to do this, and for that I feel truly blessed!

Sooooooooanyway…

Today was food prep lab.  I’ve been waiting for this all week!  It’s going to be awesome!  We had a blast, and today’s lab was about the microwave.  We put all kinds of marshmallows in the microwave and melted them!  We did mini marshmallows and giant ones.  We melted them touching each other, in a circle without touching, and randomly placed on the plate.  The mini marshmallows melted like no ones business and the giant ones just puffed up really big- I thought they were going to explode!

Then we did the same kind of thing with egg whites.  We filled 7 ramekins each with 1 T of egg white, then we put them in a circle in the micro with one in the middle.  Then nuked for 30 secs.  The ones on the outside started cooking and turned white, but the one in the center stayed clear and didn’t cook a bit!  Interesting, huh?!

I’m going to try to post some sort of picture from lab next week, we look hilarious.  We have to wear lab coats and hair nets!!  Heehee!  Next week is fruits and veggies, can’t wait for that.  I am not, however, looking forward to the lab reports.  They kindof spoil the fun of the lab, don’t you think? LOL

Anyway, on the way to school I had a Kashi bar and an apple.  I seriously need a plan B for the mornings I have to run straight out the door and don’t have time to make breakfast.  I was STARVING by the time I got to school.  This didn’t fill me up at.all.  I have to leave the house at 6 am and I’m not really willing to get up at 3 or 4 just to make breakfast.  Any suggestions??  Quick but filling is what I’m looking for…

Oh and a coffee from Starbucks on the way to school escaped the eye of the camera.  Pumpkin spice latte!!!!!!  Enough said.

Then it was traffic traffic traffic, then class.  Then traffic traffic traffic, then home.

Then I went and got my hair did!!  I got my hairs cut AND colored!  It has been soooo long since I’ve been in to get my hair done.  There was a bit of a miscommunication with my hair lady.  She went on maternity leave and I didn’t hear back from her so I assumed she decided not to come back and to stay home with her boys.  But really she didn’t have my address to send me her announcement that she was back.  So for like 5 months I’ve been walking around with ugly hair not realizing that she was back.  Oh highlights, how I’ve missed you!!!  (I got new glasses a few weeks ago and I forgot to post about them.  you can’t really tell but they’re purple and they’re Fendi and I love em!)

After that I had some luuunch.  Turkey sandwich on our Hatch Chile sourdough bread with a teensy bit of mayo, sharp cheddar and spinach.  (I only ate half, the bread is starting to get a bit stale)  With some corn chips and salsa!

Then I went to the office to catch up on some reading since I missed statistics yesterday because I couldn’t find a friggin parking spot (seriously).  Snacks were consumed.  They said “no pictures please”.  Grapes and Annie’s bunny grahams.

Then I tried a new recipe for dinner.  Thai Basil Chicken.  Now I’ve never had this for real, but it was pretty tasty!  My only problem is I’m already hungry and it’s only been about an hour and a half since dinner!  Ah well, maybe It’s just one of those bottomless pit kinda days?  KWIM?

Nodding my head like yeah

OMG what a day!!  This may have been one of the longest days ever.  I left the house around 6 this morning with a to-go breakfast in hand…

This did NOT keep me full for very long. :(  I was hungry again by the time I got to school.  I spent most of my day with my stomach growling (I blame the hormones araging right now).  I hate those days where you feel like you’re hungry all.day.long.

So I had Chemistry lab at 8:00.  I do NOT like my schedule this semester.  We were done around 9 so I ran some errands and went to have coffee/do some reading at Panera.  I just kindof hung out there and read until lunchtime (my next class didn’t start until FOUR O’CLOCK!  See what I mean about my schedule sucking?  And I can’t really afford to go home in between with the commute. )

Lunch was a salad from Chipotle (tomorrow I’m going to start bringing my lunch/snacks.)

On my salad I got…

  • black beans
  • corn salsa
  • pico de gallo
  • guacamole (I took off most of that guac, it was waaaay too much!)

The salad was really really really good.  Buuuut, I was hungry again in about 2 hrs. smile_sad

Then I had more time to kill until my next class.  So I went to the library and read in my textbook and printed out some powerpoint stuff for my food prep class tomorrow.

Then I went to Intro to Nutrition.  It was good; I think I’m going to enjoy the class!

