when the moon hits your eye like a big pizza pie…

What a crazy day!  All I did was run around like a crazy person!

I was supposed to work out with my trainer this morning bright and early, but she was sick so she cancelled on me.  I decided to just hang around the house a bit instead.  I spent some time menu planning for the week, making a grocery list, and watching food network.  I might shred or run here in a bit, who knows!

I tried something new for breakfast this morning.

Soooooooo good!!  I will definitely be having this alot!  Close up…

While I was watching the Food Network I looked down and the pup was sleeping like this…

Weirdo.

Then I made a quick wrap for lunch before heading out the door to do some grocery shopping.

Then I headed off to the grocery store.  I’ve been obsessed with the mexican market lately, so that’s exactly where I went.  Where else can you get avocados 4 for $1.  Or Mangoes 3 for $1.  I mean come on!  I stocked up on lots of fresh produce and even came home with a sweet treat for me and the hubby (apple empanada for me and a pineapple on for him.  2 for 89 cents.  For reals!)  I love that place! (I hope I don’t get the swine flu though.  just kidding.)

I had two more stops before I got home and I was exhausted by the time I came in the door.  It’s amazing how I never used to get tired from grocery shopping but now that I’m old I do.  I hate being old!

When I got home I cleaned out the fridge and unloaded my new purchases.  Then I cleaned watched some more food network.  That shiz is addicting!

After a while I decided to start dinner which was PIZZA!  I knew it would take about an hr for the dough to rise so I went ahead and started so that the pizza would be in the oven by the time hubby got home from work.

I used this recipe and it was amazing!  Seriously the best pizza dough ever and it was so freaking easy!  I don’t have a mixer so I made the dough in my food processer using the dough blade.  It turned out perfect!  We put a little mozzerella, a little sharp cheddar, and some turkey pepperoni on it and stuck it in the oven.  15 minutes later we had this gorgeousness…

Oh man, this was so good!  It was so worth it to make my own dough and not use the premade like I usually do.  I am going to be dreaming about this pizza dough tonight!

Here was my plate (plus one more piece that dodged the eye of the camera.  I just couldn’t help it, it was so darned good!)

After we digested a bit it was time for our sweet treats from the mexican market.  I think I’ve decided that as healthy as I like to eat, life just isn’t worth living without treats now and then!  Seriously I think that I might die if I didn’t get some sweet treats with plain ole sugar sometimes!  Not all the time though, that’s key I think.

Here’s my apple empanada.  Those Mexicans sure know how to do it!  See that sugar sprinkled on top?  It added the most delish little crunch.  WOW!  This is so worth the calories/sugar/butter!!

I may also be dreaming about that empanada tonight!

Well, I’m going to waddle my chubby butt back to the couch to digest my empanada a bit .  I probably won’t workout tonight.  If I workout this close to bed I’ll never go to sleep.  Ah well!!

Queen of the grill!

That was me tonight!  I was a grillomaniac.  Today was a frustrating day.  First, the speedometer thingie on my bike stopped working.  So I have no idea how far I rode today, I just guessed about 10 miles.  I need to dig up the users manual and see what’s going on with it!  Then I totally screwed up my schedule for next semester.  A class that I had waitlisted opened up, so I signed up for it.  That sent my whole schedule out of wack and I had to re-register for everything.  I worked on it for a good 2 hrs (our internet suuuucks), but I gave up and went to starbucks to use the internet there.  I got it fixed pretty quickly and now my schedule is no longer messed up.  I didn’t end up being able to fit in that waitlisted class.  What a serious waste of my time- that took up a large chunk of my day.

Here’s what I’m taking next semester.  I ended up having a class from 4-5:20, which is going to suck big time because of traffic and my commute, but I didn’t get much of a choice because there weren’t many classes that were still open.  The rest of the school has already registered, and we were among the last to get to register yesterday.

Anyhoo, here’s what I’m taking…

  • Food Prep Principles (and lab)
  • Intro to Nutrition
  • Statistics
  • Chemistry (and lab)

It doesn’t seem like alot, but the labs take up sooo much time!  Except for the whole class lasting till 5:20 thing I’m fairly content with my schedule.  I’m not really looking forward to Chemistry, but there will be more than one so I just have to accept it and realize that I will have to study really really hard to make a decent grade.

I am also in desperate need of a prayer for my financial aid if anyone has a spare one!  If I get turned down for some reason I will be taking one class at a time and working somewhere horrid for the next 20 years.

I only have pics from dinner to share tonight.  It was a great dinner though!  I went into a grilling frenzy and grilled up everything I could get my hands on!   I wish we could afford a nicer grill, but we’re having to make do with our cheapy charcoal one from walmart for now.  Oh well, at least we have something!

Here’s what I grilled tonight…

dscf2070

  • Chicken  (2 pieces with BBQ sauce, and 2 pieces with some grill seasoning)
  • shrimp (with a sprinkle of grill seasoning)

Whatever didn’t get eaten tonight shall become fair game in the fridge tomorrow!  Leftovers don’t last long around here.

