Easy Vegan Chili

Super easy, really quick, and SO delicious!

Easy Vegan Chili

(Print this recipe!)

Ingredients:
1 tsp canola oil
1 onion, diced
1 clove garlic, minced
1 can fire roasted diced tomatoes
1 can tomato sauce
1 can kidney beans (or whatever kind you like), drained and rinsed
1 can corn, drained (or you can use fresh or frozen if you prefer)
1 Tbsp chili powder
1/2 tsp oregano
1/2 tsp ground cumin
1/2 tsp crushed red pepper flakes

Directions:
Heat oil in large pot.  Add onions and sauté until tender.  Add garlic and sauté another minute.

Add the rest of the ingredients and simmer for about 10 minutes, stirring frequently.

Spoon into serving bowls and serve with your favorite chili fixings- cheese, tortilla chips, sour cream, corn bread, etc…

Nerdfest 2010

I haven’t gotten to really post in so long!  But finals are over and I’ve officially started Christmas break!!  So anyone who knows me knows how much I love Twilight.  It’s no secret that I’m a diehard Twilight fan!  A few weeks ago my friend Rebecca and I went to a Twilight Convention!  It was such a blast!!  And we weren’t the nerdiest ones there by a long shot.  Let’s just say that there was a lady in a cape sitting by us.  Enough said!

I had so much fun that I thought I’d post my pics and share the Twilight love!

He was really really funny!  He wandered around in the audience and answered questions.  He even took someone’s cell phone and played with it when it rang.  It was funny!

Bronson was really funny and outgoing and fun-loving.  Kiowa didn’t seem all that nice.  Didn’t care much for him (just telling it like it is).

Peter Facinelli!!!!  Plays Carlisle.

LOVE him!  Can’t say enough about how awesome he was!  We got tickets to a dinner that he was going to be at after the sessions and he came and sat at our table and talked to us- it was SO awesome!  He is such a nice guy!  True story- we met his body guard later on at the bar in the hotel while we were having a drink and we were chatting with him and he said that yes, Peter Facinelli is really as nice as he seems!  Meeting him and getting a picture with him really was the highlight of the day!

What a super fun day!  It’s fun to be geek out sometimes!  Can’t wait for next years convention!!!

Super easy Mexican Casserole

Super easy Mexican Casserole

(Print this recipe!)

Ingredients:
3 cups cooked rice
Jar of salsa
can of black beans, drained and rinsed
1 cup fresh or frozen corn
1 onion, chopped 
1 bell pepper, chopped
your fav vegan cheese (I like Daiya)

Directions:
Sautee onion and bell pepper.  Stir together all of the ingredients except the cheese and pour into a casserole dish.  Sprinkle top with cheese.

Bake at 350 F until cheese is melty.

Enjoy!

Super easy and SO delicious!   I like to top mine with some extra salsa, some vegan cream cheese, and serve it with tortilla chips for scooping.  I also like to take the leftovers and serve them as a burrito filling with some salsa and avocado- YUM!!

Frustrations and free salads

I’m frustrated with my schedule for next semester.  Because I got hosed by financial aid I have to work A LOT this year, which also means I have to take fewer classes.  And there just aren’t many classes offered next semester that will fit into my criteria, so it looks like I will only be taking two classes next semester.  A&P(which I had this semester but dropped and I’m SO glad I did- there’s no way I would have survived the semester if I hadn’t dropped it!) and Food Microbiology.  And since I can only take 2 classes that officially puts me at least a semester behind where I wanted to be with my degree plan.  :(  And I don’t think I’ll be able to take classes this summer(see above note about getting hosed by financial aid).  This super sucks!  Maybe next year the financial aid office won’t be so incredibly horrid to me and I can take an extra class or two to make up for this year…

Anyway, enough with the heavy!  Who wants some FREE SALAD?!  Like forever ago foodbuzz/fresh express sent out a bunch of salad coupons and I completely forgot about them!  I found them the other day and I was like yipee!

Sugar and spice and everything nice

1) I just realized I didn’t post a picture of the breakfast sammich with my last blog post.  So here it is!

2) I made apple cider!!  I can’t believe I’ve never made it before- it was SO easy!

Here’s what you do…

Homemade Apple Cider

Ingredients:
2 quarts apple juice (I made my own in my juicer with some honeycrisp apples cause I’m cool like that)
1/4 cup mulling spices

Directions:
Put your apple juice in a saucepan and add the mulling spices.  Simmer for however long you want (I think I simmered mine for about 30 mins).  Strain the mulling spices from the apple juice.  Drink up!  Seriously, it’s that easy!  And really really delicious!
