Shortcut red beans and rice

WOW, is this great!  It’s a must try if you are a fan of red beans and rice.  It’s not that good old fashioned red beans and rice that your grandma used to make, but it’s really tasty and REALLY easy to make!

Ingredients…

  • 7 oz Turkey sausage links (whatever kind you like)
  • 1/2 onion
  • 1 can red beans
  • 1 tsp garlic powder
  • 1/2 tsp cajun seasoning
  • brown rice

Sautee onions and turkey sausage till brown.  Mash up 1/2 of the can of red beans.  Add it plus the rest of the ingredients (except for the rice!) and let it all simmer for about 20 minutes.  Serve it over 1/2 cups of rice.

catching up on my Grey’s

thank goodness that Netflix has stuff that you can play automatically from your computer!  That makes me oh so happy!  I didn’t get to watch Grey’s Anatomy at all last season and I am finally getting caught up, hopefully soon I will actually be able to watch what’s on right now.

So that’s what I’m doing right now as I’m finishing up eating lunch.

But let me back up a bit.  On Tuesdays and Thursdays breakfast is to go.  (because I have to get up at 4:30 am!)

So simple and easy it was!

Then I was on the road.  The coffee didn’t help much this morning- I was sooooo sleepy on my drive.  I had to keep opening the window to get some cold air on my face.  I ended up getting to school about 30 mins early so what did I do?  I turned the heater on toasty warm and took a 15 minute power nap in the car!  It made all the difference and I am feeling much less sleepy now.

Chemistry lab suuuuucks.  That’s all I have to say about that.  I don’t want to think about it any more than I have to and I’m really ready to be done with it!

Right now I’m in the library and I just finished lunch.  I had a turkey sammich with sharp cheddar, some baked kettle chips(yum!), baby carrots, and a honeycrisp!

Okay, gotta hit the books!  I have another test tomorrow.

Grilled Ratatouille Soup

was what was for dinner tonight!  I adapted it from a Rachael Ray recipe (she made it on her show the other day).

Basically I took some eggplant (2 small ones), zucchini (2 small ones), and a red onion and grilled it all up.  (I used my grill pan because we didn’t have any charcoal for the outside grill)

Then when that was done, I whirred it all together in the food processor (in three batches- too much for one batch, it would have overflowed) with 2 small cans of fire roasted tomatoes, 2 cups of chicken broth, a head of roasted garlic (which I made ahead of time), and some roasted red peppers.

Look at this roasted garlic- so good!  (and so easy to make…cut off one end of a head of garlic, drizzle with EVOO, wrap in foil, bake at 425 for 45 mins)

Put it all in a pot and heat it through.

SO GOOD!!  The recipe says it serves 4, but we’ll get about 6 or 7 servings out of the batch.  I can’t imagine how big the serving would be if we just got 4 servings out of the batch!

It needed a little salt, but perfect otherwise!  Served with a grilled cheese.  Made on the grill pan as well because I didn’t want to get another pan dirty.

Back to studying!  Night!

soooooo…

last week was pretty crazy.  I had three tests and two assignments due.  Needless to say I didn’t have time for blogging.  I got a little overwhelmed with it all.  I’m still trying to get the hang of it all and I’m not quite there yet.

So my statistics test went really well until the last three questions and I had NO idea how to do them.  Unfortunately the last three questions were worth 25% of the test.  I didn’t do so well.  BUT I found out today that he is going to let us correct our tests to make up some of the points.  yay! 

Chemistry I thought I was going to fail.  It turned out to be really easy and I made an 86.  I would have made a much higher grade if I didn’t suck at rounding sig figs. 

Intro to nutrition test was weird.  It seemed like a pre-done test that came straight from the textbook company and it seemed liked they were trying to ask the most obscure questions possible.  I don’t think anyone in the class did so hot.  I did manage a B, but I don’t think the test was quite fair because we never covered quite a bit of the stuff on the test.  It was like they were trying to trick us or something.  The teacher’s not so great either.  He just reads straight from his powerpts that came with the teachers copy of the textbook.  That’s all he does.  I could do that.  No joke.  Meh.

I have one more test this week and then I’ll be doing it all over again in about three weeks! smile_cry

So I’ve been really lazy about the blog.  I’ll try to do better from now on.

My camera battery died this morning, so I have no breakfast pics, but I made an AWESOME wa-rap for lunch!

  • turkey breast
  • lettuce
  • sharp cheddar
  • 1 T Newman’s Own honey mustard

WOW was it good!!

Cafe Misto with Pumpkin Spice syrup!!  I used to get cafe misto’s all the time and I never thought about adding flavors to them!

What’s a Misto you ask?  Well it’s half coffee and half steamed milk.  Compared to a latte which is shots of espresso and steamed milk.  A misto only has 60 calories and no fat (if you get non-fat milk).

Since I heart the pumpkin spice latte I decided to try to have them add the syrup to a misto instead of the latte version and it was perfecto!!  It’s not as sweet, but I’m okay with that.  It still has that awesome flavor!

Here’s how the two compare…

Pumpkin Spice Latte (tall, non-fat, no whip)…  200 calories!

Pumpkin Spice Misto (tall, non-fat)…80-120 calories!!  (depending on how many pumps of syrup that you get- each pump is 20 cals)

That’s a big difference and now I don’t feel so guilty for indulging in the Pumpkin Spice!!

So this is what I’m doing as I speak (err…I mean type).  My chem lab finished 2 hrs early today and I’m wasting some time until I need to leave to go see Dr. Cliff (my little bro) to get my injured claw worked on.  (for the record Dr Cliff is in Chiropractic school and interning (?) at the clinic at the school and he’s working on the tendonitis in my right hand.)  He has instructions not to adjust my neck (which I refuse to let him do because I HATE having my neck popped.) on punishment of a punch in the face.  Wouldn’t it be awesome to get punched in the face by your sister in them middle of a Chiropractic clinic?  heehee.