Here was my plate:

dscf2074

  • Some of the BBQ chicken
  • a skewer of shrimp
  • roasted broccoli
  • quinoa  (I mixed in a little BBQ sauce as I was eating it and it was to die for!)

and dessert was a scoop of this raspberry frozen yogurt that I made this afternoon.  (the recipe came from my clean eating magazine).  It was pretty good, not quite sweet enough for me, lol.

Well, I guess that’s about it.  I’m going to keep it short and sweet tonight- my brain is tired!

Goodnight!

I got so much done today!  It was one of those fast and furious days, though.

I had to get up super duper early and drive the hour to my alma mater to pick up two copies of my transcripts for registration tomorrow.  I got there, took care of that, then headed home.

My breakfast was seriously so unremarkable that I didn’t even bother to take a picture.  Plain english muffin stuffed into my gullet on the way out the door.  Boring!

When I got home I started some laundry and made a fabulous wrap for lunch!

This was the star of lunch.  The ez 4:9 tortilla.  These things are awesome!  Between the stellar nutritionals, completely orgainic ingredients, and the fact that they’re a complete protein, I say you can’t beat that with a stick!!

dscf2025

Onto the tortilla I put 1/3 cup black beans, 1/4 cup red. fat cheese, and a pinch each of cumin and chili powder.  Then I melted the cheese in the micro.

On top went my favorite hot sauce!

dscf20271

And lettuce, 2 oz avocado, and a few dollops of Fage(awesome sub for sour cream, BTW!)

Then wrap and roll…

The finished product…

Don’t forget desert!  Mmmmm- processed ice creamy goodness! LOL

Then more housework!

Then snacky time!

dscf2038

Then play with the puppy time!  She’s getting gigantic!!  She’s also a little monster, lol.  She’s into EVERYthing right now- nothing is off limits to her.  I caught her dragging some of my undies around the house earlier!  Cute little turd!

dscf2036

Then it was gym time!  50 minutes with my trainer, who decided to kill me today, haha.  Seriously though, I think she might have it in for me 😉

Dinner was a super healthy sloppy joe recipe from one of my favorite ladies- Ellie Krieger! (I want to be her when I grow up)  Here’s the recipe! I substituted ground turkey breast for the ground beef and it tasted great!  It also cut the calories down a bit too!

Served with some chips (Ruffles All Natural.  I was actually impressed with these!  Three ingredients- potatoes, sunflower oil, sea salt.  And tasty too!) and some pickle.

dscf2039

Well, time to hit the hay- I have an eaaaaarly start tomorrow.  Hopefully I will get some pics in.  Don’t really know what the orientation schedule will consist of, so we shall see.  Night!

Man, it’s been a while!  I’m going to try and backtrack the last few days as best as I can, but I’m sure that I’ll miss tons!  I didn’t really take that many pictures- my camera is on its last leg.  Thank goodness I’m getting a new one for my bday (which is just 19 days away!)

Well, Friday was my last ever day of work.  It was pretty awesome to walk out of there for the last time!  There was no time to rest and relax though.  I headed straight over to Dana’s house with a truck full of stuff for a garage sale the next day.  We hung out, had some vietnamese food, some wine, and priced out our stuff.  It was a fun night, but lots of work.  I got back late and hit the hay.  The next morning I got up at 4 am (yes, I said AM) and Justin and I loaded up another truckload of stuff to take over.  Got there around 6 ish and unloaded and the garage sale began.  We sold sooo much stuff and we made about $340 ish dollars!!  That is paying for half of our cruise this summer!!  yay for decluttering AND paying for part of a vacay!

After the G Sale, Dana sent me on my way with some goodies from her garden!  Some squash, rosemary, oregano, and mint!  I didn’t get pics of everything but here are a few.  Plus a picture of some GORGEOUS peach hybiscus that she has on her front poarch!

After I left I hit up the Mexican market about a block from her house and made a HUGE dent in their produce section!  Seriously their prices are amazing!  I’m going to go back more often.  I also left with a Mexican coke and a mango empanada!!  (which were gobbled down in the car on the way home.  my belly was really happy.  I don’t splurge on that kind of stuff often and it was SO worth it!)

Then I picked up some stuff from hobby lobby and headed home to make a cute little something for my cousin’s baby shower the next day.  Here it is… cute huh?  Once I got it figured out it was pretty easy to make, just time consuming tying all of those diapers on!

Diaper wreath for my cousin Amy

Then Sunday was the baby shower.  Amy was cute as could be, though she was clearly miserable (poor thing!).  She’s a teeny tiny girl and her belly was huge!  And she’s got about a month left to go too!  There were snacks and cake to be had.  I didn’t overdo it but I did enjoy the snacks.

After the shower Justin and I went to see Night at the Museum 2.  It was cute and funny- I would recommend it!

I guess that brings us up to today!!  I’ll start my normal posting again tomorrow.  I think I’m spent from the catch up post, LOL.  I’ve got lots on my to do list to work on though, so I’m sure I’ll stay plenty busy for the rest of the day.

Till tomorrow!
