I’m officially declaring the grand re-opening of Sarah Snacks!

Well, I think I’m officially back with a brand spanking new design!  A HUGE shout out to Zesty for his help with this!!!  He did an awesome job and I couldn’t be more happy with all the new stuff!!  I definitely recommend him if you need some help with your blog, he does great work obvs, but he is also very patient with the technology deficient (like me! lol)

Anyway, what do you think about the new design??

I think I shall start off with a recipe!  This is what I had for breakfast this morning and is so super simple and very healthy!   Today was pancake day!!  Every once in a while I like to make pancakes in the middle of the week, just for funsies.  I have a pancake mix from whole foods that I like to use for my pancakes, but you can use whatever your fav is or even make them from scratch! 

Now here’s where I got creative this morning…the syrup!  You may or may not remember, but I usually like to buy my maple syrup from the bulk section at Whole Foods or Central Market simply because it’s way more affordable than a bottle from the shelf of the grocery store.  (which can cost up to $20 for the good stuff!  And I only like the real deal when it comes to maple syrup!).  So the last time I bought some I got home and accidently dropped the bottle and it pretty much exploded onto the kitchen floor (I guess I didn’t screw the lid on tight enough at the store?).  Anyway, I haven’t had a chance to get back to WF lately to buy more, but I really wanted pancakes this morning so I decided to use up the blueberries in my fridge and make a blueberry “syrup”.  This is so easy that it will seriously blow your mind!  And you can do this with pretty much any fruit, fresh or frozen.  So without further ado, here’s my blueberry “syrup”!

 

Blueberry “syrup”

(Print this recipe!)

Ingredients:
One pint of blueberries (fresh or frozen)
splash of water
1 tsp sugar (you can omit this if you don’t want to use sugar or you like the tartness of the berries unsweetened)

Directions:
Put blueberries in a small saucepan with a splash of water.  Bring up to a boil and add sugar.  Bring down to a simmer and let it simmer away until it reaches your desired consistency.  I like to mash up the berries a bit with the back of a spoon as it simmers so that it gets nice and thick.  If it gets too thick you can add a little more water.

Spoon onto your pancakes and enjoy!  (this would also be awesome on waffles, biscuits, or even on top of ice cream!)

Super simple.  Super healthy- blueberries are SOOO good for you!

I’m still alive over here!

I’m waiting for all of my changes to be done before the real grand re-opening, but I haven’t posted in forever and I’m really missing it!!

Not too much going on over here.  Just getting ready to go on our CRUISE next week!!  Woot woot!!  A week and a half and we’re going to be cruisin’ to Cozumel!  This is going to sound funny but one of my favorite parts about taking trips is making lists to get ready to go (I know, weird right?)  I am a list maker from way back- I love lists!  Anyway, we’re just getting ready for the trip and I’m about to start my list making (which drives Justin crazy, but he knew I was a list maker when he married me so I don’t really feel too sorry for him, lol!)

I have so many recipes to add- I’m really excited about that.  That’ll take a little while though.

I just got back from the eye dr.  I think I pretty much emptied the contents of my bank account while I was there.  It’s so expensive.  My health insurance covers a little bit of it since I have an eye disease and my visits to the eye dr are “medically necessary” and I have to visit way more than the average person.  Sometimes I think I get to see my eye dr more than my husband I’m there so often, lol.  They don’t cover a whole lot though, so the cost still stings quite a bit.  I’m planning on adding a page to my site concerning my eye disease soon.  I don’t talk about it alot, but it’s something that I have and there’s no cure, it’s also not very well known and not super common so the more people that are aware of it the better.  There are alot of people that have it that have no clue that they have it.  Anyway, that will be coming soon.  I have some more research to do before I get to that point though.

Right now I’m watching “An American in Paris”.  Ever since I can remember I’ve had the biggest crush on Gene Kelly.  Is that creepy since he’s dead?  I don’t know, but he was so so talented and quite cute as well!

In love with skyr

Has anyone ever had skyr?  Don’t worry, I had never heard of it either until I came across some in the grocery store yesterday!  And now I’m wondering where this has been all of my life!

What exactly is skyr you might be asking yourself right now?

It’s yogurt.  It’s traditional Icelandic yogurt to be exact.  It’s quite a bit like greek yogurt but there’s just a little something different to it.  One difference is it has a creamier texture.  It’s like melt in your mouth creamy!  It’s made with skim milk, so it’s naturally fat free.  It also kicks greek yogurts ass in the protein department.  It has 16 (that’s right!) grams of protein per serving!!

It also has waaay less sugar than the “regular” yogurts.  Have you ever looked on the back of a regular low fat yogurt?  They have upwards of 30 grams of SUGAR in them!  Now tell me is that healthy to have that much sugar in one serving?  Nope!!

Anyway, the brand of skyr that I picked up is called Siggi’s.  I’m sure there are other brands as well, but this is the only brand they had in my store so that’s what I picked up.

Here’s their website if you’re interested.  It has a great story and they use milk from local farmers to make their yogurt!  They also use agave nectar to sweeten their flavored yogurts (not sugar), which is low glycemic and all natural.

 

So I picked up a couple of different flavors (I’m not big into the plain flavored yogurts, but if that’s your thing then they do have it).  I got blueberry and pomegranate & passion fruit. 

I decided to try the blueberry this morning.  Oh yummmm it was so good.  Creamy.  Sweet but still a bit tart.  Heaven!  After the first bite I decided to add some toppings.  I topped it with 2 T of this new granola…

Pancakes-mmmmm!

I don’t usually go for pancakes during the week, I usually save it for the weekends, but for some reason I really wanted pancakes when I woke up this morning!  Hubby definitely wasn’t complaining, lol!

It’s whole wheat, so the pancake is pretty dense, but REALLY good!

I topped my pancakes with a tiny drizzle of maple syrup, some strawberries, and some blueberries.

Right now I am just relaxing on the couch watching some morning TV and digesting.  My life is so interesting right now, huh?   I promise it will get much more exciting in about a month. 

I’m skipping working out today.  I’m still sore from my workout with my trainer on Thursday and I work out with her again tomorrow so I feel like my body just needs to rest today.

I think I’m going to take a super hot bath!

awesome new changes!

Brand spanking new Sarah Snacks coming soon!  I’m getting a fun blog makeover- it’s been a while in the making.  I’m very excited about it!  I’m hoping that over the course of the next year or so that my blog can transition into a place people can go to for answers, recipes, and general nutrition inspiration.  I’m really excited about working on becoming a Registered Dietician (one more month till school starts!) and I hope this site can become everything I hope!!

I’ll probably just be posting sporadically the next few days until I can pronounce the “grand opening”.

Nothing much going on round these parts- just working on transferring stuff over from my old laptop to the new one.  I’m waay too cheap to buy the transfer cable, so it may take a while! LOL

I’m so bored right now- I always thought it would be awesome to not have a job and to get to just hang around the house and stuff, but I’m going insane here!  It’s kindof bittersweet because on one hand I’m SO ready to get back to school that I wish the next month would just fly by, but on the OTHER hand I know I won’t be getting a summer off ever again once school starts.  And since I won’t ever be teaching again (thank God!) I won’t have summers off when I start my new job once I get done with school.  See my conundrum? 

I need a project besides going crazy.  I think once I get the new and improved blog going I will be busy with that for a while.  I just feel like I’ve gotten so LAZY over the last month or so!  I don’t want to do anything but lay around and read and watch TV.  It’s ridiculous!

Well, I’m about to head out to the gym to work out with my trainer.  Adios!
