Sunday

I thought Sunday’s were supposed to be a day of rest?  And what have we been doing all day- cleaning inside and out.  Justin is doing all the outside lawn work and I’m working inside today.  I didn’t realize how messy the house had gotten until we decided to spend the day cleaning. yikes!  I’m wondering where the day went because it’s already after 3:00!

For breakfast this morning I made some applesauce pumpkin muffins from my Clean Eating Cookbook.  They turned out really great!!  I’ll post the recipe later.

I had that with a banana and a cup of coffee from my lovely Keurig!

Then onto the cleaning of the house!!  I took a little break for a quick snack and had a cookies and cream Luna bar- it was fantastic! I will definitely be getting some more of those!

Then back to more cleaning and by now the laundry had been started.  Then we took another break for lunch…

For lunch we had:

All natural chicken lunchmeat on whole wheat bread with a slice of Kerrygold cheese- mmmmm, I love that stuff!!
1 oz of Food Should Taste Good Buffalo chips
a big ole scoop of fresh mixed fruit!

Well, I better get back to cleaning.  See you for dinner!!!

Maple Pecan Granola

This is really good!  It’s not super sweet but it’s great!  The recipe is from one of my favorite blogs, katheats.com.

Maple Pecan Granola

  • 2 cups old fashioned rolled oats
  • 1 tbsp whipped butter or 1/2 tbsp real butter, just barely melted
  • 1 tbsp canola oil
  • 1 tbsp Grade A maple syrup
  • 2 pinches kosher salt
  • 1/2 cup chopped pecans

Combine melted butter, oil, maple syrup and salt in a bowl. Stir in oats and pecans. Stir thoroughly to completely coat oats with wet ingredients. Spray baking sheet with cooking spray and pour on oat mixture. Bake at 300* for 30 minutes, stirring at the 20 minute mark and keeping your eye on it there after to prevent burning.

Makes 2.5 cups. Appx. 30 kcal per tbsp or 120 kcal per 1/4 cup.