I’m just so exhausted I think I’m going to just call it an evening.  I have a story to share from my nutrition class but I’ll wait till tomorrow since I’m so exhausted.  I’m running off just a couple of hrs of sleep.

It is now time for bed!  Night!!

Back to school!

Well, today was my first day back to school as a full time student again!  I got up sooooo early to get to school this morning (I’ve been so lazy this summer that I forgot what it feels like to be up and at em so early).

I started the day off with a filling breakfast.  This always keeps me full for a good 5 hrs.

Strawberry Chobani with chia seeds, flax seeds, 2 T granola and some strawberries.

Then it was off to school.  The commute already sucks, and it’s just the first day of school.  The drive is somewhere around 1 hr to 1hr 10 mins.  But with a coffee stop and the parking nightmare that this school is I was glad I gave myself 2 hrs to get there because I ended up walking in just as class was starting.  Yeesh!  It took me a good 20 minutes to find a parking spot for crying out loud!

Anyway, I had statistics and chemistry today.  In statistics, he pretty much just read the syllabus to us and then let us go.  But in chemistry she was raring to go and she flew through the first TWO chapters today!  I’m surprised there wasn’t a fire started from the pencils and pens scribbling on paper as we frantically tried to write down all the information she was plowing through.  I also found out that I bought the wrong book.  Oops!

After that I was done.  A two hour trip for that. 

Next I headed to Panera to have a salad and to use their wi-fi.  I left my camera at home this morning so I don’t have any pictures, but I got the asian chicken salad and it was so pretty.  It was a shame I forgot my camera!  I also updated my microsoft word (upgraded to 2007), checked on the status of the rest of my textbooks in transit, and bought a cool memory card for my camera that will upload my pictures right to my computer through my wireless internet.  Pretty sweet, huh?

Then there was a quick Target run for a new calculator and then on to the house!

Once I got home I was a good student and did a little reading for chemistry, then started a new fun book.  The next in the sookie stackhouse series.  Oh what fun!

Then DINNER!!

I tried a recipe out of my new Hatch Chile cookbook.  It was called August Pasta- what a fitting dish for the last night of August, right?!

It was basically a sauce of pureed hatch chiles with a little garlic, some bell pepper and some half and half(not much, just enough for a little creamy-ness).  Topped with a little grated parm cheese!

Served with a slice of toasted

Now I’ve got some cleaning up to do and I’m hitting the hay super early because I have a 4:30 am wakeup call tomorrow- eek!

Busy Bee

Holy moly, these last couple of days have been so busy!  I haven’t had time to post at all!  Instead of catching up I’m just going to start fresh with today.  BUT before I do that, I have to talk about chile fest day uno!

So after I spent about an hour peeling, de-gutting, and storing about 5 pounds of roasted hatch chiles I was ready to try to cook with some of them!

I have a Hatch chile cookbook, but I kidna decided to branch out on my own this first time.

So I took some lean ground turkey, cooked it up and let it cool off just a tad.  Then I stirred in some big spoonfuls of salsa and a big handful of red. fat cheese.  Then I stuffed it in the chiles.  Then sprinkled a little more cheese on top and put it in the oven till the cheese was all melty and yum.

The result…

So simple and SO delicious!!  If you don’t have access to the Hatch chiles, you could do this with a pablano pepper(they’re very mild).  Try this, it’s awesome!!!

 

So that brings me back to today!

This morning I whipped up some AWESOME french toast.  My best so far!  Then we topped our frenchy toast with strawberries, blueberries, and a drizzle of agave nectar.  SO.GOOD.

You should try this too.  It’s so easy to make french toast in a healthy way!

Then lunch is the best turkey sandwich I’ve possibly ever had! (I must be channeling my inner Julia Child lately, since I’ve been reading My Life In France, lol)

Not sure what’s on the agenda for the rest of the day, but I know it will involve lots of my allergy eye drops!  My eye allergies have gone haywire.  There was something in the air last night at my cousin’s wedding (which was super cool, btw- they had a mashed potato bar!  It was set up like a sundae bar, really cool!).  Anyway there was something I was allergic to (besides the aggies, lol- the wedding was in College Station)  My eyes are so puffy and killing me, bah!

Anyhoo!  I’m thinking we may do pizza for dinner tonight.  It may involve some more of our Hatch Chiles!!
