giveaway time!

(at the end of the post)

When I got home from my mini program with my 1st and 2nd graders (they did really really well!!) It was definitely dinner time! We seared up some chicken with a little lemon pepper on it- it was fantastic!
Here’s dinner…

Chicken with lemon pepper
roasted brussel sprouts
whole wheat couscous with a handful of peas stirred in at the end.
GH Tuscan tomato and herb bread (1 slice with a tiny bit of butter)

Wow- soooo good!!!

Here’s a close up of the brussel sprouts (If you think you don’t like these things, you haven’t tried them roasted!)

I’m not gonna make it!

I swear I’m not going to make it until the end of the year. There are only 23 days left and I feel like I’m going to crack!! arg!!

I’ll talk about the giveaway later tonight, I don’t have much time right now.  I have to go BACK to the school in about 45 minutes to do a music program.  I don’t really want to!  Isn’t that terrible??  I think it really describes my mental state right now and just how soul-sucking my job is.

This doesn’t look like much, but it was a great breakfast.  So tasty and so so filling!  I seriously wasn’t hungry until just a few minutes before lunch!

Lunch today…

Roasted red pepper and tomato soup (1 cup)
salad with a little light ranch and blue cheese
strawberries

When I got home from school I was really hungry so I had a slice of WW bread with raspberry white chocolate PB

Where did today go?  Is it really over already? Wow!

After I took the puppy to the vet I went to workout at the gym.  Poor Harley had an ear infection!  The vet also said that she was too skinny. 🙁  That makes me sad because she eats all.the.time.  Lots!  We went and got some wet dog food to mix in with her puppy food so that she would have some more calories going in.

Anyway, got my butt kicked at the gym.  Before the butt kicking I had a Larabar for a snack.  I got a gingersnap.  It was okay, but the ginger was a bit overpowering.  I probably won’t get it again.

Then when I got home I started on dinner.  Tonight we had chicken curry burgers.  A creation of my own, thank you very much!  I ground up some chicken breasts in the food processor, added 1 tsp curry powder, 1/2 tsp ground corriander, 1/2 tsp cayenne and a litle onion.  Mix and form patties, grill in grillpan.

They were really good!!  I’m quite proud of myself right now! 🙂   🙂

For the “sauce” for the burger I mixed some srirachi with a little light mayo- fab!!

Then served it with some oven fries.

Looks tasty, huh??  You should try it- it’s pretty amazing.

mid-day!

After my bike ride (it was a quick one) I was ready for some lunch. I knew I wanted to use up the other half of the avocado that I started on yesterday, so I took out some corn tortillas and melted a little cheese on them. Then I topped them with a little salsa, slices of avocado and a little cabbage for some crunch. They were really good!!

aaaand 1/2 cup of cottage cheese. I’m working out again tonight, so I figured I could use a little extra protein since I didn’t really have any at lunch.

This afternoon’s agenda is taking the dog to the vet, going to starbucks to download some yoga stuff from yoga downloads (cause my internet is total crap and won’t let me download ANYthing), and then a workout with my trainer.
