Cruisin…

Justin and I decided to go on a cruise this summer!!  We are going to celebrate our wedding anniversary and also a new beginning with me starting back to school.  I am so so excited and happy about this!  I just feel that this is not just a vacay but a new beginning.  We are getting a stellar deal so we just decided to go for it!!  Aaaaahhhh, I can’t wait- I am SO happy right now!

Another thing that makes me happy… tomorrow is my last day of work!!!!!!!  (yes, it does need that many exclamation points!)  It’s finally arrived and I am so very happy.

For breakfast this morning I decided to give the oat bran another try.  This time I added a little of my chocolate protein powder to it and it was much much better.  It looks a little weird (mostly because I took a bite before I remembered that I hadn’t taken a pic yet) but trust me, it was good!

In the mix…

  • 1/4 cup oat bran
  • water
  • 1/2 banana
  • 1/2 scoop chocolate protein powder
  • Tablespoon of Barney Butter

Lunch was almost non-existent.  I spent the whole 20 minutes that I get fighting with the copy machine in the teachers lounge.  It decided to be a jerkface today, so I was giving it what-for.  The copy machine won, btw.  So during my 5th grade classes I had a few minutes to gulp down some Greek yogurt with blueberries (no pic).

When I got home I was sooo tired!!  But dinner must be had and I really didn’t want to eat out(we have a trip to pay for for goodness sake!).  So we had some crispy chicken fingers.  Find the recipe here.

To the tasty chicken fingers we added…

  • steamed broccoli
  • small sweet potato with a tiny bit of butter

Oh so good!  These chicken fingers are a classic and they are going to be around this house for a looong time!

Oh and I may have had a glass or two of Prosecco.  (or we may have finished off the whole bottle.  whoops!)

Well, that’s all I got for now.  I need to go get some dishes done.  I hear hubby clanking around in the kitchen so I gotta take care of it before he breaks something!  🙂

Ah King George

I love George Straight.  I watched this thing on TV tonight where he got artist of the century or something like that.  It was pretty cool.  He’s a really cool guy and he’s a fellow Texan!!

Anyhoo…

Today for breakfast I had an oldie but a goodie.  The breakfast sammy!

Me and Emeril hung out this morning- his son was on the show.  What a cute cute cutie!!!

For lunch I wanted a smoothie, so I tried to make one.  It wasn’t so great.  I tried adding spinach to it because, you know, it’s really good for you.  It didn’t sit very well in my tummy though. 🙁

I don’t think I’ll be trying that again any time soon.

For a snack a little later I had a mini clif bar.  I LOVE these things!  Only 100 calories- a perfect little snack.  And organic too!

Oh there is only 1 and 1/2 day of school left!  I have almost all of my stuff cleared out- woohoo!

When I got home from school and errand running I worked on our little office a bit.  It was scary looking when we brought all of Justins things in from the storage building.  It’s much beter now!

For dinner I made some spaghetti.  This is my favorite way to make it!  You should try it, it’s insanely healthy.  Check out all the super foods it’s got in it!  Here’s how I make it…

In the pan goes a little spray of EVOO from my Misto, a zucchini, and some onion.  Sautee…

Then I add a little garlic and a few handfuls of spinach.  Sautee some more…

Then I add some organic pasta sauce (or you can do homemade if you like.  I like this kind though, so that’s what I use)…

Then I let it simmer away while the noodles (whole wheat of course)  finish cooking.

Then before I serve I toss in a little of this beautiful homegrown basil in with the sauce.  Look how pretty!

  • spinach

  • radish (I love the crunch of a radish!)

Sorry, but it’s true!  I heart the bux!  (you’ll see later in the post)

I tried something new for breakfast this morning.  Oat bran.  I’m not 100% sure I love it.  It was a little bland, I think I need more toppings for it than I had this morning.

  • 2 tsp flax
  • 1 tsp wheat germ

Then it was off to work!  It was my last day at this particular school.  I was a pretty happy camper today because of this, but soooo busy!  I had to pack up the whole room today and get it all out of there.  I got it all done, but I’m exhausted!   And the classroom is so empty, it looked a little sad.  There was lots of good music and some fun times had in that classroom.  I’m going to miss it just a tiny bit I think.

Lunch was a sandwich (ham) with pepperjack and mustard (and LOTS of it!  I love mustard.  My dad is to blame for this, he’s a mustard maniac!), some Fage greek yogurt with about 1/4 cup blueberries.  Oh and a Babybel cheese.  Like these??  Click here for a coupon!!

