Dinner and dissapointment

Before I post about dinner I have to say farewell to my charger/picture uplaoder thing.  The puppy (Harley) got ahold of it and well, it’s no more.  Until I can figure out how to get a new one my blog pics will be coming from my Blackberry.  The camera on it is just okay, nothing great.  That plus work drama plus some family drama from hubby’s side has gotten me quite upset this evening 🙁

Anyway, onto what’s for dinner…

Tonight’s dinner was Amy’s Texas Burgers on whole wheat buns and oven fries.

Terrific Tuesday

Ahhh, Tuesday again? You’ve come back so quickly- it seems like it was only Tuesday yesterday. But it wasn’t, it was Monday. Or was it? Now I’ve confused myself!

Well, anyway… what’s so great about today? Well, for starters I am taking a mental health day tomorrow. (well, actually a mental health half day, I only have classes in the afternoon on Wednesdays). I’m pretty psyched about it even though I will be cleaning for most of the day. We’ve got some family coming over on Easter for lunch and the house is fairly clean, but it could use a good old fashioned scrubbing!

Today started out with a very tasty breakfast…

Today’s breakfast menu-

Scrambled egg whites with spinach, mushrooms, and peppers

1 whole wheat English muffin

½ oz kerrygold cheese (melty cause I toasted it with the English muffin)

Cuppa coffee

And a glass of water

Then it was off to the rat race! When I got to school it was TAKS Math for the 5th graders and the counselor said that I was singing too loud with my kindergarten classes and we might disturb the testers. Whaaaa? Yes, that’s right folks. I am now getting in trouble for doing too good of a job! And they wonder why I’m not coming back next year?!?! Seriously- 38 days. I’m counting down.

So I was told that I needed to change my lesson plans and do something “quiet”. What the heck kind of quiet stuff do you do with a classroom full of Kindergarteners? Its music class for fracks sake! So we played simon says. After that class was over I was instructed to just put a video in. For the love of god!

Anyway, enough about that! On to snacktime!

Today’s morning snack was:

A Clif Z bar. apple cinnamon- very very tasty! I will be getting this one again!!!

And another one of my cute/ugly tangerines. I still don’t remember what these things are called, but dagnabbit if they aren’t so tasty and sweet!

Then it was back to more video time with the kids. At this point I’m with the 3rd graders and we are watching a video about Japanese Music and they could care less about pentatonic scales and the Koto. What can you do- they’ll get over it.

Ah, lunch, sweet lunchy! When I walked into the teachers lounge to heat up my soup there was a chocolate fountain that claimed my immediate attention (which is hard to do considering I have the attention span of a fly. Can you say ADD?). Oh did it look beautiful- flowing chocolate. But I am very proud to say that I didn’t have any! I did, however, take advantage of the beautiful fruit! I made a little fruit plate with apples, bananas, grapes and strawberries. I am very proud of myself!

The rest of my lunch consisted of:

Leftover taco soup

2 slices of avocado
1 oz of Food Should Taste Good Jalapeno Chips

Chobani Blueberry (which I actually ended up saving as a snack because I was full after all the rest of my lunch)

Between my afternoon classes I had a cup of tea (raspberry white tea) in my The Office mug.

After school it was off to the gym!  On the way I had my favorite bar- Luna cookies and cream delight.  It’s pretty amazing!

While I was at the gym I got my body fat % done and I’m now at 25% body fat!  When I started in February I was at 30 %.  yipee!!!!

After I got home I was STARVING and I know I will be having a kinda late dinner tonight so I made a little snack.  A few mini pitas, a few slivers of kerrygold cheese, some roasted chicken breast, sprouts, and a drop of mustard.  I also had an emergen-c with some sparkling water.

I quit!

Well, the best news of the day is that I have officially resigned from my job!! Now I just have to wait the 39 more days of school that are left until I get to walk out of those doors for the last time! After I sent in my letter of resignation my heart lifted and I felt a weight being lifted off of my shoulders. It was a great feeling being able to quit finally. I’ve been wanting to quit since the first year I started working there and it’s finally happening.

Yesterday was a wash blogging-wise. I ate pretty well considering that when we went to celebrate my lil bros b-day the only things on the table were fried. *sigh* I had the teeniest tinyest piece of chicken fried steak- like three bites. And I filled the rest of my plate up with salad. Then I had a very small slice of cake with one spoonful of ice cream. Not too shabby. Sorry no pics. I forgot.

That brings us to today- the day that I quit my job 🙂

Today’s breakfast was some organic oatmeal with dried cranberries and a tablespoon of granola. And don’t forget the coffee!!

