Lunchtime!

mmmm- lunch!  Today I made some Pasta Salad from my clean eating cookbook.  It was really good!  I added a little leftover grilled chicken that I had in the freezer and it was perfect!

And then I went to work.  The kids were crazy today- I was glad when the clock hit 3:30!!!  And now here I am back at the house and I was hungry so I grabbed:

1/2 cup of lowfat cottage cheese
1 tsp strawberry allfruit

Tasty!!  I’m headed out to turbo kickboxing here in a little bit, so I’ll catch you at dinner time!!!

Hump day (hehehe)

Ahhh, Wednesday!  You are my favorite day of the week!!  It’s the easiest day of the week at work and it’s closer to Saturday than yesterday!

Most of my morning consisted of playing with the pup.  She’s finally napping now so I have a quiet moment to post!  Here are some pics of our new cutie!  (unfortunately our other dog, Anabelle, is way camera shy so she won’t be in the pics even though she was part of playtime)

Breakfast was some new cereal that I got (Optimum Slim) and it’s delish!!  Also 1/2 of a banana and a cup of coffee.

Italian pasta salad

Italian pasta salad
Here are the ingredients…

Ingredients-
4 oz whole wheat pasta (whatever kind you like)
1 cup carrots, peeled and sliced
1 cup snow peas
1 cup cauliflower florets
1/2 cup chopped red pepper
1 Tbsp chopped fresh basil


Ingredients for dressing

2 Tbsp rice wine vinegar
2 Tbsp olive oil
1 garlic clove, passed through a garlic press
pinch sea salt
freshly ground black pepper


Preparation

1. Cook pasta. Let cool.
2. Lightly steam all veggies. Let cool.
3. Mix dressing.
4. Pour over pasta, toss together to coat.
5. Top with fresh basil

I’m singing in the rain…

It’s only Tuesday? It feels like it should be Friday already! It’s not raining, but this morning I woke up with a song from “Singing in the Rain” stuck in my head, you know the good morning song. It’s still stuck by the way. I love that movie- one of my all time favorites! I think part of the reason I like it so much is because of Gene Kelly *swoon* (and yes, I realize that he hasn’t been alive for quite some time now).

This blogging thing is so much fun, but I’m still trying to figure out how to make it better. And also, like 3 people see this. I’m wondering how to get it “out there”? I feel like I am putting SO much work into something that only I look at, lol. Oh well.

What’s on the menu today?

Breakfast was kind of boring today, I was in a hurry-
1 C Organic Honey toasted O’s
a few berries
1 T granola
A cuppa joe

Morning snack-
Well, I hesitate to call this a “snack” persay, but it still filled my tummy and was pretty delish! I lurve me some chocolate milk!

Lunch- I was feeling hodge podgey when I made my lunch this morning, LOL
½ cup lowfat cottage cheese
About a cup of mixed fruit
Applesauce pumpkin muffin
An ounce and a half of my wonderful food should taste good chips

After school I went to the gym and had a kick but workout!  After my workout I had a Clif bar to refuel.  I love those things, but they are kinda high calorie.  I’ve yet to find anything else that meets what I need after a workout though, so I will be sticking with those and “spending” the calories. Plus they’re organic and I really like that!

For dinner I was craving a salad (I know, weird right?!)  So I stopped at Central Market on the way home from the gym and hit the salad bar.  On my salad:

Lettuce, spinach, bell pepper, mushrooms, peperoncini, olives, broccoli, cauliflower, blue cheese(LOVE), grilled chicken, carrots, cabbage, and topped off with a few tablespoons of Roasted red pepper vinaigrette.  Heaven!

Also I may or may not have had a scoop of ice cream.  Not pictured- I gobbled it down too fast!

I think next week I’m going to play around with my calorie intake a little, I think I need a little more of a deficit.  Allthough I really don’t know, I haven’t stepped on a scale in a while- I’m too skerd!

Anyway, it’s past my bedtime.  And if there is anyone that actually reads this- thank you!!  It makes me feel worthwile!
