Queen of the grill!

That was me tonight!  I was a grillomaniac.  Today was a frustrating day.  First, the speedometer thingie on my bike stopped working.  So I have no idea how far I rode today, I just guessed about 10 miles.  I need to dig up the users manual and see what’s going on with it!  Then I totally screwed up my schedule for next semester.  A class that I had waitlisted opened up, so I signed up for it.  That sent my whole schedule out of wack and I had to re-register for everything.  I worked on it for a good 2 hrs (our internet suuuucks), but I gave up and went to starbucks to use the internet there.  I got it fixed pretty quickly and now my schedule is no longer messed up.  I didn’t end up being able to fit in that waitlisted class.  What a serious waste of my time- that took up a large chunk of my day.

Here’s what I’m taking next semester.  I ended up having a class from 4-5:20, which is going to suck big time because of traffic and my commute, but I didn’t get much of a choice because there weren’t many classes that were still open.  The rest of the school has already registered, and we were among the last to get to register yesterday.

Anyhoo, here’s what I’m taking…

  • Food Prep Principles (and lab)
  • Intro to Nutrition
  • Statistics
  • Chemistry (and lab)

It doesn’t seem like alot, but the labs take up sooo much time!  Except for the whole class lasting till 5:20 thing I’m fairly content with my schedule.  I’m not really looking forward to Chemistry, but there will be more than one so I just have to accept it and realize that I will have to study really really hard to make a decent grade.

I am also in desperate need of a prayer for my financial aid if anyone has a spare one!  If I get turned down for some reason I will be taking one class at a time and working somewhere horrid for the next 20 years.

I only have pics from dinner to share tonight.  It was a great dinner though!  I went into a grilling frenzy and grilled up everything I could get my hands on!   I wish we could afford a nicer grill, but we’re having to make do with our cheapy charcoal one from walmart for now.  Oh well, at least we have something!

  • Chicken  (2 pieces with BBQ sauce, and 2 pieces with some grill seasoning)
  • shrimp (with a sprinkle of grill seasoning)

Whatever didn’t get eaten tonight shall become fair game in the fridge tomorrow!  Leftovers don’t last long around here.

  • quinoa  (I mixed in a little BBQ sauce as I was eating it and it was to die for!)

and dessert was a scoop of this raspberry frozen yogurt that I made this afternoon.  (the recipe came from my clean eating magazine).  It was pretty good, not quite sweet enough for me, lol.

I got so much done today!  It was one of those fast and furious days, though.

I had to get up super duper early and drive the hour to my alma mater to pick up two copies of my transcripts for registration tomorrow.  I got there, took care of that, then headed home.

My breakfast was seriously so unremarkable that I didn’t even bother to take a picture.  Plain english muffin stuffed into my gullet on the way out the door.  Boring!

When I got home I started some laundry and made a fabulous wrap for lunch!

This was the star of lunch.  The ez 4:9 tortilla.  These things are awesome!  Between the stellar nutritionals, completely orgainic ingredients, and the fact that they’re a complete protein, I say you can’t beat that with a stick!!

Onto the tortilla I put 1/3 cup black beans, 1/4 cup red. fat cheese, and a pinch each of cumin and chili powder.  Then I melted the cheese in the micro.

On top went my favorite hot sauce!

Then it was gym time!  50 minutes with my trainer, who decided to kill me today, haha.  Seriously though, I think she might have it in for me 😉

Dinner was a super healthy sloppy joe recipe from one of my favorite ladies- Ellie Krieger! (I want to be her when I grow up)  Here’s the recipe! I substituted ground turkey breast for the ground beef and it tasted great!  It also cut the calories down a bit too!

Served with some chips (Ruffles All Natural.  I was actually impressed with these!  Three ingredients- potatoes, sunflower oil, sea salt.  And tasty too!) and some pickle.

Well, time to hit the hay- I have an eaaaaarly start tomorrow.  Hopefully I will get some pics in.  Don’t really know what the orientation schedule will consist of, so we shall see.  Night!

Man, it’s been a while!  I’m going to try and backtrack the last few days as best as I can, but I’m sure that I’ll miss tons!  I didn’t really take that many pictures- my camera is on its last leg.  Thank goodness I’m getting a new one for my bday (which is just 19 days away!)

Well, Friday was my last ever day of work.  It was pretty awesome to walk out of there for the last time!  There was no time to rest and relax though.  I headed straight over to Dana’s house with a truck full of stuff for a garage sale the next day.  We hung out, had some vietnamese food, some wine, and priced out our stuff.  It was a fun night, but lots of work.  I got back late and hit the hay.  The next morning I got up at 4 am (yes, I said AM) and Justin and I loaded up another truckload of stuff to take over.  Got there around 6 ish and unloaded and the garage sale began.  We sold sooo much stuff and we made about $340 ish dollars!!  That is paying for half of our cruise this summer!!  yay for decluttering AND paying for part of a vacay!