Then I headed to school and had a cool tangerine for a snacky. It was amazing!! It was a kind that I had never seen before so I wanted to try it and it rocked!!  Sorry I totally forgot to take a picture I was so excited about it.

After school I had a Luna Bar (chocolate peppermint stick). It.Was.Awesome!!!! This is in my top two favorites of the Luna Bars (the other being the cookies and cream). Mmmmmmm.

When I got home I treated myself to a POM spritzer (POM + sparkling water) and 1 oz of Food Should Taste Good sweet potato chips. Sorry no pic- I gobbled em down too fast!

Then I hit the treadmill! I jogged 1 mile, then I did some sprints. They were killer! Then I did some ab work and some push-ups then I hit the foam roller and rolled out the muscles in my calves and legs. Love the foam roller!

After that I had a coconut water to refuel. Delish!

For dinner we made some pizzas. Whole wheat Naan with tons of veggies!

Aaaaand I’m exhausted and need some sleep now.  Bed time!

field trip!!

I love today.  If I wasn’t already married, I would marry today.  This morning was a little weird because I was feeling funny, but it’s all good now- this weather can cure about anything!

So I got up around 7.  Ate a little cereal (my cereal pic disappeared 🙁  so no pic) and a piece of whole wheat bread with cinnamon raisin peanut butter.

My tummy was feelin funny, but I went to workout anyway.  After my workout I was going to go to kickboxing, but I still wasn’t feeling well, so I decided to skip.  Here’s where I workout- I love this place!

After that it was field trip time!!!  This weeks field trip was to whole foods!  I love that place but I don’t get to go often because it takes about 45 mins to get there.  (I have another field trip planned for next week, but I’m not telling what it is!)

I went in with no grocery list, which I don’t think I’ve done since college.  I just wanted to see how creative I could be putting together my dinners this week.  I also wanted to try out a whole lotta new stuff!  I got some really cool stuff and spent waaay too much money (shhh- don’t tell my husband!!).  After I left the store with my loot, I had a chobani yogurt and a clif z bar on the way to my next errand, which was a quick trip to central market to get a few things I couldn’t find at whole foods.

After that I went to get my car washed because it was freaking nasty.  I decided to do that after I passed by the MINI dealership in Arlington and all the sparkling new MINIs put me to shame.  Now it’s all pretty and brand new looking!  (don’t mind the hunk of junk in the background- that is hubby’s little project that will likely never really be finished!)

Then I unloaded the groceries- look at all the stuff I got!

And here is all the new (to me at least) stuff that I got to try out.  I love to find new all natural organic stuff- it’s like a treasure hunt!  LOL!

Truvia (a sweetner kinda like Stevia), Amy’s Texas style veggie burgers, coconut water (I’ll make a special post about that one later), Chobani (greek yogurt), Lentils, wheat berries, whole wheat Naan, a funny looking very wrinkly type of tangerine(don’t remember what it was called), srirachi (did I spell that right?), and some sparkling water.

Then I had some lunch because I was STARVING!

An Amy’s Texas style burger on a freshly made whole wheat bun from central market with mustard, pickles, lettuce, and sprouts.   It was really really good!  But being a Texan I can’t condone them calling it a Texas burger :p.  It was good nonetheless!

I also had some sparkling water spiked with some OOBA (it’s a sparkling Hibiscus drink and it’s fantastic!!).  OOBA is awesome, but it’s really sweet, so I dilute it with some plain sparkling water.

After that I put my grains into some cute new containers that I found at World Market.  They have a little chalk paint on them so that you can write and then erase whatever you need!  Cute huh?

That brings us up to the present.  I’m now enjoying my little sweet treat (the only thing naughty that I bought today).  It’s one of my favorite things from whole foods and I get some every time I go 🙂

Unfortunately, I have to get cleaning now, here’s my to do list for the evening…

-Sweep and mop kitchen and bathrooms
-vacuum living room and bedroom
-unload and reload dishwasher
-wipe down kitchen counters
-put the mail away in the proper place
-play with puppy
-give husband kisses when he gets home from work
-throw in a load or two of laundry
-dinner

dinner time

Tonight for dinner I threw together a chicken Parmesan-esc thing. Whole wheat spaghetti, a little organic spaghetti sauce. I seared some chicken, put it on top of the spaghetti + sauce in my cute little fiesta oval baker. Added 1/4 cup mozzarella on top and stuck it under the broiler. I added a little steamed cauliflower on the side. It was pretty tasty!!
