Mama Mia!

Well, I had a whole post yesterday, but being the genius that I am, I didn’t save it before I tried to publish it and my sucky internet froze up whilst I was trying to publish and I lost the whole post!  I’ll try to recap real quick- it won’t be as good as the post I lost, but I’ll give it a go.

I’ll just post pictures and give comments on the pics instead of commentating the whole day.

A quick trip to the grocery…

Did you know that Dr Kracker’s are made right here in Dallas?!  I had no idea!  I don’t usually buy them because they are really expensive, but when I found that out I had to get some.  The pumpkin seed cheddar doesn’t disappoint!  Very tasty!  And pretty filling for a kracker!  I’m going to have to arrange a visit of some sort since they’re right here next to me!

I gave the amazing grass another go (last time I tried it, it upset my tummy.  I got a sample pack again to try it again and it was all good this time so I went back to get a tub of it.)  The chocolate flavor is so good!  I mix it with vanilla almond milk and it tastes just like chocolate milk, not “green” at all.

This was my last Ez 4:9 tortilla. Crying

In my quesadilla was black beans, cheddar, onions, bell pepper.  Toppins included salsa, big dollop of greek yogurt, and jalapenos!  SOOOO good and I just LOVE how filling those Ez 4:9 tortillas are!

This was supposed to be dessert, but it was NOT BUENO!  I only had about 3 bites and I chunked it.  This is the only SO Delicious product I’ve ever tried that I didn’t like.  Oh well, there was bound to be something, lol.

 

Consumed this on my way to workout with my trainer.  I haven’t worked out like that in weeks, my arms are so sore I can barely lift them!

When I got home from the gym it was PIZZA TIME!  I think this was the best one to date!!

I used this recipe for the dough (it’s the only one I use now.  I’ve searched the world over for a great healthy pizza crust recipe and this is it!  So hearty, but light at the same time, and crispy too!)

Toppings included mozzarella, turkey pepperoni, caramelized onions, and bell peppers. YUM!

I also made a great salad!  With toasted almonds, dried cranberries, feta, and light raspberry vinaigrette!

While the pizza dough was rising, I worked on some blueberry muffins.  I’ve been meaning to make these for days and I finally got around to it.  Here’s the recipe.  I get so many great recipes and ideas from this blog, it’s my favorite!  Mine weren’t as pretty as hers, but they are MIGHTY tasty! Mine turned out a little darker because I used organic sucanat instead of cane sugar, and sucanat is about the same color as brown sugar.  They still tasted fabulous though.  Next time I might try it with some regular old cane sugar.  I don’t usually keep it in the house though…

Holiday Celebrations

Gosh, I haven’t blogged in a long while!  I get caught up in other stuff quite easily and I tend to just let this go by the wayside more easily than I should. 

Justin and I went to celebrate the fourth and his birthday (which was yesterday!) at concerts in the garden.  Let’s just say Fort Worth Symphony + fireworks + patriotic music= awesomeness!

dang quesadilla

well, my plans today aren’t going quite according to schedule, but at least I’m getting some stuff done!  I missed spin class this morning because I overslept- oops!  Then I remembered that I had an appt with my trainer tonight so I figured it was okay, then my trainer texted me to let me know that she was going to have to reschedule.  Blast!  I’ve got so much to do now, that I don’t know when or if I’ll be able to fit anything in!

Here’s what’s on my todo list today…

  • load and unload dishwasher
  • sweep and mop kitchen
  • vacuum living room and hallway
  • drag out the carpet cleaner and clean LR carpet and rug in kitchen
  • blog
  • grocery store run
  • make picnic items for concert at the gardens tomorrow
  • clean up kitchen after this cooking/baking marathon (I’m a messy cook!)
  • make bed
  • LAUNDRY  (why does this always get pushed to the back of the list?!)

When I got up for breakfast I was feeling yogurty!

