playing catchup

Today’s my birthday!  I’m not telling how old I am, but let’s just say I’m getting close to 30. (yikes!)  Since it’s also father’s day, I’m not really doing anything for my bday.  The hubby and I already celebrated so I’m good to go.  Birthdays aren’t really that big of a deal for me, so I’m not really into celebrating that much.  Probably mostly because no one ever remembers my birthday (except for my family).  It’s always like that when your birthday falls during the summer.  I love sharing my bday with the summer solstice, but no one ever remembers my bday.  I think I also share a birthday with Nicole Kidman and Prince William (swoon).

Playing catchup on yesterday.  Yesterday I woke up kinda late so I had a quick breakfast before heading out for some grocery shopping.

Fage greek yogurt with a drizzle of agave nectar, a handful of blueberries, and a handful of quaker oat squares.  Yum!

Then it was off to the market I went!  Look at all this stuff I got for $45!!

And I picked up these funny looking little squash.   I think they’re called Chayote?  I have no idea what I’m going to do with them yet.  Any suggestions?

I didn’t really eat lunch, I just snacked.  I had a little cheese and maybe a cupcake from yesterday.

I think I had a banana too.  I wasn’t really keeping track.

Then I cleaned the house a little, started some laundry, then settled in on the couch with a book until hubby got home.

Last night was pizza night!

On a (home meade)whole wheat crust I put…

  • pasta sauce
  • spinach
  • onions
  • bell pepper
  • mushrooms
  • mozzarella cheese

Then I made a little salad with cucumbers and strawberry tomatoes with a little drizzle of italian dressing.  It was soo good- those tomatoes were so sweet and tasty!

Now that I’m caught up from yesterday, here’s what was a scramblin in my skillet this morning…

  • eggs
  • turkey sausage
  • a few really small red potatoes
  • a sprinkle of aged Wisconsin cheddar

WOW!  SO good, but I could only eat half, so Justin had the rest of mine.

Well, that’s all for now!  We’re headed over to the in-laws for some Father’s Day celebrations!

yoga pup

My dog (not the new puppy- the dog that I’ve had for about 5 yrs) is very camera shy.  She can hear a camera a mile away and hide faster than you can turn the thing on!  She was lounging on my yoga mat this afternoon and I was super sneaky and got a quick picture before she could run and hide.  She loves to lay on my yoga mat, probably cause it’s pink!

I wasn’t feeling so great last night when I went to bed, so I slept in a little this morning.  When I got up I was really hungry so I made a quick bowl of cereal- Quaker oat squares.  It’s my favorite right now!  I think I want a smoothie tomorrow- it’s been sounding good all day!

Then I got ready for the day and ran into town to pick up a few things.  On the way back I was really thirsty and I grabbed something.  These were both really good!

For lunch I had some leftover broccoli cheese soup from the other night and some Corazonas squeeze of lime chips.

Then I made CUPCAKES!!  Red velvet with whipped cream cheese frosting!  (From a box mix.  I didn’t really have the patience to bake from scratch today.  They turned out reaaaaally tasty!  I froze half of them so that I wouldn’t consume them all in a few days.

Then I did a few chores around the house and read a little.  Hubby ended up staying late at work so dinner was solo tonight.  Chicken curry salad wrap.

Shredded chicken with a little olive oil mayo, celery, curry powder, and a squeeze of lemon juice.  Served on a Ezekiel 4:9 tortilla.  It turned out tasty.  I didn’t have anything to go with it because I wasn’t extremely hungry due to the aforementioned cupcakes. 🙂

I am SO sleepy, so I’m going to hit the hay!  Night!

Birthday celebrations

What a fun day I had yesterday!  Justin and I hung out all day, which is one of my favorite things to do.  We don’t actually get to hang out very often, he works late hours a lot.

Anyway, we started out the day at the Botanical Gardens.  I wanted to play with my new camera and take some pretty pictures.  I’ve been to there a bagillion times and taken lots of pictures there (I even had my bridal pictures taken there!).  We just walked around and enjoyed the beauty (and the heat, it was 99 degrees!!)  Here’s some pictures.

