And the rain is gone

It didn’t last very long.  I hope it comes back tomorrow!

My afternoon was pretty uneventful.  The only thing I really got accomplished was to get my parking pass ordered for next year for school.  I also broke out my planner and added some things in.  And that’s about it!  Tomorrow is going to be much more productive, I’m going to yoga!

I decided on a quesadilla for lunch.  Oh it was sooo good!

I went back for seconds on the guac!  It was the pico de gallo style from wholly guacamole.  It was on sale at WF so I grabbed it.  It’s really good so I will def be getting it again!

On my quesadilla was black beans, some austrailian cheddar, onion, and bell pepper.

Along with the guac was a dollop of fage and my favorite salsa!

Then I had a handful of these a little later.  Cute lil guys!

Dinner tonight was a mismash of stuff.  Including the awesome peach salsa I picked up at WF!  These things don’t really seem like they would go together, but it all worked.  The brussel sprouts were an impulse buy, so I didn’t really have any plans for them.  I just threw them in cause I needed a veggie.  I grilled up the chicken and topped it with the peach salsa- it was perfect.  Served atop whole wheat couscous and roasted brussel sprouts on the side.

And dessert was strawberries and 1/2 banana.  Strawberries were on sale as well so  I grabbed a big thing of ‘em for $2.99!

And it’s past my bedtime now.  Nighty night!

Rainy days and Monday’s

It’s raining!  And it looks like it’s going to be raining for at least the next two days.  This is really good, it’s been so hot and dry the last couple of months.  The other good thing about the rain is that it’s downright “cold” today.  Well, Texas’ version of cold!  79*- brrrr! lol  So I’m planning on sticking around the house and have a nice lazy day.  Probably lots of reading and a little cleaning.

Since I’m lounging I had the perfect lounging day breakfast- a breakfast sammy!

  • WW english muffin
  • turkey sausage patty
  • sprinkle of the Australian cheddar I got from WF this weekend
  • egg white’

Movie Night

Not really any interesting eats today.  It was kind of a boring day, the most exciting part being a trip to the post office to buy a stamp.   We were so lazy we didn’t even get up in time for church.  After we got done buying a stamp we kinda wanted to go to the movies, but we didn’t really want to spend any money so we decided to have a movie night at home with movie snacks and all!

Popcorn (normally I like to munch on the air popped variety, but I’ve been getting tired of it lately and I wanted something different).

On the big screen tonight were Weatherman (don’t waste your time on this one, it’s not good.  seriously.) and Serendipity (can’t go wrong with a good ole romantic comedy!).  We turned on the home theater system and turned the living room into a movie theater!

Oven Fried Okra

Every southerner loves their fried okra!  This is a much lightened up version, but still crunchy and delicious!

Ingredients:
Okra(however much you want to make)
About 2 cups of cornmeal
couple of dashes of Tony’s Cajun seasoning
2 egg whites, beaten (I’ve also used buttermilk in place of the egg whites and it’s delish!)

Directions:
Preheat oven to 425.
Slice up okra into bite size pieces.
Combine cornmeal with a few dashes of seasoning in a Ziploc bag.
Dip okra in egg whites, then put into the Ziploc with cornmeal.  Shake. 
Put okra onto pan and into oven.
Bake until golden brown.

Grocery day!

Happy Saturday!!

Today is grocery day at our house.  I love grocery shopping, how weird is that.  It’s my favorite part of the week.

Before I got started I had a quick breakfast.  Whole wheat english muffin with almond butter and a little apricot fruit spread. Yum!

And some chocolate amazing grass mixed with vanilla almond milk.

Then it was off to the races!

I decided to go to Whole Foods today.  I haven’t been in forEver because our budget has been so tight, but since I just found out that I’m getting financial aid for school  next year I decided to splurge a bit and get some fun stuff!

First I made a quick stop at the little produce shop in town.  I live in a tiny town and there isn’t much around here, I normally drive around 25-30 miles just to get groceries (there is a wal-mart close, but  I really dislike the wally mart so  I rarely go in).  I haven’t been to the little produce shop in quite a while, but I was pleasantly surprised when I went in today!  They are carrying a lot more than they used to and they even have local organic produce now!

I got all of this for $17!

Then on to Whole Foods!  I spent a bit too much, but like I said I was splurging.  Look at all this loot!

I had to have a little taste of that Ciabatta bread.  So delicious and FRESH!!  Yowza!

They had samples of this peach salsa at the store and it was so good I just HAD to get some!  I think I’m going to serve it up with some grilled chicken!

Pretty much right after I took this picture I dropped the maple syrup and pretty much all of it spilled on the floor!  :(  What a waste!

I also had to have a sample of the yummy cheese!  So good!  With a cracker or two.  I think that chicken sausage is going to be what’s for dinner tonight.