  • about 1/2 cup-ish greek yogurt
  • drizzle of agave nectar
  • couple of handfuls Kashi Honey Sunshine cereal
  • tiny sprinkle of mymix granola
  • big handful of strawberries
  • coffee!

Then I did some web searching for a place for us to stay when we trek to New Orleans next month.  I think I found a place, I’m pretty psyched!  Then onto chores, which I’m still working on.

Then lunch time!

this is just my favorite thing ever to make and it is SO insanely filling!  It’s almost 3:00 now and I’m STILL full!

Here’s what was going on with my little quesadilla today…

  • ez 4:9 tortilla
  • black beans (bout 1/2 cup)
  • sprinkle of sharp cheddar
  • baby sweet peppers

These little peppers are fab!  They taste just like bell peppers except a bit of a sweeter taste.

Then I cooked up my dang quesadilla and topped it with some chopped yellow cherry tomatoes and some red onion.  Then a big spoonful of salsa and greek yogurt on the side!

SO GOOD!

I’ve gotten to where I just buy a giganto tub of greek yogurt at Costco once a month and use it not only as yogurt but also as a substitute for sour cream.  It doesn’t make sense for me to buy sour cream when I don’t really use it that often and greek yogurt tastes just like sour cream to me. (which is probably why I have to sweeten it with some agave if I’m going to eat it plain.  Me no likey plain greek yogurt!).

Now I’m just procrastinating- back to chores!!

Mac and cheese mania

We love mac and cheese in this house.  We like it alot!  So when I found a fantabulous deal on Annie’s Mac and Cheese at Costco (a 5 pack for $4.99!!) I was all over it!  This shall be prominent in the coming weeks and I shant apologize!

I like mac and cheese so much I like to make it the main ingredient in a meal.  I almost always make a kind of mac n cheese “bowl” out of it.  These “bowls” always include a veggie of some sort and sometimes meat.

Tonight’s Mac n cheese bowl consisted of:

  • Annie’s Mac and cheese
  • a cool new type of zucchini I found, grilled and sliced
  • hot Italian turkey sausage, grilled and sliced

Look at this neat-o zucchini!  It’s called an 8 ball zucchini.  I found it at central market- their locally grown.

I also threw a couple of hot Italian turkey sausages on the grill pan while I worked on the mac and cheese.

Served with a glass of Moscato! MMMM!  I love Muscat grapes, and this wine is SO light and delicious!  Not too dry, not too sweet.  Just right!

So in an attempt to actually get up and do something useful tomorrow instead of sitting on the couch reading and watching TV all day, I’m already trying to schedule my day tomorrow.  Here’s what’s going on so far…

  • spin class at 9:00
  • quick trip to grocery store to grab some stuff for hubby’s picnic birthday celebration on Thursday (!)
  • post office to return Netflix on my way home
  • quick lunch at home and play with my blog for a few minutes
  • chores! sweep and mop, vacuum, tidy up kitchen, clean up bedroom, clean bathroom, work on laundry (didn’t really get any done today like I wanted to)

I guess that’s it!!

Lazy Bum

That’s me since my last day of work.  I don’t know what my deal is, but it’s driving me nuts!  I think I’m just so bored that I end up sitting on the couch all day doing nothing.  I can’t even seem to keep up with my blog very well.  I don’t think I took a single picture yet today.  I’ll try to redeem myself tomorrow.  I’ve decided that I’m going to try and make myself a schedule each day, that way I don’t waste my day away hanging out on the couch watching tv.

So it’s 5:00 and the only thing I’ve done today is take a long bath with a good book.  Hah.

I’m about to get up and get a few things done before the husband gets home from work.  Here are my todo’s.

  • unload and reload dishwasher
  • take clothes out of dryer- fold and put away
  • send another load through the laundry
  • start dinner

Don’t know what we’re having yet.  Probably something simple.  The Annie’s Mac and Cheese has been calling my name today!