After the gardens, we went to Panera and got cookies.  We also wanted to cool down a little before the next destination.

I got a toffee nut cookie.  It was so so so good!

Then we went to the Kimball Art Museum (everything we did today was free!  Can you tell we’re on a tight budget??)  Sorry, no pics allowed in the museum.  They are in between exibits right now, so we just looked at their permanant collection.  They have some really interesting stuff.

Then it was on to dinner!  We went to Uncle Julio’s.  It was SO good!!  The salsa was the best that I’ve EVER had!  They char their tomatoes or their peppers before they put them in so you get that awesome smokey flavor and the fun little black specks.

I got chicken enchiladeas with salsa verde.  Salsa verde is one of my faorite things!  I love the tang of the tomatillos.  And it just tastes so fresh and healthy.  I ate ALL of these enchiladas, a little of the rice, and a few of the beans that came on the side.  Oh it was so good!

Oh and there was also a frozen sangria that escaped the eye of the camera.  I wasn’t really feeling a margarita when we got there, I guess because we spent the majority of our day outside.  After I had a big glass of water I decided that sangria sounded pretty good.  It was very tasty!

Anyway, that was my birthday celebration!

happy early birthday to me!

My birthday is on Sunday, which also happens to be fathers day, so we are celebrating early.  Justin is taking me out for the day.  I think we’re going to the Botanical Gardens (to test out my present, more on that in a minute), then maybe a movie and some dinner.  It’s fun because I get to celebrate, but I don’t have to be a year older until Sunday, hehehe.

My birthday present.  I got a new CAMERA!!!  I can’t wait to test it out- it’s a great camera!  It’s charging right now and I’m getting really impatient to use it.  Here are some pictures of the new camera taken by the old camera (lol).

Speaking of food, we had some birds in a nest for breakfast (is that what they’re called?  It’s where you cook the egg in a hole in the bread.  ah well, whatever it’s called, haha)

I didn’t eat all of mine- I didn’t cook the egg quite enough.  I like mine over medium- yolk a little runny.  I think it was more over easy- there was still egg white that was runny, hurl!  Oh well, that just saves me more calories for tonight!  I think we’re going to Uncle Julio’s for dinner.  I’ve been wanting to go there for a while.  You can bet there will be some margaritas involved!!

haha, just kidding.  I don’t have a job, so I wouldn’t know, lol.

More lounging happened today, but I did have a very exciting trip to Target this morning!  I got a carpet cleaner!!  And it only took me three months to talk Justin into letting me buy one.  Let me tell you, these things are a God send when you have a puppy!  That was pretty much the only exciting thing that happened today.  Other than cleaning the carpets I ate and read.  Yup, that’s it!

Let’s start with breakfast!

Blueberry pancakes!!

I used some organic buttermilk pancake mix from Whole Foods and added some blueberries into the batter.  Then I took a bag of frozen blackerries out of the freezer, put them in a saucepan with a tiny bit of water and let them simmer while I was making the pancakes- that became our “syrup”.  And it was oh so good!!

Then there was the fabulous trip to le target to get the carpet cleaner, then carpet cleaning time.  It smells so fresh and clean in the house now!

Then lunch.  I made a black bean wrap, but it wasn’t as good as it usually is.  I think it was because I was out of the things that I usually put on it as “toppers” like avocade, lettuce, and salsa.  I didn’t have any of that, so I just melted a little cheese on it and put some tomatoes and a few dollops of greek yogurt.  It was okay, but not as good as it usually is.  Oh well.

Then I chilled on the couch and read for a while as I waited for the carpet to dry.

Then it was snack time!

Dinner was broccoli cheese soup with some grilled chicken and some sourdough bread.  The broccoli cheese soup is easy to make.  Bag of frozen broccoli, can of chicken broth, 6ish oz velveeta, 1/2 can Rotel.  Easy!
