Monday, Monday…

It’s Monday, the beginning of another week.  One week closer to Summer!!  Today was a pretty boring day at work today.  Nothing really happened.

I decided to make some oatmeal for breakfast this morning.  I haven’t had any in a while and it was time to reaquaint myself with the glory of its oaty-ness!

Into my oatmeal went:

-1/2 banana
-1 T granola
-1 T natural peanut butter

For a mid-morning snack I had a applesauce pumpkin muffin, the other half of my banana from breakfast, and some water from my sweet water bottle.  Isn’t my desk pretty? LOL

For lunch I had some leftover andouille red beans and rice
some mixed fruit
and yes!!  I had a piece of cake.  Unfortunately it was just okay and I shouldn’t have eaten it.  I had to get on the treadmill when I got home to work it off.  Lesson learned!!

Here’s my lunch on my funny zoo-animal plate!!  (it was left over from a rhythm activity I did with my Kinders, so if figured it should get used.

On the way home from school I snacked on some baby carrots and a few sweet yellow tomatoes- mmmm!

Then on the way to Kickboxing I had a Luna Bar (I love kickboxing AND Luna bars!!!)

Then when I got home from kickboxing I was hungry again so I had some lowfat cottage cheese with a sprinkle of granola(will not be doing that again- granola is GROSS on cottage cheese!!)

Then I started working on dinner!  We had taco soup!  I had mine with:

-1/2 oz sharp cheddar
– 1 /2 oz crushed baked tostitos
-1 T lowfat sour cream
– a couple of jalapenos

and a diet cherry Dr. Pepper!  I try not to drink much soda, but this is one that I have a hard time resisting- it’s wonderful!!!

Well, I guess that’s it for tonight!!  Toodles!!

Sunday dinner

Justin and I went out to Red Lobster tonight for dinner since we worked really hard to clean the house.  I wasn’t super impressed.   I mean the biscuits were good, of COURSE, but everything else was just okay.  The broccoli was overcooked and our baked potatoes didn’t come out until after we were done with the rest of our food.

I had:

Grilled Mahi Mahi
broccoli
baked potato w/ 1 tsp of butter (not pictured)
salad with red wine vinaigrette (not pictured)
2 cheddar biscuits (I went a bit overboard here, I really should have had just one but I couldn’t resist!) (also not pictured, but I promise I didn’t have any more than 2!)

On the way home we stopped at Starbucks and I got a tall Cafe Mocha (non-fat, no whip of course!!)

Sunday

I thought Sunday’s were supposed to be a day of rest?  And what have we been doing all day- cleaning inside and out.  Justin is doing all the outside lawn work and I’m working inside today.  I didn’t realize how messy the house had gotten until we decided to spend the day cleaning. yikes!  I’m wondering where the day went because it’s already after 3:00!

For breakfast this morning I made some applesauce pumpkin muffins from my Clean Eating Cookbook.  They turned out really great!!  I’ll post the recipe later.

I had that with a banana and a cup of coffee from my lovely Keurig!

Then onto the cleaning of the house!!  I took a little break for a quick snack and had a cookies and cream Luna bar- it was fantastic! I will definitely be getting some more of those!

Then back to more cleaning and by now the laundry had been started.  Then we took another break for lunch…

For lunch we had:

All natural chicken lunchmeat on whole wheat bread with a slice of Kerrygold cheese- mmmmm, I love that stuff!!
1 oz of Food Should Taste Good Buffalo chips
a big ole scoop of fresh mixed fruit!

Well, I better get back to cleaning.  See you for dinner!!!

Maple Pecan Granola

This is really good!  It’s not super sweet but it’s great!  The recipe is from one of my favorite blogs, katheats.com.

Maple Pecan Granola

  • 2 cups old fashioned rolled oats
  • 1 tbsp whipped butter or 1/2 tbsp real butter, just barely melted
  • 1 tbsp canola oil
  • 1 tbsp Grade A maple syrup
  • 2 pinches kosher salt
  • 1/2 cup chopped pecans

Combine melted butter, oil, maple syrup and salt in a bowl. Stir in oats and pecans. Stir thoroughly to completely coat oats with wet ingredients. Spray baking sheet with cooking spray and pour on oat mixture. Bake at 300* for 30 minutes, stirring at the 20 minute mark and keeping your eye on it there after to prevent burning.

Makes 2.5 cups. Appx. 30 kcal per tbsp or 120 kcal per 1/4 cup.

Everybody’s working for the weekend…whoa…

It’s Saturday!!!!  I love Saturdays and I love my Saturday routines!  This morning I grabbed a slimfast from the fridge and drank it on the way to the gym.  I did kickboxing and worked arms/shoulders/abs.

After the gym I grabbed a bar real quick to refuel.  Chocolate and PB- two of my very favorite things!

Lunch today was my favorite sandwich from Potbelly Sandwich Works in between errands.

Turkey breast (no cheese) with all veggies and HOT PEPPERS!
a diet IBC root beer  (I cannot have this sandwich without one- it really cools down those hot peppers)

Then it was onto grocery shopping and back home.

After I got home I snacked on these.  Delicious!!

Right now I am making granola(recipe will be posted later).  It just came out of the oven and it smells gooooood!!  See ya at dinner.

Dinner tonight was Andouille red beans and rice and a glass of wine.  It looks a little weird but it was quite tasty!

Then for dessert was some Dryers Slow churned Caramel Delight with 1 Tablespoon of my homemade granola.  Seriously so good I wanted to go back for seconds.  I didn’t though!

Now Justin and I are going to chillax and watch some TV while we play with the puppy!  Good night!!