And now onto my BFF.  My dear friend starbucks!  I haven’t been in forever (I don’t usually have extra calories to spend on it), but I neeeeeded some bux today!  So I had a nonfat iced mocha- mmmmmm!  B.F.F.

For dinner Justin and I went out to a new sushi/hibachi place in town.  It was pretty good (it was no Pirhana killer sushi though!  Nothing can beat that place!!).  I think it will do when I am seriously craving some sushi and I can’t get to funkytown for some Pirhana.  The Chapster and I split three rolls- California roll, Cajun roll, orange dragon roll.  The cajun roll was the best!  It had tuna, fried oyster, and spicy mayo!  Yummmers!

Anywho…. 2 and 1/2 days of work left- yipee!!!   See you tomorrow!

Happy Memorial Day

I’ve taken two days off of calorie counting and even really thinking about food. I tried not to worry too much about it. My mind just needed a break I think. But I’m back on track today, hit my calorie target, and feeling good.

Today we decided to clean out our rented storage unit. There’s no reason why we haven’t done it yet (just lazy-ness I suppose) and it is costing us $64/month. That’s money that we should be putting toward paying stuff off! It’s completely cleaned out, which means that the hubby is completely officially moved in to the house (we’ve almost been married for a whole year!) yay, lol! So needless to say I burned a ton of calories today moving stuff around!

This was my favorite thing that we brought in today. Justin’s grandfather made this for him from wood from an old barn I think and I love it! It didn’t fit in our living room, but we wanted to use it so we put it in the kitchen.  On top are  the microwave and a wine rack and inside are all of my cookbooks, our lunchboxes, napkins, placemats, and napkin rings.   There’s lots more room in it, so I’ll have to go through the kitchen and do a little re-organizing.

Breakfast was a little sandwich.  English muffin, egg white, half a slice of pepperjack and a veggie sausage.  This is quickly becoming my fav breakfast because it is so increadibly filling!

Then I watched a litle TV and waited for the lazy bum husband to get up for the day.  About three hours later he decided to grace the day with his presence.  Then we headed out to the storage building.  Three trips later we had everything out.  We were soooo ready for lunch!

I made a bigass salad with…

  • romaine and spinach
  • baby carrots
  • a baby cucumber
  • cherry tomatoes
  • light Greek vinaigrette

I also had 1/2 cup Fage Greek yogurt with blueberries, 1/2 tablespoon agave nectar and a sprinkle of granola.

Then we unpacked a crapload of Justin’s stuff and moved stuff around in the house.

Then when we were so tired we couldn’t do anything else we had some dinner.  We kept it simple- Amy’s Texan burgers with a slice of cheese on whole wheat buns, baked chips, and a yummy slice of banana bread for dessert.

Whew I’m exhausted!  I think I’m going to bed early tonight.  I have to go to work tomorrow 🙁

Banana bread ala sarahsnacks

made some pretty fantastic banana bread today!  I looked at lots of different recipes and ended up coming up with something of my own.  I tried to make it as healthy as I could and it turned out fab!  And it’s pretty low in calories too!  Here it is…

Banana Bread

1 cup unbleached all purpose flour
1 cup whole wheat flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 beaten eggs
1 ½ cups mashed bananas (4-5)
¾ cup sucanat*
¼ cup canola oil
¼ cup chopped walnuts


Heat oven to 350 degrees and spray two small loaf pans with cooking spray.

Combine flours, baking powder, baking soda, cinnamon, nutmeg and a pinch of salt in a bowl.

In another bowl, combine eggs, bananas, sucanat, and oil.

Combine wet and dry ingredients.  Stir until just combined.  Fold in nuts.

Pour batter into loaf pans.

Bake in oven for 45 minutes (make sure that when you insert a toothpick or knife in the center that it comes out clean).


Let cool, then enjoy!

Serving size- 1 slice (I got 20 slices out both loaf pans)

Calories: 112
Fat: 1.9g
Carbs- 22.2g
Protein- 2.6g



* Sucanat (sugar cane natural) is non refined cane sugar.  It is essentially pure dried sugar cane juice.  Sucanat is not a “processed” sugar and it ranks the highest in nutritional value, containing a smaller proportion of sucrose than white cane sugar.   However, Sucanat (in common with all sugars) is not a significant source of any nutrient apart from simple carbohydrates.

If you can’t find any sucanat you can just use regular sugar if you wish.
