whew!

Another day, another dollar!  lol!  I’m about to start a countdown until the last day, seriously.  There’s so much crap “going down”.   On Monday I let both of my principals know that I wasn’t going to be returning next year (I haven’t oficially sent my resignation to the superintendent yet, but it’s coming as soon as I have enough time to sit down and write it).  One principal just couldn’t say enough about how much I’ve done and wishing me the best of luck, then the other one just said (and I quote) “thanks for letting me know”.  Seriously that’s all she said.  With all of the crap that she has given me over the last couple of years.  What a jerk.  That seriously tells you what kind of a person she is!

 

Anyway, on to happier matters! 

Food!

For breakfast I had what I like to call the “I woke up late and didn’t have time to make anything yummy” breakfast.

leftover pizza casserole from last night (even better the second day!!)

a small piece of banana bread(a recipe from my clean eating cookbook-I’ll post it soon!)
and a coke zero (mmmmm- caffeine!!)

I got a new pair of running shoes this evening- yay!  I can’t wait to break them in!  I think I’m going to go running at Trinity Park tomorrow to get a feel for them.

After we got my running shoes we decided to hit Panera for dinner since we were over on University Dr and we hardly ever get to go there!  Yumm yumm yumm- I love this place!  I made some really good choices today and stayed within my calories!

planning ahead

I need to work on my planning ahead.  Seriously.  When you don’t plan ahead and you aren’t prepared you end up with a candy bar in your stomach without really remembering how it got there.  Grrrrr.  Oh well, I counted my calories for it and I am trying to move on. I’m just over my calorie allotment for today by only by 44 cals.

Today was a weird day.  I didn’t feel good.  My boss was, yet again, a big jerkface (2 more months and I’m outa there!!!).  I didn’t even work out.  My trainer cancelled on me, and since I didn’t really feel well I just went home and didn’t do much.  Except snuggle our new puppy and watch her play with Anabelle.  I did get on the wii fit for a while, so I guess I still burned some calories.  I’m not sure what my deal is, but I’ve been feeling crappy since this weekend.  Blech.

Lunch today was a light Caesar salad kit.  It was all that I really felt like eating.  It was pretty tasty though.  Oh, and a big ole glass of agua in my cool I run like a girl water bottle.  It’s true.

My afternoon snack

Well, besides the candy bar(not pictured) I was really hungry when I got home from school.  So I had a sandwich with:

Two slices of spelt bread
3 pieces of honey ham
1/2 oz of Tillamook sharp cheddar (LOVE!)
a little mustard
on a pretty yellow plate

Dinner

Dinner was something new that I tried and it turned out great!  Bubble up pizza casserole, and I found this one on the weight watchers message boards as well.  I love those boards!  Click on recipes to the right to get it!!  I also threw in a salad with 2 tablespoons of  light Italian dressing.

Bubble Up Pizza Casserole

This is seriously delicious!!!   (my personal notes on the recipe will be in parenthesis)

Bubble Up Pizza Casserole

Ingredients
15 oz jar pizza sauce (I used organic spaghetti sauce)
1 roll of biscuit dough
1 ½ cups 2% shredded mozzarella (I used part skim- it melts better)
1 lb lean ground beef
(I also added some onions and red bell peppers cause I’m cool like that)
Preheat oven to 350. Brown ground beef and drain off grease. Add sauce
to meat. Stir in biscuits that have been quartered. Pour into baking dish.  Bake 25 minutes.
Top with cheese and bake additional 10 minutes.

Here’s the final product.  Mine is a little messy, but trust me it’s delish!!

Breakfast

I don’t have classes until noon on Wednesdays, so I usually just hang out at the house Wednesday mornings and go in a bit late.  I had some time to actually make something yummy for breakfast today instead of cereal.

Today’s breakfast

1 egg & 1 egg white scrambled on a piece of toasted spelt bread with a slice of reduced fat cheese
1/2 cup of fresh pineapple chunks
2 cups of coffee from my excellent french press with 2 teaspoons of creamy chocolate creamer and a splenda

Asiago Burgers

These burgers are seriously amazing!  This recipe came from the weight watchers message boards that I like to cruise!

Asiago Burgers

Serves 4

1 pounds lean ground beef
2 oz finely grated Asiago cheese
2 scallions, thinly sliced
1/4 cup dried breadcrumbs
1/4 cup Dijon mustard
1 garlic clove, minced

Coarse salt and ground pepper
Heat grill to high. In a medium bowl combine ground beef with asiago, scallions, breadcrumbs, mustard, and garlic; season with salt and pepper. Gently form mixture into four 1-inch-thick patties.  Grill or cook on each side until desired done-ness.

Devour with favorite condiments.