After the G Sale, Dana sent me on my way with some goodies from her garden!  Some squash, rosemary, oregano, and mint!  I didn’t get pics of everything but here are a few.  Plus a picture of some GORGEOUS peach hybiscus that she has on her front poarch!

After I left I hit up the Mexican market about a block from her house and made a HUGE dent in their produce section!  Seriously their prices are amazing!  I’m going to go back more often.  I also left with a Mexican coke and a mango empanada!!  (which were gobbled down in the car on the way home.  my belly was really happy.  I don’t splurge on that kind of stuff often and it was SO worth it!)

Then I picked up some stuff from hobby lobby and headed home to make a cute little something for my cousin’s baby shower the next day.  Here it is… cute huh?  Once I got it figured out it was pretty easy to make, just time consuming tying all of those diapers on!

Then Sunday was the baby shower.  Amy was cute as could be, though she was clearly miserable (poor thing!).  She’s a teeny tiny girl and her belly was huge!  And she’s got about a month left to go too!  There were snacks and cake to be had.  I didn’t overdo it but I did enjoy the snacks.

After the shower Justin and I went to see Night at the Museum 2.  It was cute and funny- I would recommend it!

I guess that brings us up to today!!  I’ll start my normal posting again tomorrow.  I think I’m spent from the catch up post, LOL.  I’ve got lots on my to do list to work on though, so I’m sure I’ll stay plenty busy for the rest of the day.

Cruisin…

Justin and I decided to go on a cruise this summer!!  We are going to celebrate our wedding anniversary and also a new beginning with me starting back to school.  I am so so excited and happy about this!  I just feel that this is not just a vacay but a new beginning.  We are getting a stellar deal so we just decided to go for it!!  Aaaaahhhh, I can’t wait- I am SO happy right now!

Another thing that makes me happy… tomorrow is my last day of work!!!!!!!  (yes, it does need that many exclamation points!)  It’s finally arrived and I am so very happy.

For breakfast this morning I decided to give the oat bran another try.  This time I added a little of my chocolate protein powder to it and it was much much better.  It looks a little weird (mostly because I took a bite before I remembered that I hadn’t taken a pic yet) but trust me, it was good!

  • 1/2 banana
  • 1/2 scoop chocolate protein powder
  • Tablespoon of Barney Butter

Lunch was almost non-existent.  I spent the whole 20 minutes that I get fighting with the copy machine in the teachers lounge.  It decided to be a jerkface today, so I was giving it what-for.  The copy machine won, btw.  So during my 5th grade classes I had a few minutes to gulp down some Greek yogurt with blueberries (no pic).

When I got home I was sooo tired!!  But dinner must be had and I really didn’t want to eat out(we have a trip to pay for for goodness sake!).  So we had some crispy chicken fingers.  Find the recipe here.

Oh so good!  These chicken fingers are a classic and they are going to be around this house for a looong time!

Oh and I may have had a glass or two of Prosecco.  (or we may have finished off the whole bottle.  whoops!)

Ah King George

I love George Straight.  I watched this thing on TV tonight where he got artist of the century or something like that.  It was pretty cool.  He’s a really cool guy and he’s a fellow Texan!!

Me and Emeril hung out this morning- his son was on the show.  What a cute cute cutie!!!

For lunch I wanted a smoothie, so I tried to make one.  It wasn’t so great.  I tried adding spinach to it because, you know, it’s really good for you.  It didn’t sit very well in my tummy though. 🙁

I don’t think I’ll be trying that again any time soon.

For a snack a little later I had a mini clif bar.  I LOVE these things!  Only 100 calories- a perfect little snack.  And organic too!

Oh there is only 1 and 1/2 day of school left!  I have almost all of my stuff cleared out- woohoo!

When I got home from school and errand running I worked on our little office a bit.  It was scary looking when we brought all of Justins things in from the storage building.  It’s much beter now!

For dinner I made some spaghetti.  This is my favorite way to make it!  You should try it, it’s insanely healthy.  Check out all the super foods it’s got in it!  Here’s how I make it…

In the pan goes a little spray of EVOO from my Misto, a zucchini, and some onion.  Sautee…

Then I add a little garlic and a few handfuls of spinach.  Sautee some more…

Then I add some organic pasta sauce (or you can do homemade if you like.  I like this kind though, so that’s what I use)…

Then I let it simmer away while the noodles (whole wheat of course)  finish cooking.

Then before I serve I toss in a little of this beautiful homegrown basil in with the sauce.  Look how pretty!
